CRUNCHY TOFFEE BUCKEYES

Number Of Ingredients 6

1 cup peanut butter
1 teaspoon vanilla extract
Pinch kosher salt
1 cup confectioners' sugar
3/4 cup chopped toffee candy bars, such as Heath (3 bars)
12 ounces semisweet chocolate, chopped

Steps:

  • Combine the peanut butter, vanilla and salt in a large bowl. Beat with an electric mixer, adding about 1/2 cup confectioners' sugar at a time, until all the sugar is incorporated and the mixture is stiff and dry to the touch. Mix the toffee by hand.
  • Roll the mixture into 1-inch balls (about 32) and place on plates. Insert a toothpick into the center of each ball and freeze until firm, 1 hour.
  • Once the balls are frozen, put the chopped chocolate in a small, heat-safe bowl. Set the bowl over a saucepan filled with 1/2 inch of barely simmering water (make sure the bottom of the bowl does not touch the water) and heat, stirring, until melted. Remove the balls from the freezer and, one at a time, dip them in the chocolate, leaving a small round of peanut butter still visible. Let the excess chocolate drip off before returning the balls to the plate. Refrigerate until ready to serve. Remove the toothpick before serving.

I found this recipe in THe Pilsbury Family Christmas Cookbook. This has quickly become a family favorite. It doesn't have eggs in the dough like most cookie recipes, so if you or a loved one likes to eat the dough, it's safe. We always put these on our Christmas cookie baking list. They're easy to make and sinfully delicious.

1/2 cup powdered sugar
1 cup butter or 1 cup margarine, softened
1 (3 1/2 ounce) package vanilla instant pudding mix
2 cups all-purpose flour or 2 cups unbleached flour
1 tablespoon milk
1 teaspoon vanilla
3 (3/4 ounce) chocolate coated english chocolate-covered english toffee bars, crushed (I use about 1/3 of a package of the skor bar pieces, found by the chocolate chips in the grocery sto)
powdered sugar (for coating the cookies after baking)

Steps:

  • Heat oven to 325 degrees.
  • In a large bowl, beat powdered sugar, margarine and pudding mix until light and fluffy.
  • Lightly spoon flour into measuring cup; level off.
  • Add flour, milk, vanilla, and crushed toffee bars, mix well.
  • Shape dough into 1-inch balls.
  • Place onto ungreased cookie sheets.
  • Bake at 325 for 13-18 minutes or until edges are a light golden brown.
  • Remove from cookie sheets; cool completely.
  • Dip top of each cookie into powdered sugar.

NO-BAKE STICKY TOFFEE BALLS



No-Bake Sticky Toffee Balls image

These easy-to-make treats are inspired by the classic British dessert: sticky toffee pudding. As a decorating option, instead of sanding sugar, roll them in confectioners' sugar combined with a large pinch of ground cinnamon.

1 cup pitted dates (about 5 ounces)
1/4 cup packed light brown sugar
2 tablespoons unsalted butter
1 cup walnuts
1 teaspoon orange zest
1 teaspoon pure vanilla extract
Pinch fine salt
4 whole graham crackers, broken into pieces
Colored sanding sugar, for rolling

Steps:

  • Put the dates, brown sugar and butter in a microwave-safe medium bowl and cover. Microwave on high in 1-minute increments, stirring in between, until the butter has melted.
  • Transfer the mixture to a food processor and pulse until smooth. Add the walnuts, orange zest, vanilla, salt and graham crackers and pulse until the mixture comes together into a stiff and slightly tacky ball. Scoop heaping teaspoonfuls of dough and roll them into balls. Refrigerate the balls until firm, about 1 hour.
  • Roll the chilled balls in sanding sugar. The sticky toffee balls can be refrigerated for up to 3 days.

1 cup sugar

1 teaspoon baking soda
1 teaspoon vanilla
8 ounces English toffee bits, I think this is the size of the bag

Steps:

  • Combine all ingredients. Roll them into 1 inch balls. Flatten them slightly. Bake at 350 degrees for 10 minutes.

Soft marshmallow filling surrounded with a toffee and krispy coating. We like to make these for our Christmas trays. I don't know if you can get MacIntosh toffee in the USA. We find them with the chocolate bars.

3 macintosh toffee bars
1/2 cup condensed milk
1/2 cup margarine
24 large marshmallows
4 cups Rice Krispies

Steps:

  • Over low heat, melt the toffee bars, condensed milk and margarine.
  • Dip the marshmallows into the toffee mixture.
  • Roll in the rice krispies.
  • These can be kept covered at room temp for a couple of day, freezes well.
  • For smaller balls, cut the marshmallows in half before dipping.

A tasty twist on a traditional treat. A friend passed on the recipe she had found online. I tweaked it to fit what I had in the pantry. The original recipe called for chopped Heath bars instead of the toffee bits and mini chocolate chips.

1 cup real butter, at room temperature
5 tablespoons sugar
2 teaspoons vanilla
1 tablespoon water
1/4 teaspoon salt
2 cups flour
2 cups finely chopped pecans
3 ounces toffee pieces
3 ounces mini chocolate chips
powdered sugar, for rolling cookies

Steps:

  • Line cookie sheets with parchment paper and set aside. Preheat oven to 325ºF.
  • Cream butter until light & fluffy. Add sugar, vanilla and water. Mix well. Stir flour and salt into mixture. Add pecans, toffee bits and mini chocolate chips and mix thoroughly.
  • Roll into tablespoon-sized balls. Bake for 18-20 minutes or until lightly browned.
  • Roll in powdered sugar while warm. Once cooled, roll in powdered sugar again.
