- Microwave 12 ounces semisweet chocolate chips and a 14-ounce can sweetened condensed milk, 5 minutes. Stir vigorously, then add 1 1/2 cups chopped nuts and 1 teaspoon vanilla extract. Spread in an 8-inch-square pan lined with buttered parchment paper. Refrigerate, then cut into squares.
MOM'S MICROWAVE FUDGE
This was an old fudge recipe that came from a family friend. Then my mom turned it into a microwave recipe. It is the real thing!

- Mix cocoa and sugar; then add milk and all the Karo syrup.
- Cook on High 10 minutes, stirring at 7 minute and 3 minute or until soft ball stage.
- Add butter, vanilla, and nuts.
- Cool slightly.
- Beat until stiff and pour into a buttered 8" square.
- Let cool and cut into squares.
- Can also be made with skimmed canned milk and or carob powder.
TWO-MINUTE MICROWAVE FUDGE

Steps:
- 1. Sift powdered sugar, cocoa, and salt into a 1 quart microwave safe bowl. Stir in milk and vanilla. Mix well. Place butter or margarine on top.
- 2. Microwave on high, 2 minutes. Beat with wooden spoon until smooth. Stir in nuts (OPTIONAL). Spread in 8 X 8 X 2 inch baking pan.
- 3. Chill about 1 hour or until firm. Cut into pieces

- 1. Combine condensemilk, castor sugar, margarine and golden syrup in a microwavable bowl (leave out caramel essence).
- 2. Place bowl in the microwave on high for 11-12 minutes (Stir every 3 minutes).
- 4. Mixture is ready when it is bubbling and pulling away from the sides of the bowl. Add in the caramel essence and stir quickly.
- 5. Por the mixture into a shallow, greased container (preferably a square baking tin).
- 6. Leave to stand for awhile to cool down before cutting.

EASY ASIAN-STYLE LOW FAT MICROWAVE STEAMED FISH
Dead easy fish, always tasty and good! The flavours are Vietnamese/Thai/Balinese. You can add any other favourite asian flavours to the marinade, get creative! Australian measurements used (1 T = 20mls)You can use lemon juice if you have to but lime is really much nicer. If you have some, add a chopped kaffir lime leaf. I leave the peanut butter out on mine but my husband loves it.

- Mix all marinade ingredients except peanut butter in a small bowl or cup. Taste to check for seasoning.
- If you are adding the peanut butter, add it to the mix and stir to create a thick paste.
- Spread over frozen or fresh fish fillets.
- Put fillets onto a plate with a microwave cover or place them in a shallow covered container (but make sure a little of the steam can escape). If fish are frozen, cook on high for at least 6-7 minutes (depending on thickness of fish). If thawed, about 4-5 minutes should be sufficient. This will change depending on your microwave so do check the fish by checking the colour in the centre of the fillet (it should be opaque).
- Serve with rice and a crisp salad.
