1/4 cup vegetable oil
Flour, for dredging
2 1/2 pounds lamb shoulder, cut into 2-inch cubes, or purchase precut lamb stew meat
4 teaspoons kosher salt
Freshly ground black pepper
2 tablespoons unsalted butter
2 medium onions, cut into sixths
5 cloves garlic, minced
1 tablespoon tomato paste
10 cups cold water, or low-sodium chicken broth
6 sprigs parsley
6 sprigs fresh thyme
2 bay leaves
1 1/4 pounds medium red potatoes, quartered
4 medium carrots, cut into 1-inch pieces
2 celery stalks, cut into 1-inch pieces
7 canned whole, peeled tomatoes, lightly crushed
1 tablespoon red wine vinegar

Steps:

  • Heat a large Dutch oven with a tight-fitting lid over medium-high heat. Pour in enough oil to fill the pan about 1/4-inch deep. Spread flour out on a plate or piece of waxed paper. Season half the lamb with 1 teaspoon of the salt and some pepper. Dredge in the flour and shake off the excess. Cook, uncovered, stirring only occasionally, until well browned, about 8 minutes. Using a slotted spoon, transfer the lamb to a plate. Repeat with the remaining lamb. Discard the oil and wipe out the pan.
  • Preheat the oven to 275 degrees F. Return the pot to the stove and melt the butter over medium-high heat. Add the onion and cook, stirring, until lightly browned, about 5 minutes. Stir in the garlic and tomato paste and cook until fragrant, about 2 minutes. Return the lamb to the pot and add the water or broth, and bring to a simmer. Using a piece of kitchen twine, tie together the parsley, thyme, and bay leaves and add the bundle to the pot. Stir in the remaining 2 teaspoons salt and pepper. Cover and transfer to the oven. Stew the meat until tender, about 1 1/2 hours.
  • Remove the Dutch oven from the oven. Skim the fat from the cooking liquid with a ladle. Add the potatoes, carrots, celery, and the tomatoes, and bring to a simmer. Cook the stew, uncovered, on top of the stove until the liquid has thickened and the vegetables are tender, about 1 hour. Remove and discard the herb bundle. Stir in the vinegar. Divide among bowls and serve immediately.

1 1/2 cups onions, chopped
4 garlic cloves, minced
2 lbs lamb stew meat
4 cups water
1/2 cup white wine
2 lbs potatoes, cubed
5 carrots, cubed
1 lb mushroom, quartered
1 (14 1/2 ounce) can diced tomatoes
1 (6 ounce) can tomato paste
1 1/2 teaspoons black pepper
2 tablespoons rosemary
2 tablespoons mint

Steps:

  • Heat oil in dutch oven over medium heat.
  • Add onion and saute until translucent.
  • Add garlic and saute 2 minutes.
  • Add meat and cook 10 minutes until brown.
  • Add water and wine.
  • Cover, reduce heat, and simmer 1 hour.
  • Cut carrots and potatoes into chunks.
  • Quarter mushrooms.
  • Add rest except herbs.
  • Cover.
  • Cook medium heat for 30 minutes.
  • Add herbs.
  • Simmer 2 minutes.

1 boneless leg of lamb (about 6 pounds), cubed into 1 1/2-inch pieces
Kosher salt and freshly ground black pepper
2 tablespoons olive oil
1 large onion, chopped
6 large carrots, unpeeled and cut into 2-inch pieces
6 cloves garlic, peeled and left whole
2 tablespoons tomato paste
2/3 cup red wine
2 cups beef stock
3 sprigs fresh rosemary
3 sprigs fresh thyme
2 bay leaves
1/4 cup chopped fresh parsley

Steps:

  • Preheat the oven to 300 degrees F.
  • Generously sprinkle the leg of lamb with salt and pepper.
  • Heat the oil in a large pot or Dutch oven over a medium-high heat. In two batches, brown the lamb all over and remove to a plate, 4 to 6 minutes per batch.
  • Add the onions, carrots and garlic. Season with a pinch of salt and pepper, then cook for a minute or two. Add the tomato paste and stir. Deglaze with the red wine and beef stock, scraping the bottom of the pot. Stir in the rosemary, thyme and bay leaves. Return the lamb to the pot and bring to a simmer.
  • Place the lid on the pot and roast until the meat is very tender, 2 to 2 1/2 hours. Sprinkle over the parsley and serve.

I love the flavors of this recipe because they somehow seem as if they have been marinated for days instead of just hours. Lamb has a powerful flavor on its own and I find, with the right blend of spices, that it tastes like an even better version of itself. I use lamb shoulder or leg meat for this recipe. 2 teaspoons caraway seeds
2 teaspoons coriander seeds
2 teaspoons cumin seeds
2 teaspoons garlic powder
1 teaspoon crushed red pepper flakes
1/2 teaspoon ground cloves
1/2 teaspoon ground ginger
Juice of 1 lemon
2 tablespoons extra-virgin olive oil
6 medium cloves garlic, grated
1 1/2 to 2 pounds lamb meat, preferably shoulder, cut into 1 1/2-2 inch cubes
1/4 cup golden raisins
2 tablespoons red wine vinegar
1 tablespoon honey
1 tablespoon yellow mustard seeds
Juice of 1 small orange
Juice of 1 lemon
1/4 cup extra-virgin olive oil, optional
2 tablespoons canola oil
Kosher salt
2 large yellow onions, grated
1 quart beef stock

Steps:

  • Marinate the meat: In a small bowl, combine the caraway, coriander, cumin, garlic powder, red pepper flakes, cloves, ginger and lemon juice. Whisk in the olive oil then grate in the garlic. Place the cut lamb on a parchment-lined baking sheet and dollop half of the marinade on top. Turn the meat over and dollop with the remaining marinade. Cover and refrigerate for 6 to 8 hours or overnight.
  • Make the vinaigrette: In a small saucepan, simmer the raisins, red wine vinegar, honey, mustard seeds, orange juice, lemon juice and 1 cup water until the liquid is reduced by a little more than half and the mustard seeds are tender, 12 to 15 minutes. Whisk the vinegar mixture with the olive oil if using.
  • Preheat the oven to 350 degrees F.
  • Cook the lamb: Heat the canola oil in a large cast-iron skillet over medium-high heat. While the oil is heating, sprinkle the marinated meat with kosher salt and stir to combine. When the oil begins to smoke lightly, add the lamb pieces in a single layer and brown on all sides, adding a pinch of salt halfway through, 8 to 12 minutes. Stir in the onions and their juices, add a pinch of salt and cook for 2 to 3 minutes. Add the beef stock. Place the skillet in the center of the oven and cook until the meat is practically falling apart, 2 to 2 1/2 hours. Taste for seasoning. Allow the stew to sit on the stove and rest off the heat for 10 to 15 minutes before topping with the vinaigrette and serving.

1 kg lamb
30 g butter
2 tablespoons olive oil
2 large onions
2 garlic cloves
2 carrots
2 parsnips
2 potatoes
2 stalks celery
12 fresh green beans
1/4 cup flour
2 tablespoons tomato paste
2 teaspoons Dijon mustard
1 beef bouillon cube, dissolved in
3 cups water
1 bouquet garni (thyme, parsley and bayleaf)
1/4 cup chopped fresh parsley

Steps:

  • Trim the meat of fat and connective tissue, then cut in 3/4 inch cubes.
  • Prepare the vegetables: peel onions and cut into wedges; mince garlic finely; peel carrots, parsnips and potatoes and cut into small chunks; clean celery and slice; top and tail green beans.
  • In a large dutch oven saute meat in batches in butter and oil till browned; remove, drain and set aside.
  • In what remains of the butter/oil in the pan, saute onion till golden.
  • Add garlic, carrot, parsnip and celery and sweat for 2 to 3 minutes.
  • Stir the flour in well, then add tomato paste and mustard.
  • Return the meat to the pan; add potatoes and bouquet garni.
  • Pour in the beef stock and mix thoroughly.
  • Bring to the boil and then reduce heat, simmering covered for 1 hour.
  • Add the green beans and cook for a further 20 to 30 minutes;.
  • the meat should be tender and the sauce thick.
  • Remove bouqet garni, sprinkle with chopped parsley and serve with a crusty bread.

Wonderful stew recipe with crescent rolls laid on top in a pie formation. I used this recipe when I used to work up in Cody, Wyoming. If you do not own a cast-iron skillet, use a 9-inch casserole dish instead, and cook the filling in a saucepan. Makes a lovely presentation.

1 pound cubed beef stew meat
2 teaspoons meat tenderizer
1 (14.5 ounce) can chicken broth
1 (10.75 ounce) can condensed cream of chicken soup
1 (1 ounce) envelope dry onion soup mix
1 (16 ounce) package frozen stew vegetables
1 (10 ounce) can refrigerated crescent dinner rolls

Steps:

  • Heat a cast-iron skillet over medium-high heat. Sprinkle meat tenderizer over beef cubes, and cook in the hot skillet until browned. Drain off any excess juice. In a small bowl, mix together the chicken broth, cream of chicken soup and onion soup mix. Pour over the meat, reduce heat to low, and simmer for 45 minutes.
  • Preheat the oven to 350 degrees F (175 degrees C). Add the frozen stew vegetables to the skillet, and simmer for 10 more minutes. Unroll the crescent roll dough, and arrange to cover the top of the pan like a pie.
  • Bake for 10 to 15 minutes in the preheated oven, or until the top is golden brown. Remove from oven and serve.

3 large onions, quartered
