- Combine tuna, mayonnaise, lemon zest and juice, pepper, carrot, parsley, and shallot in a small bowl; mix well.
- Layer 2 slices of bread with 3 lettuce leaves each and top each with about 1/2 cup of tuna salad. Top with remaining bread slices and serve.

GRILLED TUNA SALAD SANDWICHES WITH LEMON-HABANERO MAYO
The recipe is from the wonderful Booby Flay! A fresh tuna salad sandwich just can't be beat, and I bet the Lemon-Habanero Mayo is makes this dish. I haven't tried this one yet, but DH is begging me to make it.....so we'll see ;)

Steps:
- Heat grill to high.
- Place lemon juice in a small saucepan and bring to a boil (you can do this on the grill if you like). Cook until juice has reduced to 1/2 cup. Remove from heat and let cool slightly.
- Place lemon syrup, habanero, lemon zest, and mayo in a blender and blend until smooth.
- Season with salt and pepper to taste, and transfer to a large bowl.
- Add onions, celery, and parsley to mayo mixture, stir to combine and set aside.
- Brush tuna steaks with olive oil and season with salt and pepper on both sides.
- Grill for 3 min per side or slightly charred and cooked to medium doneness. Remove from grill and let rest for 5 minute before cutting.
- Cut tuna into small dice or flake with a fork. Add the tuna to the may mixture and gently mix until combined.
- Divide the tuna salad among 4 slices of bread. Top with a few sprigs of watercress and the remaining bread slices.

LEMON PEPPER TUNA
This is very quick and easy but extremely tasty. I sometimes like to substitute the Dijon mustard with Coleman's English Mustard for a really HOT taste. Lemon thyme is also nice used in place of the chives.

Steps:
- Season both sides of tuna.
- Heat oil in frying pan over medium-high heat.
- Add tuna; cook for about 8 minutes, until tuna is browned on the outside, but slightly pink on the inside.
- Remove tuna from the pan.
- To same pan, add stock and lemon juice and heat the mixture to boiling point.
- Remove from heat.
- Add mustard and chives and stir.
- Pour sauce over tuna.
- Serve immediately.

A very tasty way to eat tuna - great for tuna haters such as myself! An authentic recipe from my Turkish friends. Feel free to add or substitute additional ingredients - sliced cucumber, rocket, baby spinach leaves, red spanish onion, etc.

- In a mixing bowl, combine tuna, mayo, chopped jalapenos, lemon juice, onion (optional) salt and pepper. Mix well.
- Toast bread if desired.
- Spread dijonnaise mustard on one side of the bread.
- Spread tuna mixture and layer tomato slices, cheddar cheese (optional), rocket leaves and season with more cracked pepper.
- Top with the other slice of bread, press down slightly with hands to compress sandwich and ingredients together.
- Serve.
