2 ripe Hass avocados, peeled, pitted and coarsely chopped
1 large jalapeno, finely diced
3 tablespoons finely diced red onion
1 lime, juiced
2 tablespoons canola oil
3 tablespoons chopped fresh cilantro leaves
Salt
Freshly ground black pepper
4 plum tomatoes
4 tablespoons canola oil
Salt
Freshly ground black pepper
3 tablespoons red wine vinegar
2 teaspoons chipotle in adobo puree
3 tablespoons finely diced red onion
8 kosher beef or turkey or chicken hot dogs
8 hot dog buns, split 3/4 of the way through
1 1/2 cups grated white Cheddar
8 pickled jalapenos, thinly sliced
Fried blue corn tortilla chips, coarsely crumbled

Steps:

  • Combine the avocados, jalapeno, onion, lime juice, oil and cilantro in a bowl and gently mix until combined. Season with salt and pepper.
  • Heat the grill to high. Brush tomatoes with 2 tablespoons of the canola oil and season with salt and pepper. Place on the grill and grill until charred on all sides. Remove from the grill, slice the tomatoes in half, remove the seeds and coarsely chop.
  • Whisk together the remaining 2 tablespoons of oil, vinegar, chipotle puree and onion in a small bowl, add the tomatoes and stir to combine. Season with salt and pepper.
  • Preheat the grill to high. Grill hot dogs until golden brown on all sides, about 7 minutes. Remove to a plate. Place buns on the grill cut side down and grill until lightly golden brown, about 20 seconds. Place hot dogs in the buns, top with cheese, jalapeno, guacamole, salsa and tortilla chips.

Canola oil, as needed
Salt and freshly cracked black pepper
4 plum tomatoes, seeded and coarsely chopped
1 lime, juiced
1/2 bunch cilantro leaves, coarsely chopped
1/2 small red onion, finely diced
2 tablespoons red wine vinegar
1 tablespoon chipotle in adobo puree
8 hot dog buns
8 hot dogs, grilled
Grated Monterey Jack cheese
Guacamole
Tomato-Chipotle Salsa
Fried Blue corn tortilla chips
Hot sauce
Pickled jalapenos, sliced or chopped

Steps:

  • Guacamole: Coarsely smash all of the ingredients into a bowl and set aside.
  • Salsa: Stir all of the ingredients together in a bowl and let them sit at room temperature for 30 minutes.
  • Preheat a grill to medium.
  • Assembly: Put the buns on the grill to toast. Put a sheet of aluminum foil onto the grill and add the grilled hot dogs. Sprinkle with cheese and allow it to melt. Add the hot dogs to the grilled buns, then top with guacamole, salsa, blue corn tortillas, hot sauce and pickled jalapenos.

9 ounces raw pork chorizo, removed from casing
1/2 cup chopped white onions
3/4 cup white wine
1 lemon, juiced
1 pound shredded Monterrey Jack cheese
1 tablespoon cornstarch
One 11-ounce package tortilla chips
1 tablespoon chopped fresh cilantro
1 tablespoon chopped chives

Steps:

  • In a large heavy saute pan, cook the chorizo over medium-high heat until crisp, about 6 minutes. Add the onions and cook until translucent, about 4 minutes. Transfer to a paper towel to drain off excess fat.
  • In a saucepan, add the wine and lemon juice. Bring slowly to a boil and reduce the heat to medium low. Add the cheese and cornstarch and whisk until the cheese is fully melted.
  • Arrange the tortilla chips on a serving platter. Drizzle with the melted cheese mixture. Top with chorizo-onion mixture. Garnish with the cilantro and chives. Serve immediately.

3 fully cooked chorizo sausages (about 12 ounces)
1 tablespoon vegetable oil
1/2 cup yellow cornmeal
1/4 cup all-purpose flour
2 teaspoons sugar
Kosher salt
1/2 teaspoon baking powder
1/8 teaspoon baking soda
1/4 teaspoon cayenne pepper (optional)
1 large egg
3/4 cup buttermilk
3 scallions, thinly sliced

Steps:

  • Preheat the oven to 375 degrees F and coat a 24-cup mini muffin pan with cooking spray. Slice the chorizo into 24 rounds, about 1/2 inch thick.
  • Heat the vegetable oil in a large nonstick skillet over medium-high heat. Add the chorizo and cook, stirring occasionally, until lightly browned, about 3 minutes. Transfer to a paper towel-lined plate to cool.
  • Meanwhile, combine the cornmeal, flour, sugar, 1/2 teaspoon salt, the baking powder, baking soda and cayenne in a large bowl. In another bowl, whisk the egg and buttermilk, then whisk into the cornmeal mixture along with the scallions until smooth. (It should be the consistency of pancake batter.)
  • Pour the batter into the prepared muffin pan, filling each cup about halfway. Place a piece of chorizo in the center of each cup. Bake until golden and cooked through, about 12 minutes. Let cool 5 minutes, then remove from the pan.

Gel food colors
2 Old El Paso® flour tortillas for burritos (8 inch)
2 cans (8-ounces each) Pillsbury® refrigerated crescent dinner rolls or 2 cans (8-ounces each) Pillsbury® Crescent Recipe Creations® refrigerated seamless dough sheet
8 hot dogs
1/3 cup pickled jalapeño slices
1/2 pound bulk chorizo sausage, crumbled
1 jar (15-ounce) nacho cheese sauce

Steps:

  • To make Tortilla Strips: Heat oven to 375°F. Place 2 teaspoons of the oil in small dish; stir in 2 to 3 drops food color of your choice. Brush oil mixture over tortillas, working the brush until color is even. Repeat with remaining oil and additional colors. Using pizza cutter, cut tortillas into very thin strips. Bake about 8 minutes, stirring once, until crisp. To make Dogs: Leave oven setting at 375°F. Separate or cut each can of dough into 4 rectangles (8 rectangles total). If using crescent roll dough, press seams to seal. Place hot dog and 3 to 4 jalapeño slices at one short end of each rectangle. Roll up; pinch edges to seal. Place seam side down on un-greased cookie sheet. Bake 18 to 20 minutes or until golden brown; keep warm. Meanwhile, in 10-inch skillet, cook chorizo sausage over medium heat, stirring occasionally, until no longer pink; drain well. Add cheese sauce; cook over low heat until hot. Cover; keep warm. To serve, top each crescent dog with about 1/4 cup of the sausage mixture, then top with colored tortilla strips.

2 x 200g bags salted tortilla chips (we used a mixture of blue and yellow chips)
180g bag grated Monterey Jack cheese (or cheddar)
1-2 fat chillies (1 green, 1 red looks nice), thinly sliced (deseeded if you don't like it too hot)
2 tbsp white wine vinegar or cider vinegar
1 tbsp golden caster sugar
1 red onion , halved and finely sliced
2 tomatoes , seeds removed, cut into small pieces
3 radishes , thinly sliced
1 tbsp olive oil or rapeseed oil
1 red onion , finely chopped
2 x 60g packs cubed chorizo
400g can black beans , drained
2 tsp smoked paprika
2 tsp clear honey or agave syrup
3 ripe avocados
zest and juice 1 large lime
handful coriander , chopped, plus a few leaves to serve
150g pot soured cream

Steps:

  • First, make the pickled onions for the salsa. Mix the vinegar, sugar and 1 /2 tsp flaky sea salt in a bowl, whisking until the sugar and salt have dissolved. Add the onion, mix well and set aside for 20 mins, tossing around in the vinegar every few mins.
  • Next, make the beans. Heat the oil in a frying pan, add the onion and cook gently for a few mins until softened. Add the chorizo and cook for 2-3 mins more, stirring until the oils have released into the pan. Add the beans and sizzle for a couple of mins until softened a little. Sprinkle in the paprika, drizzle in the honey, cook for a few more mins, then set aside.
  • To make the guacamole, halve two of the avocados and remove the stones. Slide a dessertspoon between the skin and the flesh of each avocado half and scoop the flesh into a bowl. Add the lime zest and half the juice, the coriander, half the soured cream and a pinch of salt. Mash well until you have a smooth guacamole, then cover and chill until ready to serve. Halve the remaining avocado and remove the stone. Cut the flesh in a criss-cross pattern, then scoop out the chunks with a spoon and toss through the remaining lime juice.
  • Heat oven to 200C/180C fan/gas 6. In your largest roasting tin or a large ovenproof dish, layer the tortilla chips, chorizo beans, cheese and most of the chilli slices. Bake for 10-15 mins until the cheese has melted and the tortilla chips are toasting at the edges.
  • While the nachos cook, finish the salsa. Drain most of the pickling liquid from the onions and add the tomatoes, radishes and toss together. Remove the nachos from the oven and scatter over the salsa. Spoon over the guacamole, then scatter over the chunks of avocado. Loosen the remaining soured cream with 2-3 tsp water until it's runny enough to drizzle over the nachos, and finish with extra chilli if you like it hot. Finally, scatter with the remaining coriander. Serve as soon as possible, with plenty of napkins!

6 chorizo-style sausages or cooking chorizo (not the cured kind)
1 tbsp olive oil
6 banana shallots , peeled and sliced lengthways
3 tbsp sherry vinegar
1 tbsp honey
6 hot dog buns , split
3 tomatoes , finely chopped
50g feta , crumbled
1 banana shallot , peeled and finely chopped
1 medium red chilli , finely chopped, plus a few slices to serve
1 garlic clove , crushed
2 tbsp sherry vinegar
small bunch of parsley , finely chopped
small bunch of coriander , finely chopped, plus extra leaves to serve
50ml extra virgin olive oil , plus 1 tbsp

Steps:

  • First, make the chimichurri. Combine the ingredients in a bowl with ½ tsp salt and set aside. Will keep for up to one day in the fridge. To save on chopping time, you can also blitz the ingredients together in a small food processor until combined but not smooth.
  • Heat the grill to medium-high, or light a barbecue and wait until the flames have died down. Put the sausages on a foil-lined tray and grill for 12-15 mins, or cook on the barbecue until sizzling and cooked, turning halfway through.
  • Meanwhile, heat the oil in a frying pan and fry the shallots for 10-15 mins until soft and starting to brown. Stir in the vinegar and honey and cook for a few minutes more until sticky.
  • Warm the hot dog buns under the grill, on a griddle pan or the barbecue, and cut the cooked sausages in half lengthways, if you've used short cooking sausages. Stuff the buns with the sausages, then top with a big spoonful of chimichurri, some chopped tomato, the crumbled feta, some chilli slices, a few coriander leaves and the sticky shallots.
