TURKEY CHILI BY CHEF ERIC GREENSPAN
Chili is easy, one-pot, comfort food that you can enjoy all year long. Let it simmer for the right amount of time so the flavours really blend. Serve this chili as written or with a variety of other toppings such as chopped green onions, whole cilantro leaves, diced avocado, reduced-fat shredded cheese or nonfat plain Greek yogurt (toppings are not included in the recipe's Points value).

Steps:
- In a large pot, heat oil over medium heat. Add red peppers, onions, and jalapeno; cook, stirring frequently, until onions are translucent and somewhat caramelized, about 10-15 minutes.
- Add turkey, chili powder, salt, and cumin; cook, stirring and breaking apart turkey as it cooks, until meat is just browned, 2-3 minutes.
- Stir in remaining ingredients, except cilantro, and bring to a boil over high heat, gently stirring to combine all ingredients and make sure nothing sticks to the bottom. Reduce heat to medium-low; simmer, stirring occasionally, until chili is sufficiently thickened, about 45 minutes. Serve garnished with cilantro.
- Serving size: about 1 1/3 cup

WW TURKEY CHILI
This is a delicious low-fat turkey chile recipe I came up with. It is only 3 pts. for a 1 cup serving. If you like it hot, add 1/2 - 1 tsp of tobasco sauce.

Steps:
- Brown ground turkey with onion, pepper and garlic until no longer pink. Do not drain.
- Add tomatoes, chile powder, salt and worcestershire sauce.
- Stir to combine.
- Bring to a boil and then cover and simmer for 1 hour.
- Stir in kidney beans and simmer another 15 minutes.

This is a recipe I found on my WW Online. However, they are changing up thier recipes & it's almost impossible to find it anymore. So, I'm placing it here for safe-keeping (just as written). My husband and I are both on WW & we love this chili. Perfect to warm up the insides on a chilly fall/winter day...

Steps:
- Coat a Lg pot with cooking spray & place over med. heat.
- Add oil & onion (saute until soft, about 5 min).
- Add garlic & carrots (cook until garlic is softened, about 1 min).
- Add Turkey & brown meat (breaking it up w/ a woodedn spoon as it cooks, about 5 minute Stir to break up lumps).
- Add chili powder, paprika, red pepper flakes, cumin, tomatoes, tomato sauce, broth, vinegar, beans, & green pepper. Bring mixture to a boil.
- Cover.
- Reduce heat & simmer until meat & vegtables are tender (about 30-45 min).
- Season to taste w/ salt & pepper. Garnish with scallions.
- Yeilds 1 Cup per serving = 4pts.
- UPDATE: Under the new PointsPlus Program it is now 6pts per serving (based on the nutrition facts next to recipe).

- Heat oil in a medium pot over medium heat. Saute onion and bell pepper until tender, 6 to 8 minutes. Add chipotle and adobo sauce and cook for 1 minute. Add turkey, breaking it up with the back of a spoon, and cook until no longer pink, about 3 minutes. Add tomatoes with juices and beans.
- Bring to a boil. Reduce heat and simmer, stirring occasionally, until slightly thickened, about 30 minutes (add water to adjust consistency). Season with salt and serve alongside garnish.

- In soup pot, heat olive oil over over low heat. Add the onion, garlic, and ½ of the cilantro and cook, stirring all the time, for about 6 minutes.
- In the meantime brown the turkey on the stove. Set aside.
- Add all the tomatoes, chili powder, and cumin. Bring to a boil.
- Add turkey, peppers, olives, and corn and bring back to a boil.
- Reduce heat to medium-low and add beans and remaining cilantro.
- Continuing stirring occasionally for 1 hour. Add extra spices, salt, and pepper to taste.
