Start the day with this healthy sandwich, NO Eggs. Instead of butter, you can spread the muffins with Dijon ot grainy mustard; you can also use other types of cheese such as provolone, Montery jack or cheddar.

1 whole wheat English muffin
1/2 tablespoon butter
2 slices Canadian bacon
1 -2 slice swiss cheese
1 slice tomatoes
salt and pepper, to taste

Steps:

  • Preheat oven (or toaster oven) to 400 degrees; toast muffin directly on oven rack. Transfer to a rimmed baking sheet (or toaster-oven tray) and spread with the 1/2 tablespoon butter.
  • Layer bottom half with the 2 slices Canadian bacon, the cheese and the tomato, sprinkle with salt and pepper.
  • Return to oven; bake until cheese has melted, about 5 minutes; top with other half of muffin half, Enjoy.

1 hard-boiled egg, sliced into 8 pieces
2 teaspoons low-fat mayonnaise
1 teaspoon mustard
1/4 teaspoon vinegar

Steps:

  • Mix mayo, mustard and vinegar to make a sauce.
  • Cut muffin in half and toast, pour sauce over each 1/2 and place egg slices on top, salt and pepper as desired.
  • Eat open faced.

Good Friday being a strict day of fasting and consuming of vegan food only, this BLT-inspired sandwich came together easily and quickly. Mustard (any kind as long as it's dairy-free) can replace vegan mayonnaise if you prefer. As we were enjoying our new sandwich creation, Mr. Cookgirl suggested next time stirring in a little bit of Tabasco 'Chipotle" sauce to the mayo; or maybe substitute creamy horseradish...?

focaccia bread (enough for 2 sandwiches)
vegan mayonnaise, for spreading
3 -4 slices tempeh bacon, strips (store bought such as Lifelight brand 'Fakin' Bacon or homemade ( Smoky Tempeh Bacon)
1/4 cup sliced red bell pepper (In lieu of tomatoes which taste terrible this time of year. Use *fresh toms* when they are in season)
loose leaf lettuce, of choice (we tried mixed spring greens and some micro greens)
fresh cilantro, minced
cracked black pepper, to taste

Steps:

  • Slice the foccacia in half and toast or (pan) grill if desired.
  • Spread one slice of the focaccia with the vegan mayonnaise. Add 1 1/2-2 slices tempeh bacon per sandwich followed by the bell pepper, lettuce, cilantro and cracked black pepper.
  • Place the other slice on top and cut in half.

This is an easy thing to fix if you're in a hurry but still want something tasty and healthy for breakfast. You can be flexible with the fillings. I used eggs, American cheese, chopped onion, ham and tomato. This is baked in the oven and turns out to be like a Hot Pocket, but it is much better for you. You can also make a bunch of these ahead of time and freeze. Then to reheat, just pop in the microwave for a minute.

2 (10 inch) tomato-basil tortillas or 2 (10 inch) flour tortillas
2 eggs, cooked to scrambled (pan or microwave)
2 slices deli ham
1 small onion, chopped
1 small tomatoes, chopped
2 slices American cheese or 2 slices cheddar cheese
nonstick cooking spray

Steps:

  • -Preheat oven to 375.
  • -Treat sheet pan with nonstick cooking spray.
  • -Microwave tortillas for 20 seconds each (ovens vary).
  • -Put fillings in the middle; any order you choose.
  • -Roll up egg roll-style.
  • -Put seam-side down on sheet pan.
  • -Bake for 15 minutes.
  • -Let rest for 2 minutes.

4 slices bacon
1 tablespoon brown sugar
2 teaspoons minced canned chipotle chiles, peppers (in adobo sauce)
2 teaspoons red wine vinegar
1/4 cup quartered cherry tomatoes
1/4 cup peeled peeled pitted and sliced avocado
1 tablespoon sliced scallion
1 tablespoon minced fresh cilantro
2 teaspoons mayonnaise
1/2 lime, juice of, a
ground black pepper
2 eggs
2 teaspoons unsalted butter
2 slices monterey jack pepper cheese
2 kaiser rolls, split and toasted

Steps:

  • Cook bacon in a nonstick skillet over medium heat until crisp;.remove bacon, pour off drippings, then add brown sugar, chipotle peppers, and vinegar to skillet.
  • Return skillet to burner and simmer glaze over medium heat for 1 minute.
  • Add bacon; turn strips to coat with glaze & remove glazed bacon from skillet and keep it warm; wipe out skillet.
  • Combine tomatoes, avocado, scallions, cilantro, mayonnaise, lime juice, and pepper for the salsa in a small bowl; set aside.
  • Cook eggs in butter in same nonstick skillet over medium heat until whites are set; season with pepper.
  • Break yolks, flip eggs, and cook another minute. Top eggs with cheese; cover skillet for 1 minute to melt cheese.
  • Arrange two strips of bacon on bottom of each kaiser roll.
  • Add cheese-topped egg, salsa, and top of kaiser rolls.
  • YUM!
