COCOA BANANA MUFFINS
One of my favourite muffins, sweeter than most breakfast muffins but still a long way from being cupcakes in disguise which too many muffins are. NOTE: I have adjusted the quantity of flour thantks to my reviewers.

Steps:
- Preheat oven to 350°F.
- Butter or put paper cups in muffin pan.
- Mash bananas.
- Whisk in eggs, buttermilk, vegetable oil and vanilla.
- Mix the dry ingredients.
- Be sure to sift the cocoa.
- Mix wet and dry ingredients until just blended.
- Spoon the batter into the muffin cups.
- Bake for 20-25 minutes, until done.
- If you like, lay a slice of banana over each muffin before baking.

Steps:
- Combine flour, oats, sugar, baking powder, soda, and salt.
- In a large bowl, beat the egg lightly. Stir in the milk, oil, and vanilla. Add the mashed banana, and combine thoroughly. Stir the flour mixture into the banana mixture until just combined. Line a 12-cup muffin tin with paper bake cups, and divide the batter among them.
- Bake at 400 degrees F (205 degrees C) for 18 to 20 minutes.

- Stir together flour, sugar, oats, cocoa, baking powder and salt in large bowl.
- Beat eggs, milk, melted butter and vanilla in small bowl.
- Add milk mixture and nuts all at once to dry ingredients, stirring until just moistened.
- Spoon batter into 12 greased muffin cups.
- Bake at 400°Ffor 15 to 20 minutes, or until done.
- Serve warm with Honey Spread (Beat together 1/2 cup (125 mL) butter and 1/3 cup (75 mL) honey until smooth. Makes about 3/4 cup).

- Preheat oven to 350 degrees F and grease a mini muffin tin.
- Mash the banana well.
- Stir together the wet ingredients, including the mashed banana
- Stir together the dry ingredients in a separate bowl.
- (Or, to do this step with a blender, place the bananas, eggs, butter, honey, and vanilla into a blender. Add the spinach if you plan to use it. Blend well.)
- Stir the oats, flour, cocoa powder, baking powder, baking soda, salt, and chocolate chips, if using, to the wet ingredients
- Fill prepared muffin tin about to the edge of each cup.
- Bake for 10-12 minutes or until a cake tester inserted into the center comes out cleanly. Use a paring knife to remove from the pan and cool on a wire rack.
- Serve at room temperature, slightly warm, or chilled.

These are my family's favorite muffin, even my husband who doesn't care for baked banana goods. This is the #1 afterschool treat for my daughters. NOTE: Muffin batter should always be mixed by hand; your muffins will be dense and thick if combined with a mixer.

- Preheat oven to 375°F In medium bowl, stir together the flour, oatmeal, sugar, baking powder, baking soda, salt, cinnamon and nutmeg. In a separate bowl, combine the mashed bananas, eggs, vanilla and butter. Add the banana mixture to the flour mixture, stirring just until the dry ingredients are moistened.
- Spoon batter into greased muffin cups. Bake for 15 to 18 minutes (start watching around 12 minutes; oven temperatures vary) or until toothpick inserted into center muffin comes out clean. Let cool in pan on wire rack for 10 minutes. Remove muffins from pan and let cool on wire rack.

BANANA COCOA NIB OATMEAL MUFFINS

- Preheat oven to 350. Grease, spray with baking spray or line 18 wells in a muffin tin. In a large bowl, whisk together the spices, baking powder, cocoa nibs, baking soda, flour and oatmeal. Set aside. In another large bowl, cream together the butter and sugar. Beat in the eggs and vanilla. Stir in the yogurt then add the dry ingredients. Mix to combine. Fold in the mashed banana. Divide evenly into wells. Top each with a slice of banana, if desired. Bake about 20 minutes or until a toothpick inserted into the center of the center muffin (but not through a banana slice, go in through an angle) comes out with just a few moist crumbs. Remove from the tin and cool on a wire rack.
COCOA BANANA BARS
These bars are very moist with a rich banana and chocolate flavor. They are an after-school snack that the kids will beg for.

Steps:
- Preheat an oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking pan.
- Beat the butter and sugar with an electric mixer in a large bowl until light and fluffy. Add the egg and the vanilla and beat until well combined. Stir in the mashed banana, set aside.
- Stir together the flour, baking soda, baking powder, and salt in a separate large bowl, and make a well in the center. Pour the banana mixture into the well and stir just until combined.
- Remove half of the batter from the bowl. Mix the cocoa powder into the batter remaining in the bowl and stir well. Spread the cocoa batter in the bottom of the prepared pan. Spoon the remaining batter on top and use a knife to swirl the batter into a marbled design.
- Bake in the preheated oven until the edges are golden, about 25 minutes. Allow to cool before cutting into 24 pieces.

OATMEAL BANANA MUFFINS - 2 WW POINTS
Adapted recipe from RecipeZaar Recipe #195479. The muffins turned out nice and moist. Each muffin is about 124 calories, .5 g fat and 2.3 g of fiber. That calculates to 2 WW points per muffin. They freeze and thaw well.

- Preheat oven to 400 degrees.
- Mix yogurt and oats and set aside.
- Add dry ingredients (minus sugar) together in another bowl.
- To the bowl with the yogurt and rolled oats, add egg, applesauce, and then sugar. Mix welll.
- Add wet ingredients to the dry ingredients and mix well.
- Add mashed banana and fold in just to lightly mix.
- Bake 20 to 23 minutes.
