Chilled Melon and Mint Soup image

A summer staple so quick and easy to prepare. Mint does bring even more fresh hint to this soup, tastier served chilled. Great to sip with a drink in shot glasses before dinner or as first course. Mix melon flesh with mint and season.

1 ripe cantaloupe melon (peeled and seeded)
3 to 4 sprigs of mint (eventually a mix of mint & basil)
olive oil
lemon juice
dry white wine
Pastis (French anise alcohol)
Porto
salt and pepper

Steps:

  • Start by peeling melon and removing seeds. Roughly chop melon into chunks. Remove mint leaves from sprigs. Put aside about 20 leaves for serving.
  • Place melon and mint into a food processor and puree until smooth. Not with a too high speed though otherwize soup will whiten.
  • Adjust seasoning and sweetness by adding, according to your taste, lemon juice or alcohool (white wine, Porto or Pastis). Add 1 or 2 pinches of salt and some pepper.
  • Chill in the refrigerator before serving. Serve chilled with a dash of olive oil and fresh mint leaves neatly arranged.

7 cups diced watermelon, cut into 1-inch cubes
Salt and pepper
Pinch of cayenne
1 tablespoon red wine vinegar or sherry vinegar
4 tablespoons fresh lime juice, plus lime wedges for serving
2 cups diced honeydew melon or cantaloupe, cut into 1-inch cubes
2 cups diced cucumber, cut into 1-inch cubes
2 tablespoons extra-virgin olive oil
2 tablespoons snipped chives
Handful of small basil leaves
Handful of small mint leaves
Pinch of crushed red pepper (optional)
Pinch of flaky salt such as Maldon or fleur de sel (optional)

Steps:

  • Put 5 cups of diced watermelon in a food processor or blender and blitz to a purée. Strain purée through a fine-meshed sieve into a bowl. You should have about 4 cups purée. Season with salt and pepper and cayenne, 1 tablespoon vinegar and 2 tablespoons lime juice. Taste and adjust seasoning. Chill bowl on ice or refrigerate.
  • To serve, place remaining diced watermelon, honeydew melon and cucumber in a small mixing bowl. Toss with a little salt and pepper, 2 tablespoons lime juice and 2 tablespoons olive oil. Divide mixture evenly into chilled soup bowls.
  • Ladle watermelon purée into each bowl. Sprinkle with chives, basil and mint. Add a sprinkle of crushed red pepper and flaky salt if desired. Pass lime wedges separately.

1 cup plain yogurt
3/4 cup orange juice
1 tablespoon honey
1/4 teaspoon nutmeg

Steps:

  • Put half of the cantaloupe into a blender along with the yogurt and blend until smooth. Add the remaining cantaloupe and blend again until smooth. Pour into a large mixing bowl. Add the orange juice, honey, nutmeg, salt and cayenne and blend until well mixed. Pour into a soup tureen and chill at least 1 hour before serving. Garnish with fresh mint sprigs before setting out.

1/2 cup diced seedless cucumber
6 tablespoons lime juice, divided, plus more to taste
1 tablespoon thinly sliced scallion, green
1 whole scallion
1 cup cold water
1 strip orange zest (2-by-1/2-inch strip)
1/2 cup orange juice, plus more to taste
1 teaspoon chopped fresh ginger
1/2 teaspoon salt
2 tablespoons finely chopped cilantro or 2 tablespoons mint, for garnish
6 teaspoons plain yogurt (to garnish) or 6 teaspoons creme fraiche (to garnish)

Steps:

  • Dice enough melon to measure 1 cup and combine in a small bowl with cucumber, 2 tbsp lime juice and scallion green. Cover and refrigerate until ready to serve soup.
  • Place the remaining melon and 4 tbsp of lime juice in a blender. Chop the whole scallion and add to the blender along with the water, orange zest, orange juice, ginger and salt. Blend until smooth and creamy. Taste and add more lime juice, and/or orange juice, if desired.
  • Refrigerate the soup until chilled, 2 hours.
  • Stir the reserved diced melon mixture and divide among 4 soup bowls. Pour the soup into the bowls and garnish with cilantro (or mint) and yogurt.

Steps:

  • Working in batches, puree 12 cups watermelon in processor until smooth. Strain puree into large bowl. Transfer 1 cup puree to small bowl; cover and chill. Whisk cornstarch into remaining puree. Bring wine and 1/3 cup sugar to simmer in large pot, stirring until sugar dissolves. Simmer 3 minutes. Add watermelon-cornstarch mixture; bring to boil, whisking. Transfer soup to bowl; stir in 2 cups mint. Cool to room temperature, whisking occasionally, about 1 hour.
  • Strain soup into another bowl, pressing on solids to extract as much liquid as possible. Stir in salt and cayenne. Add more sugar, if desired. Chill until cold, at least 4 hours and up to 1 day.

3 cups honeydew melon, peeled and cubed
3 cups cantaloupe, peeled and cubed
1/4 cup vodka, chilled (divided)
1/4 cup light brown sugar, firmly packed (divided)
4 teaspoons fresh lime juice, divided

fresh mint leaves (optional)

Steps:

  • Have all your fruit prepared and chilled.
  • Place honeydew melon into a blender and process until smooth, (do not over process), pour into a bowl and set aside.
  • Rinse out blender and process the cantaloupe until smooth; pour into a bowl.
  • To each bowl of puréed melon; add 2 tablespoons chilled vodka, 2 tablespoons brown sugar, and 2 teaspoons lime juice, stir well, cover and chill.
  • Place sliced strawberries in blender and process until smooth. Pour into a bowl; cover and chill.
  • To serve:.
  • Pour 1/2 cup of cantaloupe mixture into each of 4 individual bowls.
  • Pour 1/2 cup of honeydew mixture in center of cantaloupe mixture.
  • Dollop each serving with 2 tablespoons of puréed strawberries in the center.
  • Take a wooden tooth pick, place it below the surface of the strawberry purée and without lifting it, pull it to the edge of the bowl, passing through the honeydew and cantaloupe purées. Repeat this all the way around the bowl. For an even more decorative pattern, starting from the edge of the bowl (in-between the stripes you have just made), place the tooth pick into the cantaloupe purée and pull it in the opposite direction to the center of the bowl, passing through the honeydew purée ending in the strawberry purée. You can do more simple decorative pattens by making random swirls, waves, or wiggly lines. It is a blank canvas, have fun.
  • Garnish with a sprig of mint. (optional).
