ROASTED PEPPER AND ONION SANDWICHES

Due to diet restrictions, I tried making sandwiches without meat. This sandwich turned out to be one of my favorites.

Yield 4 servings.

Number Of Ingredients 8

8 onion slices (1/4 inch thick)
1/4 cup olive oil
1/4 cup red wine vinegar
4 teaspoons chopped fresh oregano or 1 teaspoon dried oregano
2 garlic cloves, minced
4 jars (7 ounces each) roasted red peppers, drained
1 loaf (1 pound) French bread
1 cup shredded part-skim mozzarella cheese

Steps:

  • Place onion slices in a 13x9-in. baking pan. In a small bowl, whisk the oil, vinegar, oregano and garlic; brush half over the onions. Set remaining dressing aside. , Bake onions, uncovered, at 375° for 10 minutes or until tender. Add red peppers; bake 10 minutes longer or until heated through. Meanwhile, slice bread in half lengthwise, then cut into fourths. Carefully hollow out bottom of loaf, leaving 1/2-in. shells (discard removed bread or save for another use). , Place bread, cut side up, on a baking sheet. Broil 4 in. from the heat for 1 minute or until toasted. Layer with onions, red peppers and cheese on bottom halves of bread. Drizzle with remaining dressing. Broil 4 in. from the heat for 4 minutes or until cheese is melted. Top with remaining bread.

Steps:

  • Combine all ingredients in a medium bowl until well mixed.
  • Cover and chill for at least 2 hours.
  • Yields about 1/2 cup per serving.

2 large plum tomatoes, seeded and coarsely chopped
1/3 cup kalamata olive, chopped
1 tablespoon capers, rinsed and chopped
1 large garlic clove, crushed through a press
1/4 teaspoon red pepper flakes
3 teaspoons olive oil
4 bell peppers, cut into 1 inch wedges, use 4 different color peppers if possible
2 tablespoons red wine vinegar
1/4 teaspoon salt
2 tablespoons chopped fresh basil or 2 tablespoons chopped fresh parsley, coarsely chopped

Steps:

  • Preheat the oven to 350°F Spray a large rimmed baking sheet with nonstick spread.
  • Mix the tomatoes, olives, capers, garlic, red pepper flakes, and 1 tsp of the oil in a bowl. Spread the bell peppers, skin side down, on the baking sheet. Spoon the tomato mixture over them. Cover loosely with foil and roast 30 minutes. Uncover and roast until the peppers are tender, about 15 minutes. Let the pepper mixture cool. Transfer to an airtight container and refrigerate up to two days.
  • To serve, transfer the salad to a medium bowl and let come to room temperature, about 1 hour. Whisk the remaining 2 tsp oil, the vinegar, and salt in a small bowl. Drizzle over the salad and sprinkle with the basil or parsley.

1 teaspoon corn oil or 1 teaspoon olive oil
1 cup thickly sliced onion
4 medium poblano peppers, roasted, peeled, seeded, and sliced
2 garlic cloves, crushed
1/2 cup vegetable broth or 1/2 cup low sodium chicken broth
1/4 teaspoon thyme
1/4 teaspoon oregano
1 bay leaf
1 pinch salt

Steps:

  • In medium non-stick skillet, heat oil and add onions. Cook over med heat, stirring frequently, 8-10 minute until onions are lightly browned. Add peppers and garlic, cook, stirring frequently, 2 minute longer.
  • Add broth, thyme, oregano, bay leaf, and salt to onion mixture. Bring liquid to a boil. Cook, stirring occasionally, until most of the liquid has evaporated. Remove and discard bay leaf, serve mixture hot or at room temperature.
  • 1 point per serving (1/2 cup).
