Wurstsalat - or Sausage Salad - is a meaty Swiss/German salad. Made from chopped sausage, cheese, pickles, and onions, this flavorful dish is covered in a simple dressing and makes a great snack or summer dinner!

9 ounces lyoner sausage (bologna also works)
6 ounces swiss cheese (optional)
3-4 baby dill pickles
1 small yellow onion
chopped parsley to garnish (optional)
3 tablespoons white wine vinegar
2 tablespoons neutral-tasting oil
2 tablespoons pickle juice
salt and pepper to taste

Steps:

  • Cut the sausage into slices (if it isn't already sliced) and then into thin strips. Cut the swiss cheese and the baby dill pickles into thin strips as well. Place everything into a large mixing bowl.
  • Peel the onion and chop it into very small cubes or thin strips and add them to the bowl as well.
  • Now prepare the dressing. For that, add the white wine vinegar, oil, pickle juice, salt, and pepper to a small bowl. Mix everything well then pour it over the ingredients in the large bowl.
  • Mix everything until the sausage and cheese are evenly coated in the dressing.
  • Cover the bowl and place the sausage salad in the fridge for an hour so the flavors can mingle (this makes a big difference in taste, in our opinion!).
  • After the hour is up, remove the salad from the fridge, taste it, and add more salt, pepper, and/or vinegar to taste.
  • Serve the salad with fresh soft pretzels or crusty bread.

I had never had wurstsalat until I sampled some at Disney's Epcot's Biergarten in the German pavillion. One bite and I was head-over-heels! I came home and scoured the net collecting every recipe available because theme park admission is just too darn expensive to shell out every time a craving hits. This is the culmination of my efforts. If you want to stretch it out a little bit, toss 2 cups of sliced cooked potatoes in with the mix.

2 tablespoons olive oil
3 tablespoons red wine vinegar
1 tablespoon German mustard or 1 tablespoon Dijon mustard
3 tablespoons cold beef stock
1 teaspoon sugar
1/2 teaspoon salt
1/8 teaspoon cracked black pepper
1 lb bratwursts or 1 lb knockwurst, precooked and thinly sliced into disks
1/2 cup sweet onion, thinly sliced
3 hard-boiled eggs, thinly sliced into disks
1 cup sour dill pickle, thinly sliced into disks

Steps:

  • Whisk the dressing ingredients together.
  • Toss the salad ingredients with the dressing.
  • Refrigerate for 2 hours prior to serving to let the flavors blend.

Swiss Wurstsalat (Sausage Salad) image

A flavorful main-dish salad. In some places, cervelas sausage is called cervelat. The Swiss butcher at my local German deli tells me that what is called Knackwurst is actually Swiss Cervelat. Although the original recipe says not to cook or grill the sausage but rather use it "raw", I would make sure the sausage is pre-cooked or smoked and not actually raw. (Raw pork, eeww) Also, you can use only emmenthaler (swiss) cheese and gruyere if tilsiter is unavailable, just adjust amounts. I don't know why the food.com memory banks call it "knackwurst of frankfurter" but do NOT use hot dogs!!

1 bunch red radish, cut into slices
2 carrots, cut into slices
1/4 lb emmenthaler cheese, cut into small pieces
1/4 lb gruyere cheese, cut into small pieces
1/4 lb tilsiter cheese, cut into small pieces
3 knackwurst of frankfurters, cut into slices (Swiss pork sausage -see description)
1/2 cucumber, cut into small pieces
4 potatoes, boiled, cut into small pieces
1/4 teaspoon pepper
1 tablespoon mustard
1 onion, chopped
1 garlic clove, pressed
1/4 teaspoon salt
1 teaspoon lemon juice
4 tablespoons vinegar
5 tablespoons oil
1 -2 egg, cooked hard
2 tomatoes
1 teaspoon chives, minced

Steps:

  • Put the vegetables and the cheese in a bowl and mix them well.
  • Make the sauce with all the ingredients mentioned above, from pepper to oil and stir well.
  • Pour the sauce over the salad and mix well.
  • Peel the eggs and cut them into slices.
  • Cut the tomatoes and use them together with the eggs for decoration.
  • Sprinkle the chives over the salad.

This sausage and cheese salad is popular in the Southern German, Swiss and Austrian countries in Europe. The recipe is adapted from a Dr. Oetker recipe. This salad makes a great lunch served with rolls. You can also substitute the pork sausage with cooked chicken sausage or leftover pork loin.

1/2 lb onion, peeled and sliced in rings
1/2 lb emmenthaler cheese (Edam or other flavorful mild cheese can be substituted)
12 ounces sausages (must use a cooked sausage, can use summer sausage, a good bologna, knackwurst, or frankfurter)
3 ounces gherkins
4 teaspoons wine vinegar
4 teaspoons water
1 teaspoon mustard (preferably a German mustard or one like Gulden's)
1 teaspoon sugar
salt and pepper
3 tablespoons vegetable oil
2 teaspoons chives, chopped

Steps:

  • Pour water into a pot and bring to a boil. Place the onion rings in the boiling water and cook for 2 minutes. Pour into a sieve and let drain thoroughly.
  • Remove any rind from the cheese and cut into strips about 1/4 " X 1".
  • Remove any skin from the sausage and cut into slices about 1/8" X 1'.
  • Slice the gherkins about 1/8" thick.
  • Place the onion rings, cheese strips, and sliced sausage and gherkins in a salad bowl.
  • Make the dressing by mixing together the vinegar and water, adding the mustard, salt, pepper and sugar, and whisking in the oil.
  • Pour the dressing over the salad ingredients and mix well.
  • Refrigerate for at least one hour to let the flavors blend.
  • Sprinkle with chives before serving.
