These mini wonton taco cups have layers of crunchy wonton shells, seasoned beef and melty cheese. Top them with everyone's favorite toppings for a great appetizer or dinner!

1 lb ground beef
2 TBS taco seasoning
1/2 cup salsa
24 wonton wrappers
2 cups shredded cheese ((or mexican blend))
taco toppings

Steps:

  • Preheat your oven to 375 degrees.
  • Spray a muffin tin with nonstick spray. Set aside.
  • Cook your ground beef in a large saute pan. Drain grease from ground beef.
  • Mix your taco seasoning, and salsa in with your ground beef.
  • Line each muffin tin spot with a wonton wrapper.
  • Add about 1 TBS of taco meat to each cup.
  • Top each cup with 1 TBS shredded cheese
  • Bake for 12-14 minutes until the wonton wrappers are browned and crispy and cheese is melted!

Nonstick cooking spray, for greasing
Twenty-four 3.5-by-3.5-inch square wonton skins
1 tablespoon olive oil
1 small yellow onion, diced (about 1 cup)
2 cloves garlic, peeled and grated
1/2 pound ground turkey, preferably dark meat
1/2 teaspoon chili powder
1/2 teaspoon cumin
1/2 teaspoon dried oregano
1/2 teaspoon smoked paprika
1/2 teaspoon kosher salt
Heaping 1/2 cup grated Cheddar
Assorted toppings, such as shredded lettuce, diced avocado, salsa, sour cream, pickled jalapeños, and chopped cilantro, for serving

Steps:

  • Preheat the oven to 400 degrees F and spray a 24-cup mini muffin tin with nonstick cooking spray.
  • Delicately press the wonton skins into the mini muffin tin, being sure to make the base of the wonton skin is flat (this will ensure that the taco cup will stand flat when you remove them from the pan). Spray the wontons lightly with nonstick cooking spray and transfer them to the oven to bake until they are golden brown and crisp, 7 to 10 minutes.
  • In the meantime, heat a nonstick pan over medium-high heat. Add the olive oil and swirl to coat the pan. Add in the onion and sauté until translucent, about 4 minutes. Add in the garlic and stir to combine. Add in the turkey, breaking up with a wooden spoon. Next add in the chili powder, cumin, dried oregano, smoked paprika, and salt. Cook, stirring frequently, until the turkey is cooked through, about 5 to 7 minutes.
  • To assemble, keep the taco cups in the mini muffin tin (this will help with any unstable taco cups). Add a little cheese to each of the taco cups, then top them with the ground turkey mixture. Next add your desired toppings such as shredded lettuce, diced avocado, salsa, sour cream, pickled jalapeños, and chopped cilantro.
  • Transfer the taco cups to a platter and serve.

2 tablespoons salted butter, melted
12 wonton wrappers
One 15-ounce can black beans, drained and rinsed
One 4-ounce can diced green chiles, drained
2 teaspoons chili powder
Juice of 1/2 lime
1/2 cup grated Monterey Jack cheese
1/2 small avocado, diced
1/3 cup pico de gallo
1/4 cup sour cream
Hot sauce, if desired
1/4 cup fresh cilantro leaves

Steps:

  • For the wonton cups: Preheat the oven to 375 degrees F.
  • Brush 12 cups of a mini muffin pan with the butter. Fit 1 wonton wrapper into each cup, folding the sides as needed.
  • In a small bowl, toss together the beans, green chiles, chili powder and lime juice. Spoon some of the bean mixture into each cup, about a heaping tablespoon each. Bake until the filling is warmed through, about 12 minutes. Remove the pan and top each cup with a pinch of cheese. Return the pan to the oven and continue to bake until the cheese is melted and the wontons are golden, another 5 minutes.
  • For the toppings: Let the taco cups cool in the pan for a minute or two. Transfer the taco cups to a platter and top each with some avocado, pico de gallo, a small dollop of sour cream, hot sauce, if using, and cilantro.

1 small onion, chopped
1 jar (16 ounces) salsa, divided

Sour cream, chopped green onions and chopped ripe olives, optional

Steps:

  • Sprinkle chicken with taco seasoning. In a large skillet coated with cooking spray, cook and stir the chicken over medium heat for 5 minutes or until meat is no longer pink. , Transfer chicken to a food processor; cover and process until chopped. In a large bowl, combine the chicken, onion, half of the salsa and 1 cup cheese., Press wonton wrappers into miniature muffin cups coated with cooking spray. Bake at 375° for 5 minutes or until lightly browned. , Spoon rounded tablespoonfuls of chicken mixture into cups; top with remaining salsa and cheese. Bake 15 minutes longer or until heated through. 1 lb ground beef
1 (1 1/4 ounce) package taco seasoning
2/3 cup water
1 (16 ounce) can black beans, drained
2 cups cheddar cheese
36 wonton wrappers

Steps:

  • Preheat oven to 375. Brown the meat in a skillet and drain off fat (I use a collander). Return the meat to the skillet; add the taco seasoning, water and black beans. Mix and simmer for 5-10 minutes, until water is absorbed.
  • Spray 18 regular muffin pan cups with cooking spray. Place one wonton wrapper in each muffin cup. Divide half of the taco meat between muffin cups. Sprinkle half of the cheese over the cupcakes. Repeat layers - wonton, taco meat and cheese. Bake at 375 for 20 minutes, or until cheese is bubbly. Top with your favorite taco toppings.

1/2 cup peanut butter
1/2 cup hoisin sauce
1 tablespoon honey
2 teaspoons red wine vinegar
2 tablespoons minced ginger
3 minced garlic cloves
2 teaspoons soy sauce
1 teaspoon Thai sweet chili sauce
1 tablespoon oyster sauce
2 tablespoons water
1 tablespoon sesame seeds
1 tablespoon olive oil
1 lb pork or 1 lb chicken, cubed into 1/4-1/8-inch squares
30 -40 wonton wrappers (I use Nasoya brand)
1 cup frying oil
1/2 head cabbage, chopped
2 carrots, chopped
1 red onion, chopped
4 green onions, chopped
3 tablespoons fresh cilantro, chopped
2 tablespoons rice vinegar
salt

Steps:

  • FOR SLAW.
  • Add all vegetable ingredients together, toss with rice vinegar and salt, cover and set aside.
  • FOR SAUCE.
  • Heat up olive oil in frying pan.
  • Lightly toast sesame seeds.
  • Combine all ingredients in pan, bring to a boil. Turn heat to low and simmer.
  • FOR MEAT.
  • Cook cubed chicken or pork until almost done.
  • Add simmering sauce to meat. Cook through.
  • FOR WONTONS.
  • Heat oil to frying temperature.
  • Fry wontons in a "taco" shape (I find this is most easily done by letting the wontons cook for a second or two, then folding them in half. Make sure you leave enough space to put the meat filling in the taco and not seal them shut).
  • Assemble wontons by adding meat filling in center. Sprinkle with slaw that has been set aside.

Light and tasty, these make a great appetizer or a quick and easy main dish! Kids love them! Finally a dish that makes use of ground chicken but not so far-fetched. I bake the wonton wrappers to save time and it eliminates most of the fat. Although time-consuming, you can fry wrappers in sesame or olive oil for the extra flaky shells, folded in a triangle for about 1 minute on each side. I loved the ones at Applebee's® and decided to attempt a home version. I was extremely pleased with the healthier version! Top tacos with cilantro, red onion, or sweet onion, if desired. Serve lime wedges on the side.

Steps:

  • Mix cabbage, carrots, coleslaw dressing, vinegar, soy sauce, and teriyaki together in a bowl; refrigerate until flavors blend, 1 hour to overnight.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Heat sesame oil in a skillet over medium heat. Cook and stir ground chicken in the hot skillet until browned and crumbly, 5 to 7 minutes. Add stir-fry sauce, cover skillet, reduce heat to low, and simmer.
  • Form wonton wrappers into taco shapes and arrange between the cups of an inverted muffin tin.
