FRESH CRANBERRY RELISH
Steps:
- Combine 2 pounds cranberries, 1 cup sugar, 1/4 cup Grand Marnier and the zest and juice of 1 orange in a food processor; pulse until chunky. Let sit at room temperature for at least 30 minutes.
CRANBERRY RELISH
This is my mother-in-law's recipe and as far as my husband and son are concerned, it is the most important part of thanksgiving dinner. It's nice to serve this in a glass bowl to show off the festive red color. Preparation time does not include overnight refrigeration.

Steps:
- Chop or grind cranberries, orange (with rind) and apple (with peel). Make sure you do this in such a way as to conserve all of the juice.
- You can use a food processor or one of the old metal food grinders that clamp to your table - mine drips horribly, but if you have kids helping, it's lots of fun for them to turn the crank and hear the cranberries pop. You could of course chop it all by hand with a knife, but you'll want to chop everything very finely.
- Place fruits and their juices in a serving dish/bowl that will hold 8-10 cups.
- Add diced celery, nuts and crushed pineapple with juice.
- Dissolve jello in recommended amount of boiling water (2 cups), and add to the fruit/nut mixture.
- Depending on how juicy your fruit is, you may not need to add any cold water to the mixture. If you think it will need it, don't add more than 1 cup.
- Depending on the tartness of your fruits, you may or may not want to add some sugar, perhaps 1/2 cup. (I just taste it before putting it in the fridge to set and add sugar if it seems too tart.).
- Refrigerate for several hours till set(overnight is good).

- Place the frozen cranberries, orange, granulated sugar and honey in a food processor. Process until the mixture is evenly chopped. Store in the refrigerator until needed. Serve as a condiment for roasted turkey.

- Finely chop the orange in a food processor.
- Combine cranberries and sugar in a heavy saucepan. Cook and stir over medium heat until cranberries just begin to pop, about 10 minutes.
- Transfer cranberries to a bowl, add apricot preserves and mix until melted. Stir in chopped orange, drained crushed pineapple and lemon juice. Cover and refrigerate until well chilled.

RAW CRANBERRY RELISH
We first had this recipe during the Holidays at a Wonderful Inn & Restaurant which is Historic, located in Berea, Kentucky - The Boone Tavern Hotel. This is so easy and absolutely the BEST Cranberry relish recipe I've ever had, it is a tradition with our family for Thanksgiving & Christmas a wonderful accompaniement to Turkey or Pork.

- Place cranberries and fruit including the peels through the food processor.
- Ad the Splenda, and allow to set for a minimum of 3 hours in the refrigerator (Note: the longer the relish is allowed to set in the refrigerator, the more flavorful it becomes). You will want to stir after 3 hours and stir every day - will be good for up to 7 days if stored in a cool, dry environment.
- In making cranberry salad, merely make up a pint of strawberry gelatin (jello works) and when cool, add 2 cups of the relish and one cup of finely cut celery &/or walnuts. Top with Fresh - homemade whipped cream, serve on lettuce leafs for a nice presentation.

FRESH CRANBERRY RELISH
This is a wonderful cranberry relish that is somewhat different because of the Nuts added. I get many compliments on this when I make it for the Holidays! I usually double the recipe for larger crowd and then the bake times might be a little longer.

- Heat oven to 350 degrees Put cranberries in baking dish and sprinkle with the sugar, cover with aluminum foil and bake for 35 minutes.
- Take out of the oven and mix in the pecans or walnuts and put back into the oven for 10 more minutes.
- Take out and mix in the orange marmalade and the lemon juice and it is ready to serve!
- ENJOY!

NO COOK CRANBERRY RELISH
Extremely simple. I found this recipe in a cookbook called Use it All. If the apples and orange are sweet you don't need to use all the sugar (I use only a 1/2 cup). You can make cakes/muffins with this or add some to plain yogurt, which I do daily! Of course its great with Turkey, Chicken or whatever the imagination comes up with!

- Wash and sort the cranberries.
- Wash apples and orange BUT do NOT peel the apples or orange; just remove the core and seeds.
- Using a food processor, do it in 2 batches, place 1 apple and half orange (cut into quarters) and half the cranberries, pulse the fruit together to a fine chop.
- Place all fruit in a medium size bowl and stir in the sugar, start with a 1/4 cup, just taste and see, add more to your desired taste.
- Fill into a glass quart jar and store in your refrigerator.
- According to the book this will keep for several months (mine don't last that long ;-).
