- Cook green beans in large pot of boiling water until crisp-tender, about 3 minutes. Drain. Transfer green beans to large bowl of ice water to cool. Drain again. Pat green beans dry. (Can be prepared 1 day ahead. Wrap green beans in paper towels and enclose in resealable plastic bag. Refrigerate.)
- Heat oil in heavy large wok or nonstick skillet over high heat. Add green beans and stir-fry until heated through, about 2 minutes. Add soy sauce, vinegar, sugar, and pepper. Stir-fry until sauce reduces slightly and loosely coats green beans, about 2 minutes longer. Add sesame seeds and toss to coat. Transfer green bean mixture to bowl and serve.

- Add green beans and stir-fry until heated through, about 2 minutes.
- Add soy sauce, vinegar, sugar, and pepper. Stir-fry until sauce reduces slightly and loosely coats green beans, about 2 minutes longer.
- Add toasted sesame seeds and toss to coat.
- Transfer green bean mixture to bowl and serve.

- Steam green beans covered in 1/2-inch boiling water for 2 minutes. Transfer beans to a colander and run under cold water. Drain well.
- Heat a wok shaped skillet or large nonstick frying pan over high heat. Go once-around-the-pan with wok or vegetable oil, add several drops sesame oil, and crushed pepper flakes. The pan will smoke. Add beans and stir-fry for 2 minutes. Add sesame seeds and coarse salt and toss to coat beans evenly.

- Heat large nonstick skillet over medium heat.
- Add sesame seeds.
- Cook 1 to 2 minutes or until golden; shaking skillet often.
- Transfer to small bowl.
- Whisk in hot sauce, olive oil, soy sauce, ginger, sesame oil and garlic; set aside.
- Bring 1 cup of water to a boil in large saucepan over high heat.
- Place green beans and salt in steamer basket; set into saucepan.
- Do not let water touch beans.
- Cover; steam 5 to 6 minutes or until beans are crisp-tender.
- Rinse with cold water; drain well.
- Combine beans and bell pepper in large bowl.
- Pour sesame dressing over vegetables; toss to coat evenly.
- Cover; refrigerate 1 hour.
- Toss just before serving.

EASY SESAME GREEN BEANS
I found this at allrecipes.com and have made it a bunch of times this summer with beautiful green beans. Even my bf who doesn't care for green beans will eat this! The recipe says you can also try it with broccoli instead of the beans. (Sometimes I use more chicken broth, just depends on how fast you want them done, and more or less flavor.)

- Pour in chicken broth, salt, and pepper. Cover and cook until beans are tender-crisp, about 10 minutes. (I like mine much more done -- about 30 minutes!) Uncover and cook until liquid evaporates. You can serve these hot like normal, but I even like these babies cold! ;-).

- In a large skillet, heat 1 tablespoon oil over medium. Add shallot and cook, stirring occasionally, until golden, about 5 minutes. Stir in garlic until fragrant, 1 minute. Using tongs or a slotted spoon, transfer mixture to a small bowl.
- Add the remaining 2 tablespoons oil to the skillet. Add green beans, season with salt and pepper and toss to evenly coat in the oil. Leave undisturbed over medium heat for 2 minutes to encourage charring, then stir and cook, tossing every 2 minutes, until most of the beans are shriveled, about 6 minutes longer.
- Reduce heat to low and add the shallot mixture and anchovies. Cook, stirring, until well incorporated and anchovies dissolve, about 2 minutes. Season with salt and pepper.

STIR-FRIED GARLIC GREEN BEANS

- Bring a pot of water to a boil, season with salt and add the green beans. Boil 1 minute, drain and rinse with cold water, then place on a kitchen towel to dry thoroughly. (If vegetables aren't dry when you add them to the hot wok or pan, they will splutter and braise instead of stir-frying.) Place within reach of your wok or pan.
- Combine the soy sauce and wine or sherry in a small bowl or measuring cup and place within reach of your wok or pan. Place the garlic, ginger and red pepper flakes in another small container near the burner.
- Heat a 14-inch flat-bottomed wok or a 12-inch skillet over high heat until a drop of water evaporates within a second or two when added to the pan. Swirl in the oil by adding it to the sides of the pan and swirling the pan. Add the garlic and ginger, stir-frying for no more than 10 seconds, and then add the green beans. Toss together, then add the soy sauce and sherry and stir-fry for one to two minutes, until the beans are crisp-tender. Remove from the heat and serve.
