SQUASH AND APPLE CASSEROLE
This family favorite makes a wonderful addition to your festive table. Sweet and hearty. Wonderful with turkey or ham. Cranberries are optional and can be sprinkled on top for a Christmas version.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x11-inch casserole dish.
- Place squash on a flat work surface. Trim off the hard outer rind with a knife. Cut squash into 1/2-inch slices; arrange slices over the bottom of the prepared dish. Arrange apples on top.
- Combine brown sugar, butter, flour, salt, and mace together in a bowl. Pour mixture over the apples. Sprinkle cranberries on top.
- Bake in the preheated oven until top is golden brown and apples are tender, 50 minutes to 1 hour.

Years ago, our vegetable garden kept us well-supplied all year long. Dad stored huge piles of potatoes and squash in the coldest part of the basement. In winter the squash was so hard. I got this recipe from a Weight Watchers meeting and it has become one of my most favorite recipes! You could probably make it into a dessert by adding a crisp/crumble topping to it or by serving it over ice cream but I love it all by itself!! (2 points per serving)

- Cut the squash lengthwise in half. Scoop out the seeds. Place the squash skin-side up on a foil-lined baking sheet and bake at 425 degrees F for 30 minutes, or until tender when pierced with a fork.
- While the squash roasts, melt 2 tablespoons butter in a large skillet. Add apples and ¼ cup of brown sugar. Sauté until apples are soft (about 10-15 minutes). Place in the bottom of a 3-quart casserole dish.
- Using a large spoon, remove the cooked flesh of the squash and place it in a food processor or blender. Add 2 tablespoons of butter, ¼ cup of brown sugar, salt, and process until smooth. Spread the whipped squash on top of the sautéed apples in the casserole dish.
- Crush the Corn Flakes and place them in a small bowl. Add the chopped pecans and the remaining ¼ cup of brown sugar. Combine with 3 tablespoons of melted butter. Sprinkle the topping over the squash.
