WINTER SQUASH, SAUSAGE & FETA BAKE



Winter Squash, Sausage & Feta Bake image

This time of year, I can't resist butternut squash, with its bright color and fall flavor. It helps make this casserole a guaranteed hit at potlucks. -Craig Simpson, Savannah, Georgia

1 pound bulk Italian sausage
2 large onions, chopped
1/2 teaspoon crushed red pepper flakes, divided
1/4 cup olive oil
2 teaspoons minced fresh rosemary
1-1/2 teaspoons salt
1 teaspoon Worcestershire sauce
1 teaspoon pepper
1 medium butternut squash (about 4 pounds), peeled and cut into 1-inch cubes
1 medium acorn squash, peeled and cut into 1-inch cubes
2 cups crumbled feta cheese
2 small sweet red peppers, chopped

Steps:

  • Preheat oven to 375°. In a large skillet, cook the sausage, onions and 1/4 teaspoon pepper flakes over medium heat 8-10 minutes or until sausage is no longer pink and onions are tender, breaking up sausage into crumbles; drain., In a large bowl, combine oil, rosemary, salt, Worcestershire sauce, pepper and remaining pepper flakes. Add butternut and acorn squash, cheese, red peppers and sausage mixture; toss to coat., Transfer to an ungreased shallow roasting pan. Cover and bake 35 minutes. Uncover; bake 10-15 minutes longer or until squash is tender.

This is a dish that i always make for the family, its so easy to make and you will probably find that you have all the ingredients in your cupboard...try it you will love it.

Number Of Ingredients 7

8 sausages
1 large onion (sliced)
400 g chopped tomatoes
300 g peas
1 tablespoon curry powder
water
4 potatoes

Steps:

  • Grill your sausages & then chop them up.
  • Fry your onion.
  • Place half of your sausages & half of the onion in a square casserole dish.
  • Pour the tin of tomatoes over the sausage & onion.
  • Put the rest of the sausage & onion on top of the tomatoes.
  • Then pour the tin of peas(in there juice) over.
  • Peel & thinly slice your potatoes & place them on top of your casserole.
  • sprinkle your 1tbl of curry powder over the potatoes.
  • In the empty tin of peas -- 1/2 fill with cold water & pour over the potatoes.
  • Place kitchen foil over the dish & place in the oven on gas mark 5 for 1 1/2 hours.
  • Serve with cob & butter.

1 large baking potato, cut into 1/2 - inch cubes
1 large dark orange sweet potato, peeled, cut into 1/2- inch cubes
2 medium carrots, sliced
1 medium parsnip, sliced
1 medium onion, chopped
1 lb smoked sausage, sliced
1 (14 1/2 ounce) can can ready-to-serve chicken broth
1 (14 1/2 ounce) can can chunky tomatoes with garlic and italian herbs, undrained
2 teaspoons sugar
1/2 teaspoon dried thyme leaves
1/4 teaspoon pepper
1/4 cup chopped fresh parsley

Steps:

  • In 3 quart Crock Pot Slow Cooker, combine all ingredients except parsley.
  • Mix well.
  • Cover; cook on low setting for 7-9 hours.
  • Just before serving, stir in parsley.
