Wine Country Chicken Salad with Cranberries and Peacans image

4 cups chicken breast chopped
1 cup celery chopped
3/4 cup dried cranberries
3/4 cup pecan halves
1 cup mayonnaise
2 tablespoon apple cider vinegar
1 tablespoon honey
4 tablespoon sugar
Salt and pepper to taste
1/2 teaspoon poppy seeds, optional

Steps:

  • In a large bowl combine chicken, celery, cranberries and pecans; mix well. In a small bowl, combine mayonnaise, vinegar, honey, sugar, and sea salt/pepper. Whisk until blended and smooth. Pour over chicken mixxture, tossing well. Refrigerate 2-3 hours. Serve chilled on lettuce leaves or use to make a sandwich.

Number Of Ingredients 3

Sauce: 1/2 cup mayonnaise (I like homemade or avocado oil based) 1 tbsp apple cider vinegar 1 tbsp poppyseeds 2 tbsp honey (more to desired sweetness) pinch sea salt
Salad:
~3 cups chopped or shredded cooked chicken (rotisserie is the easiest) 1/3 cup finely chopped celery 1/3 cup dried cranberries 1/4 cup chopped pecans

Steps:

  • Whisk sauce ingredients together. Taste for sweetness and add more honey or salt to taste.
  • Toss together chicken, celery, cranberries and pecans. Mix well with sauce. Taste again and season if necessary.

2 cups green seedless grapes
1 cup cashews
1/2 cup fresh cranberries, halved

Steps:

  • In a large glass bowl, mix first 6 ingredients until well blended.
  • Add remaining ingredients & mix well.
  • Refrigerate to chill before serving.

This is a great sandwich filling that they make at the diner in the hospital where I work, but I fancied it up a bit with some green onions and pecans. A great way to use up leftover chicken. Delicious!

2 cooked chicken breast halves, chopped
½ cup mayonnaise, or to taste
2 green onions, chopped
½ cup sweetened dried cranberries (such as Ocean Spray® Craisins®)
¼ green apple, shredded
¼ cup chopped pecans
1 tablespoon lime juice
1 pinch salt and black pepper to taste
¼ teaspoon dried dill weed

Steps:

  • Mix together the chicken and mayonnaise in a bowl, stir to coat well, then stir in the green onions, dried cranberries, apple, pecans, lime juice, salt, pepper, and dill weed. Serve immediately, or refrigerate several hours or overnight (the flavor just gets better).
