Another wine cooler, but this is packed w/the rich, tropical flavor of pineapple. I seized the moment & used an excess of pineapple juice from a canned pineapple product. Now I am hopelessly hooked. Enjoy!

1 ½ cups wine cooler
¼ cup white sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease 6 jumbo muffin cups.
  • In a large mixing bowl, combine baking mix and sugar. Pour in wine cooler and mix well. Spoon batter into prepared muffin tins.
  • Bake in preheated oven until golden, about 15 minutes. Remove muffins from tin and place on cooling rack.

Easy gourmet flavored muffins - perfect for dinner parties or holiday buffets. For family meals, you can substitute apple juice with Cheddar cheese. This recipe is from my envelope of newspaper clippings.

2 cups baking mix (Bisquick)
2/3 cup white wine
2 tablespoons vegetable oil
1 egg
1 cup grated swiss cheese or 1 cup gruyere cheese (4oz)
2 teaspoons chopped fresh chives

Steps:

  • Preheat oven to 400°F.
  • In a medium bowl, combine baking mix, wine, oil and egg.
  • Using a fork, beat the mixture for 30 strokes.
  • Stir in the cheeses and chives.
  • Divide the mixture between 12 (2 1/2 x 1 3/4 inch).
  • muffin cups, greased or lined with paper cups.
  • Bake 15-20 minutes or until a toothpick inserted in the center comes out clean.

  • In a saucepan combine orange zest, cloves, cinnamon, sugar and red wine. Bring to a boil and simmer for 5 minutes stirring constantly. Remove from heat, allow to cool slightly (2 min.) and then add the 4 tbs of port wine. Remove the cinnamon stick and the cloves using a slotted spoon.
  • In a big bowl combine flour, baking powder, cookie crumbs, salt, additional spices (if using) and chopped chocolate.
  • In a second bowl combine cooled mulled wine, eggs, oil and yogurt. Add this to the dry ingredients and stir until just combined.
  • Pour into prepared muffin tins and bake in the preheated oven at 180°C/350°F for 20-25 minutes.
