Olive oil, for pan
1 cup bacon, cut into 1/4-inch dice
2 cloves garlic, smashed
Pinch crushed red pepper flakes
1 bunch Swiss chard, stems removed and cut into 1/2-inch lengths, leaves cut into 1 1/2-inch lengths
1/2 cup chicken or vegetable stock
Kosher salt

Steps:

  • Coat a large saute pan lightly with olive oil and add the diced bacon, garlic, and crushed red pepper. Bring the pan to medium-high heat. When the garlic has turned a lovely golden brown, remove from the pan and discard. At this point the bacon should start to become brown and crispy. Add the Swiss chard stems and the stock and cook until the stock has mostly evaporated. Add the Swiss chard leaves and saute until they are wilted. Season with salt.

Here's an easy, quick and savory recipe for Swiss chard from zany, excellent Chef Anne Burrell. It's one of my favorites! Chard is one of the super leafy greens packed with minerals and vitamins as well as a healthy dose of fiber. It tastes a lot like spinach with a slightly stronger taste, depending on the cooking method. Use regular olive oil, not virgin, for best flavor. Reduce the amount of bacon if desired.

olive oil, enough to lightly coat pan
1 cup bacon, diced
2 garlic cloves, smashed
1 pinch crushed red pepper flakes
1 bunch swiss chard, stems removed and cut into 1/2-inch lengths, leaves cut into 1 1/2-inch lengths
1/2 cup chicken or 1/2 cup vegetable stock
kosher salt, to taste

Steps:

2 1/2 pounds swiss chard
1 medium onion, chopped
3 cloves garlic, finely chopped
1/4 teaspoon crushed red pepper flakes
3 tablespoons cider vinegar, plus more to taste
Pinch freshly grated nutmeg
1 cup chicken stock
Kosher salt and freshly ground black pepper

Steps:

  • Fill a large bowl with cold water. Trim and discard the last 2 inches of the chard stems. Add leaves to water. (If the greens are very dirty wash them in several changes of water.) Lift the greens from the water, and put them in a colander to drain. Roughly chop the greens.
  • In a large Dutch oven or tall sided skillet over medium heat, cook the onion, garlic, red pepper flakes, cider vinegar and nutmeg for about 2 minutes. Add the greens in batches, stirring each batch as they wilt, before adding more. Add 1 cup chicken stock and cook, covered, stirring once or twice, until tender, about 10 minutes. Adjust the seasoning with vinegar, salt and pepper, to taste. Serve immediately.

A good old New England tradition. Skillet swiss chard sautéed with bacon and tomato. A hearty side dish to serve with your favorite grilled meat. Bacon or salt pork can be used or omitted to make a vegetarian dish.

1 bunch swiss chard, washed and rinsed
2 -3 slices bacon, rough chopped
1 onion, sliced
3 -4 garlic cloves, chopped
3 -4 tablespoons olive oil
red pepper flakes
2 ripe tomatoes, sliced
4 ounces chicken stock
salt and pepper
balsamic vinegar (optional)

Steps:

  • Wash and rinse chard.
  • Rough chop chard to 2-3 inches.
  • In a large skillet, add olive oil and chopped bacon.
  • Cook bacon till fat has rendered and crisp.
  • Add chard, onion and garlic. Cover.
  • Cook till wilted.
  • Add salt and red pepper flakes.
  • Uncover and as water steams off, add chicken stock, adding more as needed so pan does not burn.
  • Lower heat to medium low. Continue to simmer until chard stalks and onion are tender.
  • Add slices of tomato. Cook for another 3-5 minutes.
  • Dress with balsamic vinegar to taste.
  • Enjoy!

1/2 pound thick-sliced peppered bacon strips
2 pounds rainbow Swiss chard, chopped
1 cup orange juice
2 tablespoons butter
4 teaspoons grated orange zest
1/8 teaspoon salt

  • In a large cast-iron or other heavy skillet, cook bacon over medium heat until crisp; drain on paper towels. Discard all but 1 tablespoon of drippings. Cut bacon into small pieces., Add chard to drippings; cook and stir just until wilted, 5-6 minutes. Add remaining ingredients; cook 1-2 minutes, stirring occasionally. Top with bacon.

1/2 lb. Swiss chard, coarsely chopped
1 clove garlic, minced

Steps:

  • Heat oven to 375°F.
  • Cook bacon, chard and garlic in large ovenproof nonstick skillet on medium heat until bacon is crisp and chard is wilted, stirring occasionally.
  • Whisk eggs and dry mustard until blended; stir in tomatoes and 1/2 cup cheese. Add to ingredients in skillet; stir.

1 small bunch ruby Swiss chard
1 small bunch green Swiss chard
1 tablespoon olive oil
2 cloves garlic, peeled and thinly sliced lengthwise
Salt and freshly ground pepper

Steps:

  • Remove the stalks from the leaves: Hold the leaf in one hand, and gently pull out the thick stalk with the other. Cut the stalks into 2-inch-long pieces. Stack the leaves, and cut them crosswise into 4-inch-wide strips.
  • Heat the olive oil in a large skillet set over medium-low heat. Add the garlic, and cook just until golden. Remove and reserve the garlic. Add the stalks. Cook, stirring, 2 to 3 minutes to soften slightly. Add 3 tablespoons water, cover, and steam until firm but tender, 4 to 6 minutes.
  • Add leaves, cover, and cook until wilted, about 3 minutes. Sprinkle with the reserved garlic, and season with salt and pepper. Serve warm.

Mom would prepare this for us often when fresh chard from Dad's garden was plentiful. When I finally wrote down the recipe, Mom couldn't give me exact measurements, as all good cooks are guilty of. I think this recipe is based on traditional Mennonite/Pennsylania Dutch fare, since my Dad was from that region. A blast from the past!

1 lb chard leaves, chopped coarsely (can substitute kale, spinach or other greens such as mustard or turnip)
2 -3 slices bacon
1/4 cup white vinegar
1 tablespoon white sugar

Steps:

  • Rinse and drain well the chard to remove grit. Cut away stems and discard.
  • Fry up bacon slices until crisp. Transfer to paper towel and drain. Let cool, then crumble. Set aside. Reserve bacon fat.
  • On medium-high heat in frying pan, add the vinegar and sugar to the bacon fat and bring to boil. Boil for about 30 seconds. Make sure not to burn; reducing heat if necessary.
  • Reduce heat to medium, add the chopped chard and sautè 2-3 minutes until slightly wilted but not slimy.
  • Add the crumbled bacon. Stir well to coat with the bacon dressing. Transfer to platter and serve warm.
