2 (8 ounce) cans chicken broth (low sodium)
1 cup wild rice (250 mL)
4 slices bacon, diced
1 tablespoon butter, unsalted (15 mL)
1 1/2 cups diced onions (375 mL)
3/4 cup diced celery (175 mL)
1 1/2 cups sliced button mushrooms (375 mL)
2 cloves fresh minced garlic
1 teaspoon fresh minced thyme (5 mL)
1/4 teaspoon salt (1 mL)
1/4 teaspoon ground black pepper (1 mL)
2 tablespoons chopped fresh parsley (25 mL)
1 cup hazelnuts, toasted and coarsely chopped (250 mL)
1 1/2 cups california grapes (375 mL)

Steps:

  • In heavy saucepan, bring chicken broth to a boil. Add wild rice and stir. Cover pan and reduce heat to low. Let simmer for one hour, until rice is tender and has "popped" open.
  • Meanwhile, cook bacon in fry pan over medium heat until almost crisp, about 8-10 minutes.
  • Add butter to bacon pan, and then add onions, celery, mushrooms, garlic, thyme, salt and pepper. Cook over medium heat for 5-7 minutes, until onions are translucent.
  • Remove from heat and fold in parsley, hazelnuts and grapes.
  • Add rice with any remaining liquid in pan, to vegetable mixture and toss well to combine.
  • Stuffing may be used to fill turkey, game hens, chicken or whatever you choose. Stuffing may also be baked separately in a casserole dish covered with foil. Bake at 350°F (180°C) degrees for 20-30 minutes until hot throughout.
  • Notes: If you make ahead and refrigerate, cook time will be 30-40 minutes until hot.
  • To toast hazelnuts, place in 350°F (180°C) degree oven for 9-12 minutes. Rub in a clean dishtowel to remove skins.

This wild rice stuffing recipe is an unexpected addition to your Thanksgiving meal. It's delicious alongside a roast turkey.

1/2 cup slivered almonds
5 tablespoons olive oil
2 medium onions, coarsely chopped
4 celery ribs, chopped into 1/2-inch pieces
5 large cloves garlic, finely minced
2 tablespoons finely chopped fresh rosemary
2 tablespoons finely chopped fresh sage
Salt and freshly ground pepper
1/4 cup coarsely chopped fresh flat-leaf parsley
8 ounces sweet fennel sausage, casings removed
2 Granny Smith apples, peeled, cored, and cut into 1/2-inch dice
1/2 cup Calvados, or white wine
6 cups cooked wild rice
4 cups cooked white rice
20 dried apricot halves, quartered
12 dried pitted prunes, halved
Unsalted butter, for baking dish

Steps:

  • Heat oven to 375 degrees. Spread almonds on a baking pan, and toast until golden, 5 to 7 minutes. Remove pan from oven, and set almonds aside to cool.
  • Heat 3 tablespoons olive oil in a large saute pan set over medium heat. Add onion, celery, and garlic. Cook, stirring occasionally, until tender, about 7 minutes.
  • Increase heat to high, and add rosemary and sage; season with salt and pepper. Continue cooking until vegetables are golden, 2 to 3 minutes. Remove pan from heat; stir in parsley. Transfer vegetables to a large bowl, and set aside. Return pan to heat.
  • Crumble sausage, separating meat. Add 1 tablespoon olive oil to saute pan. Add sausage, and cook, stirring and breaking up meat until well browned, 2 1/2 to 3 minutes. Transfer sausage to bowl with reserved vegetables. Return pan to heat.
  • Add remaining tablespoon olive oil to pan. Add apple, and cook, stirring occasionally, until browned, 2 to 3 minutes. Add Calvados. Using a wooden spoon, scrape up any brown bits on bottom of pan. Cook until most of the liquid has evaporated, about 1 minute.
  • Remove pan from heat, and transfer mixture to bowl with sausage and vegetables. Add wild and white rice, apricots, prunes, and reserved toasted almonds. Season with salt and pepper. Transfer to a buttered baking dish and bake at 375 degrees until browned and heated through.

GRAPES AND WILD RICE STUFFING

1/2 cup (125ml) water
1/2 cup (120g) brown rice
1/2 cup (120g) wild rice
1/2 cup (50g) each chopped onion, celery and apple
1 tbsp (14g) butter or margarine
1 tsp (1g) minced fresh sage
1/4 tsp (1g) pepper
1 cups (336g) California seedless red grapes
1 salt

Steps:

  • Bring broth and water to boil; add brown and wild rice. Bring to boil, reduce heat, cover and simmer 45 to 55 minutes or until rice is tender and liquid is absorbed.
  • Sauté onion, celery and apples in butter; add sage and pepper. Add prepared rice and grapes; mix well. Adjust seasoning with salt if necessary. Place in one-quart covered baking dish and bake at 350⁰F for 20 minutes or until thoroughly heated.
  • Serving suggestion: Serve with roasted poultry or meats, or add half cup each diced Anaheim chilies and corn to onion mixture and sauté. Continue preparation according to directions above. Serve in warm flour tortillas.

6 tablespoons butter, 3/4 of a stick
1 cup shallot, chopped, about 4 large
1 cup celery, chopped, about 3 stalks
2 cups wild rice, about 12 oz
4 1/2 cups low sodium chicken broth, may need more
1 tablespoon dried thyme
1/2 teaspoon coarse kosher salt
1 cup long grain brown rice
1 1/2 cups red seedless grapes, about 8 oz
1 1/2 cups green seedless grapes, about 8 oz
2 tablespoons olive oil
1 1/2 teaspoons balsamic vinegar
1 1/2 cups walnuts, toasted, chopped
1 tablespoon orange peel, finely grated

Steps:

  • Melt butter in a heavy large saucepan over medium heat.
  • Add shallots and celery and cook until soft, stirring frequently, about 8 minutes.
  • Add wild rice, 4 1/2 cups of broth, thyme, and the salt and bring to a simmer; cover, reduce heat to medium-low and simmer until rice is tender but firm, adding more broth by 1/4 cupfuls if dry, about 40 minutes longer.
  • This can be made a day ahead. Cool slightly; cover and chill.
  • Rewarm over medium-low heat before using, adding more broth by 1/4 cupfuls if necessary.
  • Meanwhile, preheat oven to 350 degrees F.
  • Place grapes on rimmed baking sheet/pan and drizzle with oil; toss and roast grapes until they begin to wrinkle, about 15 minutes.
  • Transfer to a bowl and toss with the balsamic vinegar.
  • This part can be made up until 4 hours ahead and let stand at room temperature.
  • Add the grapes and any juices, the walnuts, and orange peel to the rice; toss well.
  • Season to taste with salt and pepper.

Steps:

  • Melt 1/2 cup butter in heavy large pot over medium-high heat. Add onions and garlic and sauté until tender, about 4 minutes. Add chicken broth. Bring to boil. Add wild rice. Reduce heat to medium-low. Cover and simmer 30 minutes. Mix in brown rice; cover and simmer until rice is just tender and most liquid is absorbed, about 30 minutes longer.
  • Stir cranberries, parsley and thyme into rice. Cover and cook until liquid is absorbed, about 5 minutes longer. Mix in hazelnuts and green onions. Season generously with salt and pepper.
  • To bake stuffing in turkey:
  • Loosely fill main cavity with stuffing. Butter ceramic baking dish. Spoon remaining stuffing into prepared dish. Cover with buttered foil, buttered side down. Bake stuffing in dish alongside turkey until heated through, about 30 minutes.
  • To bake all of stuffing in baking dish:
  • Preheat oven to 350°F. Butter 15x10x2-inch glass or ceramic baking dish. Transfer stuffing to prepared dish. Cover dish with buttered foil, buttered side down; bake stuffing until heated through, about 40 minutes.
