Even family and friends who aren't fond of wild rice rave about these golden muffins flecked with colorful blueberries and cranberries. They're a terrific take-along treat.

Yield 16 muffins.

Number Of Ingredients 10

2 cups all-purpose flour
1/2 cup sugar
3 teaspoons baking powder
1/2 teaspoon salt
2 eggs
3/4 cup buttermilk
1/4 cup butter, melted
1 cup cooked wild rice
1/2 cup fresh or frozen blueberries
1/2 cup fresh or frozen cranberries

Steps:

  • In a large bowl, combine the flour, sugar, baking powder and salt. In another bowl, whisk the eggs, buttermilk and butter. Stir in dry ingredients just until moistened. Fold in the rice, blueberries and cranberries. , Fill greased or paper-lined muffin cups two-thirds full. Bake at 375° for 20-25 minutes or until a toothpick inserted in the center comes out clean. Cool for 5 minutes before removing from pans to wire racks. Serve warm.

3/4 cup fat-free (skim) milk
1/4 cup canola or soybean oil
1/4 cup fat-free cholesterol-free egg product, 2 egg whites or 1 egg
1 cup Gold Medal™ all-purpose flour
1/2 cup sugar
1/2 cup whole-grain yellow cornmeal
2 1/2 teaspoons baking powder
1/4 teaspoon salt
3/4 cup cooked wild rice
1/2 cup chopped fresh or frozen cranberries

Steps:

  • Heat oven to 400°. Spray 12 medium muffin cups, 2 1/2x1 1/4 inches, with cooking spray, or line with paper baking cups. Mix milk, oil and egg product in large bowl.
  • Stir in flour, sugar, cornmeal, baking powder and salt all at once just until flour is moistened. Fold in wild rice and cranberries. Divide batter evenly among muffin cups.
  • Bake 20 to 25 minutes or until golden brown. Immediately remove from pan. Serve warm.

3 tablespoons sugar

1/2 toasted hazelnuts, chopped
1 large egg
1/4 cup butter, melted
1 cup low-fat milk

Steps:

  • Preheat oven to 425F and prep. muffin pan with 12 paper liners.
  • In a large bowl combine the first 4 ingredients.
  • In a medium bowl, beat the egg lightly then stir in the melted butter and milk. Add to the dry mix all at once and stir until just blended.
  • Fill muffin cups 2/3 full and bake 20-25 minutes (or until brown).

3/4 c wild rice
1/2 c hazelnuts
1 stick unsalted butter, melted
2 large eggs, lightly beaten
3 T sugar
1 onion, finely chopped
1 c all-purpose flour
1 t b.p.
1 t kosher salt

Steps:

  • 1. In a medium saucepan, cover the rice with 1 inch of water. Cover and simmer over moderately low heat until tender, about 20 minutes. Drain and cool. 2. Preheat oven to 400. Butter a 12-cup muffin pan. In a pie plate, toast the nuts 10 min, until the skins blister. Rub off skins in a kitchen towel, and finely chop nuts. Raise oven to 425. 3. In medium bowl, beat melted butter, eggs, and sugar. Stir in the cooked rice, the onion, and the nuts. 4. In another bowl, sift together flour, b.p., and salt. Stir dry ingredients into wet just intil incorporated. 5. Fill muffin cups 2/3 full. Bake at 425 for about 20 minutes, until golden brown. Let cool in pan 2 min, turn onto rack. Muffins can be frozen 1 month.

WILD RICE, APPLE AND HAZELNUT STUFFING

I made this last year for Thanksgiving and it was a hit! Fresh sage and tart apples make this a little different and definitely give it a harvest taste.I substituted walnuts for the hazelnuts. Leaving the peel on the apple gives the stuffing some more color.

1/4 cup wild rice, uncooked
4 cups bread or 4 cups stuffing cubes
2 tablespoons butter or 2 tablespoons vegetable oil
1/2 large onion, diced (about 1 cup)
2 stalks celery, diced
1 medium carrot, diced
1 large granny smith apple, cored and diced
2 cups vegetable stock
1/2 teaspoon cracked black pepper
1 teaspoon dried thyme
2 tablespoons fresh sage, chopped
1 teaspoon salt
1/4 cup nuts, chopped (hazelnuts, walnuts or pecans)

Steps:

  • In a small saucepan, cook wild rice with 1 cup of water.
  • Preheat oven to 400°F.
  • Heat butter or oil in a large pan. Saute onion, celery and carrot over medium heat until tender.
  • Add apples, stock, black pepper, herbs and salt and bring to a simmer.
  • Take pan off heat and stir in bread crumbs and wild rice.
  • Scrape stuffing into a 2 quart casserole and top with chopped nuts, pressing mixture down.
  • Bake, uncovered, for 20 minutes or until top is golden brown.

3/4 cup dried cherries or 3/4 cup dried cranberries
2/3 cup tawny port or 2/3 cup ruby port
3 cups wild rice, well rinsed
4 tablespoons unsalted butter
3 medium leeks, cleaned and sliced (white part only)
1 lb mixed wild mushroom, sliced (cremini, shiitakes, and chanterelles)
1 tablespoon poultry seasoning (Homemade Poultry Seasoning)
1 cup hazelnuts, toasted and skinned and chopped
1/4 cup chopped fresh parsley
1 1/2 teaspoons salt
1/2 teaspoon fresh ground black pepper
1/2 cup turkey broth (optional) or 1/2 cup chicken broth (optional)

Steps:

  • Add the dried cherries to a small bowl and add in the port wine; let stand while making the stuffing.
  • Bring a big pot of lightly salted water to a boil over high heat; add in the wild rice; decrease heat to medium.
  • Boil uncovered until the rice is barely tender (some of the grains may have burst), about 45 minutes.
  • Drain the rice into a sieve and rinse under cold water until cooled; drain well and place in a large bowl.
  • In a very large skillet or flameproof casserole, melt 2 tablespoons of butter over medium heat.
  • Add in the leeks and cook/stir often, until tender, about 5 minutes; add to the wild rice.
  • In the same skillet, melt the remaining 2 tablespoons butter; add in the mushrooms and cook over med-high heat, stirring occasionally, until the mushrooms give off their juices, about 5 minutes.
  • Add in the port with cherries and the poultry seasoning and boil until the liquid is reduced to about 1/2 cup, 6-8 minutes.
  • Stir the mushrooms and port into the bowl of wild rice; add in the hazelnuts, parsley, salt, and pepper; mix well.
  • Transfer to a lightly buttered casserole, drizzle with broth, cover, and bake in preheated 350° oven until heated, about 30 minutes (for crustier stuffing, remove cover for last 15 minutes of cook time).

1 1/2 cups self-raising flour
1/2 cup ground hazelnuts
1/2 cup chocolate chips
1 tablespoon orange rind, finely grated
1/2 cup brown sugar
2 teaspoons baking powder
1/2 teaspoon bicarbonate of soda
1/2 cup grapeseed oil or 1/2 cup olive oil
2 whole eggs, beaten (for even less cholesterol) or 3 egg whites (for even less cholesterol)
1 cup freshly squeezed orange juice
1/3 cup soymilk or 1/3 cup plain yogurt
1/3 cup orange marmalade (optional)

Steps:

  • Preheat oven to 180°C.
  • Lightly spray muffin tray with olive oil spray or line with paper muffin cases.
  • Sift flour, bicarb soda and baking powder together in large mixing bowl, and stir in ground hazelnuts, brown sugar, grated rind and choc bits.
  • In another bowl, whisk together eggs, oil, juice and milk.
  • Pour liquid ingredients into dry ingredients and mix very lightly till just combined.
  • Bake for approx 20 minutes or until lightly golden.
  • Cool on wire rack.
  • Optional: Brush tops of still-warm muffins with marmalade, and allow to cool.

Steps:

  • In saucepan, cook wild rice until done, about 45 minutes. Drain and let cool.
  • Preheat oven to 425.
  • In large bowl, combine dry ingredients.
  • In blender process flax seeds and 1/3 cup water until thickened and frothy. Add sugar and oil and process until well blended.
  • Add the flax mixture to the flour mixture and stir until just blended. Stir in rice, onions and hazelnuts.
  • Divide batter into muffin cups. Bake 19-22 minutes.
