WILD BRAMBLEBERRY COBBLER
We have wild berries, like a small blackberry, all over our N. FL property and know when we see the white flowers hard picking and good eating will happen in about 4-6 weeks, depending on weather. Long sleeves and heavy pants required no matter the weather to pick and your hands will be battle scared but so worth it for a dish of this with vanilla ice cream melting on top. A Spring, early Summer treat we look forward to all year. You can use blackberries to make. If you home grind your flour, hard or soft white wheat works great.

Steps:
- Add 3/4 cup sugar, corn starch into pan and mix together then add berries and lemon juice. Cook over medium high heat, stirring constantly till boils and thickens , stir 1 minute more. Pour into 2 qt casserole dish, ungreased.
- Mix together cup flour, 1 tbsp sugar, baking powder, spices and salt, then cut in shortening till resembles fine crumbs. Add milk and stir, will be somewhat thick. Drop by spoonfuls onto top of friut mixture.
- Bake at 375, for 25-30 minutes till brown and bubbly.
- Great hot, reheats well.

WILD BLUEBERRY COBBLER
Taking advantage of sweet seasonal fruit, Wild Blueberry Cobbler is the perfect finish to a summer meal or a magical summer throwback when the snow flies. It's always popular at our house!

- Pre-heat oven to 350°F (175°C). Spray a 9 x 6 baking dish OR a large castiron pan well with non-stick spray. In a large mixing bowl add washed blueberries, sugar, lemon zest, nutmeg, and all-purpose flour, and toss to coat and reserve.
- p id="instruction-step-2″>2. Make your cobbler topping. In a large bowl first, combine sugar and lemon zest and mix. Then add dry ingredients (flours, sugar, baking soda & salt ) along with lemon sugar and whisk to combine. Grate the cold butter into the flour mixture and then rub with fingertips to combine to a peameal consistency. Add heavy cream and mix with a spatula until a dough begins to form, then kneed by hand to combine (just a couple of times) being careful not to overwork the dough. Dust counter lightly with all-purpose flour, turn the dough out onto the floured surface and press into a round, flat disk about 3/4 of an inch thick. Using a sharp, well-floured round cookie or biscuit cutter, cut dough into even circles between 11/2 - 2 inches in diameter.
- p id="instruction-step-3″>3. Now assemble: pour all of the berry filling mixture, including sugar & flour at the bottom of the bowl, into your waiting pan and ensure it's relatively even. Gently place biscuits on top of fruit filling, allowing about a half-inch between around for the biscuits to expand. Brush the tops of the cobbler biscuit dough with melted butter then sprinkle generously with coarse sugar and lightly dust with nutmeg or cinnamon. Bake at 350°F (175°C) 30 - 40 minutes or until biscuits are cooked and fluffy, their tops golden brown, and fruit juices are bubbling through the cracks. Remove from oven and let stand for 20 - 30 minutes before serving. Ice cream, frozen or fresh yogurt, and whipped cream all make terrific toppings for your Wild Blueberry Cobbler, but I like it straight up!
DEWBERRY COBBLER
Dewberries are closely related to the blackberry and the raspberry, and they could be found growing wild where I grew up. We used to eat them in preserves, pies, or just frozen. If you don't know what dewberries are (you don't know what you're missing), you can substitute blackberries, raspberries, loganberries, or boysenberries.

- Fruit: Combine all ingredients.
- Mix well, spread in greased 9 inch square cake pan or baking dish.
- Topping: combine flour splenda, baking powder and salt in mixing bowl.
- Cut in butter with pastry blender until mixture is crumbly.
- Add milk, stirring until moistened.
- Drop by spoonfuls of batter over fruit, spreading lightly to cover surface.
- Place pan on piece of foil to catch any drips that boil over.
- Bake at 400f degrees for 25 to 30 minutes, or until top is golden.

BLACKBERRY COBBLER (QUICK AND EASY)
I have a sweet tooth and memories of picking wild blackberries in the summer so mom could make this. Don't forget the vanilla ice cream on top of the warm cobbler! And ANYONE can do this recipe! It is so simple and if you have the berries and stuff on hand it's a great last minute drop in dinner quest dessert!

BOYSENBERRY COBBLER
My grandparents had what seemed like a mile of boysenberries vines, and I never minded the scratches from picking them 'cause they were so good. One of my favorite memories is the summer my granddaddy wrote Girls'nBerries on each jar we canned. This isn't my grandmother's special recipe I learned as a child, but it's nice since it uses canned berries...fresh boysenberries are so hard to come by anymore. Adapted from a recipe I saw on Mom's Cooking. By the way, I have halved the recipe in a smaller pan and it worked out fine.

- Preheat oven to 425 degrees.
- Whisk together dry ingredients, then add milk and whisk until there are no lumps.
- Melt butter in a large cast iron skillet over medium high heat. Pour batter into pan but don't stir it.
- Add all the juice from the 2 cans of boysenberries and 1 1/2 cans of the berries. Don't stir, but do move the berries slightly out from the center with a spoon.
- Cook for 40 minutes or until done.
- Use remaining berries as a garnish.

- Preheat oven to 350 degrees. Combine Maine wild blueberries, 3/4 cup white sugar, water, and lemon rind in a baking dish. Bring to boil and simmer for 2 minutes. Meanwhile, combine reserved 1/4 cup white sugar with brown sugar, flour baking powder, and cinnamon. Cut in butter until mixture is crumbly. Sprinkle crumbs over blueberry mixture. WILD BLUEBERRY COBBLER

- Set oven to 350 degrees.
- Butter a 13 x 9-inch baking dish.
- In a large bowl combine blueberries, orange zest, the juice of one orange, 3/4 cup sugar, cornstarch, cinnamon and ginger (if using) toss to combine.
- Pour the mixture into the prepared baking dish.
- Place the dish on a baking sheet to catch and spills.
- Bake for 20 minutes.
- While the blueberries are baking, prepare the cobbler topping.
- In a small bowl mix together 1/4 cup sugar with 1/2 teaspoon cinnamon; set aside.
- In a food processor combine flour, salt, baking powder, baking soda and 3 tablespoons sugar; pulse to combine.
- Add in the cold butter and cold shortening; pulse to combine until the mixture forms crumbs; dump the mixture into a bowl.
- Add in the buttermilk; mix JUST until combined.
- When the blueberry mixture is cooked for 20 minutes, remove and sprinkle about 4-inch portions of the cobbler over the berry mixture.
- Sprinkle 1/4 cup sugar/cinnamon mixture over the cobbler dough.
- Return to the oven to bake for about 30 minutes, or until the dough is golden brown and the top is baked.
BLUEBERRY DUMPLINGS
One of my childhood memories is picking wild blueberries with my siblings when our family went camping in northern Ontario - then my mother would make blueberry dumplings for us! This recipe from Jim Dodge, Food & Beverage Manager at the Getty Center in L.A., is much better - sorry mom! Wild blueberries are best - but cultivated or frozen blueberries or even Saskatoons will work. Top with creme fraiche or whipped cream.

- Filling: Adjust oven rack to the lowest level and preheat oven to 350°F.
- Wash the berries in a bowl of cold water, remove any leaves or stems and drain well.
- In a 2 ½ to 3 quart casserole with a tight fitting lid, stir together the sugar and water until the sugar dissolves.
- Add the berries and cover with the lid.
- Bake on the lower rack for about 30 minutes or until the filling gives off a little steam.
- While the filling is baking, begin preparing the batter so that you are able to make the dumplings quickly.
- Dumplings: In a medium size bowl blend together the flour, baking powder and salt.
- Pour the milk into a small saucepan.
- Cut the butter into small pieces and add to the milk.
- Warm over moderate heat until the milk is warm and the butter is almost completely melted.
- Turn off the heat and leave the mixture in the saucepan on the burner so that the milk stays warm and butter stays melted.
- Get ready in your workspace: a fork to mix with and two large oval soupspoons to form the dumplings.
- When the blueberry filling is ready, remove the casserole from the oven, but do not remove the lid.
- With a fork, stir the milk mixture into the flour only until the milk has been absorbed.
- The batter should look lumpy and under mixed.
- Remove the lid from the top of the casserole and keep it close by.
- Drop large spoonfuls of the batter on top of the blueberry mixture forming first a circle and then filling in the center of the circle.
- The dumplings will sink a little.
- Return the lid to the top and place back into the oven.
- Continue cooking for 15 minutes.
- Do not remove the lid until this baking time has elapsed.
- Remove from the oven and place on a rack.
- Remove the lid and let cool for 15 minutes before serving.
- Whip the crème fraîche (or whipping cream) until thickened.
- To serve, spoon into deep bowls and top with a dollop of cream fraîche or whipping cream.
