Layers of flaky puff pastry show off the berries in a sherbet-topped shortcake.

1/3 cup sugar
2 teaspoons cornstarch
1/3 cup water
2 cups fresh or frozen blueberries
1 tablespoon lemon juice
2 cups raspberries
1 sheet frozen puff pastry (from 17.3-ounce package)
1 pint (2 cups) lemon sherbet or sorbet

Steps:

  • In 1 1/2-quart saucepan, stir sugar, cornstarch and water until smooth. Add 1 cup of the blueberries. Heat to boiling; reduce heat. Simmer uncovered 5 minutes, stirring occasionally. Stir in lemon juice. Cool 15 minutes. Stir in remaining blueberries and the raspberries. Cover and refrigerate at least 1 hour but no longer than 24 hours.
  • Heat oven to 400°F. Let frozen pastry sheet stand at room temperature 15 minutes. Cut pastry into 8 pieces. Place pieces on ungreased cookie sheet. Bake about 15 minutes or until puffed and golden brown. Remove from cookie sheet to wire rack; cool slightly. Split into 2 layers while warm.
  • To serve, place puff pastry on individual serving plates. Fill and top with sauce. Top with small scoop of sherbet.

2 cups raspberries, green parts trimmed off, berries cut into chunks
2 tablespoons sugar
1 1/2 cups flour
3/4 teaspoon salt
4 teaspoons baking powder
1/2 teaspoon freshly grated lemon zest
1 cup heavy cream, whipped
1 cup sour cream
1/4 cup light brown sugar, packed

Steps:

  • In a bowl, toss the raspberries with 1 tablespoon of the sugar and refrigerate until ready to serve.
  • Preheat the oven to 400 degrees F. In a mixer fitted with a paddle attachment, mix the flour, salt, the remaining 1 tablespoon of sugar, baking powder, and lemon zest. Mix in the whipped cream until the mixture is moistened and just forms a ball. Turn out onto a lightly floured work surface and knead briefly just to bring the dough together.
  • Form the dough into a log then use a rolling pin to roll it out into a long rectangle about 1-inch thick and 3 inches wide. Making diagonal strokes with a sharp knife, cut into 4 or 6 large triangular biscuits. Arrange on a sheet pan and bake until golden brown, about 20 minutes. Let cool on a wire rack.
  • When ready to serve, split the biscuits in half horizontally. Place the bottoms on serving plates. On each, place a spoonful of raspberries with the syrup that has collected in the bowl, a dollop of sour cream, and a sprinkling of brown sugar. Place the top halves of the biscuits on top. Serve immediately.

2 1/2 cups all-purpose flour (spooned and leveled)
1/2 cup granulated sugar
1 tablespoon baking powder
1/2 teaspoon fine salt
1 stick cold unsalted butter, cut into small pieces
3/4 cup cold heavy cream
1/4 cup buttermilk
1 cup raspberries
Sanding sugar (optional)
Whipped cream and berries, for serving

Steps:

  • In a food processor, combine flour, granulated sugar, baking powder, salt, and butter and process until mixture resembles coarse meal, with a few pea-size pieces of butter remaining. Transfer to a bowl and stir in cream, buttermilk, and raspberries until just combined. Do not overmix.
  • Preheat oven to 400 degrees. Divide dough into 8 portions and shape into rounds. Place, 1 1/2 inches apart, on a parchment-lined baking sheet. Sprinkle with sanding sugar, if desired, and freeze 15 minutes. Bake until golden brown and set, about 20 minutes. Let cool completely on sheet on a wire rack. To serve, halve and fill with whipped cream and berries.

2 teaspoons all-purpose flour
1/8 teaspoon ground cinnamon
1 cup plus 2 tablespoons reduced-fat biscuit/baking mix
1/3 cup fat-free milk
1 cup fresh or frozen blueberries

Steps:

  • In a small bowl, combine 2 tablespoons sugar, flour and cinnamon; set aside. In another bowl, combine the biscuit mix, milk and remaining sugar. , Spread half of the batter into a 1-qt. baking dish coated with cooking spray; top with half of the blueberries and half of the reserved sugar mixture. Repeat layers. , Bake at 350° for 25-30 minutes or until a toothpick inserted in the center comes out clean. Serve warm if desired, or cool on a wire rack.

2 c sliced fresh strawberries
2 c fresh blueberries
1/2 c sugar
2-1/3 c bisquick biscuit mix
2/3 c milk
3 Tbsp sugar
3 Tbsp butter, melted
1 pkg (8 oz.) frozen whipped topping, thawed

Steps:

  • 1. Mix strawberries, blueberries and 1/2 cup sugar in a medium bowl; set aside.
  • 2. In a large bowl, stir Bisquick mix, milk, 3 Tbsp. sugar and the melted butter until soft dough forms. Drop by 6 spoonfuls onto an ungreased cookie sheet.
  • 3. Bake in a preheated 425º oven for 10-12 minutes or until golden brown. Split warm shortcakes horizontally; fill and top with berries and whipped topping.

2 1/4 cups cake-and-pastry flour
3 tablespoons sugar
1 tablespoon baking powder
1/2 teaspoon salt
1/3 cup cold butter, cubed
1/2 cup dried blueberries or 1/2 cup currants
3/4 cup milk
2 teaspoons brown sugar
1 cup whipping cream
2 cups blueberries, sweetened to taste

Steps:

  • Combine flour, sugar, baking powder and salt.
  • Using a pastry blender or two knives, cut butter into dry mixture until crumbly.
  • Stir in dried berries.
  • Make a well in the dry ingredients, add milk and stir with a fork until dough is soft and sticky.
  • Turn dough out onto a lightly floured surface.
  • Using floured hands, gently pat dough into a 3/4 inch thick circle.
  • Using a 2 1/2 inch cookie cutter, cut out short cakes.
  • Press scraps together and cut out more rounds.
  • Place on a buttered baking sheet.
  • Sprinkle tops evenly with brown sugar.
  • Bake in 400°F oven for 12 to 15 minutes or until well risen, broil for 45 seconds or until golden.
  • Cool on rack.
  • Whip cream until thick.
  • Fold in berries.
  • Cut shortcakes in half, crosswise and fill with cream and berries OR Leave out the dried berries and use strawberries, or blackberries, or raspberries with the cream to fill.

A delicious shortbread topped with jam and coconut! From an old Country Womans Association cookbook in Australia. In imperial measures as this was well before metric arrived!

4 ounces butter
1 1/2 cups self raising flour
1 1/2 cups desiccated unsweetened coconut
2 cups sugar
2 eggs
1 tablespoon raspberry jam

Steps:

  • Line a roasting dish with foil, leaving enough room at either end so you can immediately lift it out.
  • Beat butter and half of the sugar to a cream. Add 1 beaten egg; mix well, then add the flour. Knead well and cover the base of the pan with the shortbread. It is easy to take small pieces and flatten in your hand first. Spread thinly with raspberry jam.
  • Mix the remaining sugar with 1 egg, adding the coconut mix together well. Carefully add all over the top, using a fork to cover properly. Bake at 150°C (300°F) for about 30 minutes. Coconut should be nicely browned.
  • Lift out the shortbread as soon as its cooked - using the extra foil on both sides of the roasting dish, place on a cutting board then cut into squares immediately and leave to cool.
  • PLEASE NOTE: Don't use sweetened coconut as the sugar in it melts and the syrup from it dilutes the base.

Found this amazing recipe in a magazine at the dentist and scrawled it on a scrap of paper. On the way home, I stopped by the market to get necessary ingredients and made it for dinner that evening. Incredible. I am sure any combination of berries would be wonderful. I am a mascarpone cheese convert--it is a softer, more delicate flavor than cream cheese and perfect in this recipe. Hope you enjoy! (Prep time includes 1 hour fruit sits in refrigerator).

Steps:

  • In small bowl, stir together berries, sugar, and lemon juice.
  • Let sit 30 minutes to an hour.
  • Near serving time, whip 1/2 cup of the heavy cream until soft peaks form.Mix in 2 tablespoons confectioners' sugar.
