No one will guess that this rich, elegant dessert is made with only 2 ingredients-white chocolate and whipping cream.

1-1/2 pkg. (4 oz. each) BAKER'S White Chocolate (6 oz.), broken into pieces
1-1/2 cups whipping cream, divided

Steps:

  • Microwave chocolate and 1/4 cup cream in large microwaveable bowl on HIGH 2 min. or until chocolate is almost melted, stirring after 1 min. Stir until chocolate is completely melted. Cool 20 min. or until at room temperature, stirring occasionally.
  • Beat remaining cream in medium bowl with mixer until soft peaks form. (Do not overbeat.) Add half the whipped cream to chocolate mixture; stir with whisk until well blended. Stir in remaining whipped cream. Spoon into 6 dessert dishes.
  • Refrigerate 2 hours

Filling
3 cups fresh blueberries
6 tablespoons fresh lemon juice
3 tablespoons sugar
1 tablespoon water
1 teaspoon unflavored gelatin
1 cup chilled whipping cream
4 ounce good-quality white chocolate (such as Lindt or Baker's), finely chopped
White chocolate, shavings
Crust
(Makes one 9-inch crust)
1 1/4 cups all purpose flour
1/3 cup powdered sugar
1/2 teaspoon salt
10 tablespoons (1 1/4 sticks) chilled unsalted butter, cut into pieces
2 large egg yolks
1 tablespoon cold water

Steps:

  • For Mousse:
  • Preheat 350°F. Roll out tart crust dough on floured work surface to 13-inch round. Transfer to 9-inch-diameter tart pan with removable bottom, pressing into place. Trim dough overhang to 1/2 inch. Fold overhang in; press firmly, forming double-thick-sides. Freeze 15 minutes.
  • Line crust with foil. Fill with dried beans or pie weights. Bake until sides are set, about 15 minutes. Remove foil and beans, Bake until crust is golden brown and baked through, piercing with fork if crust bubbles, about 18 minutes. Transfer pan to rack; cool crust completely.
  • Finely chop 1/2 cup blueberries in processor. Transfer to heavy medium saucepan. Add 3 tablespoons lemon juice and sugar and stir over medium heat until mixture boils and thickens slightly, about 3 minutes. Remove from heat. Stir in remaining 2 1/2 cups blueberries. Cool.
  • Combine 1 tablespoon water and 3 tablespoons lemon juice in heavy small saucepan. Sprinkle gelatin over. Let stand 10 minutes to soften. Stir over low heat just until gelatin dissolves. Set aside. Bring 1/4 cup cream to simmer in heavy medium saucepan. Remove from heat. Add white chocolate and stir until smooth. Whisk in gelatin mixture. Refrigerate until just cool and beginning to thicken slightly, stirring often, about 10 minutes.
  • Beat remaining 3/4-cup cream in medium bowl until stiff peaks form. Gently fold into white chocolate mixture. Spoon mousse into curst; smooth top. Refrigerate until set, about 2 hours.
  • Spoon blueberry mixture over white chocolate mousse, covering completely. refrigerate until cold, about 1 hour. (Can be made 1 day ahead. Keep refrigerated.)
  • Remove tart from pan. Transfer tart to platter. Sprinkle with white chocolate shavings. Cut into wedges and serve.
  • For Crust:
  • Mix flour, powdered sugar and salt in processor. Add butter; process until mixture resembles coarse meal. Mix egg yolks and water in small bowl. Add to flour mixture and process until moist clumps form.
  • Gather dough into ball; flatten into disk for round tart or into square for rectangular tart. Wrap in plastic and refrigerate 1 hour. (Can be prepared 3 days ahead. Keep refrigerated. Let dough soften briefly at room temperature before rolling out.)

7 sheets silver-strength gelatin, bloomed in ice water for 5 to 10 minutes
210 grams sweetened condensed milk
Red gel paste, as needed
35 grams granulated sugar
3.5 grams pectin NH
50 grams glucose
250 grams blueberry puree
95 grams granulated sugar
25 grams water
95 grams egg yolks
450 grams whipped heavy cream
400 grams white chocolate
100 grams unsalted butter, at room temperature
70 grams granulated sugar
50 grams hazelnut flour
0.5 grams cinnamon
20 grams eggs
150 grams cake flour
417 grams macaroon coconut
333 grams confectioners' sugar
200 grams almond flour
33.3 grams all-purpose flour
500 grams egg whites, at room temperature
83.3 grams granulated sugar
6 ounces granulated sugar
10 ounces water
12 ounces prickly pear puree
4 ounces pear puree
2 cups raspberries
1/4 cup granulated sugar, plus more if needed
12 gold petals, for topping

Steps:

  • For the glaze: Combine the water, glucose and sugar in a small pot and bring to a boil. Put the white chocolate in a heatproof bowl and pour the hot sugar mixture over the chocolate. Allow it to sit a minute, then emulsify with a whisk. Add the gelatin and sweetened condensed milk and stir to combine. Color to the desired shade of red with the red gel paste. Hold at 86 degrees F.
  • For the gelee: Combine the sugar and pectin in a small bowl. Add the glucose to the blueberry puree and warm in a small pot. Add the sugar/pectin mixture to the puree and bring to a boil. Remove from the heat and strain. Fill twelve 3-ounce silicone dome molds one-third of the way up with the gelee and freeze.
  • For the white chocolate mousse: Combine the sugar and water in a small pot over medium-high heat and cook to 250 degrees F. Meanwhile, whip the egg yolks on high speed in the bowl of a stand mixer fitted with a whisk attachment. Carefully pour the hot sugar syrup into the yolks while whisking. Fold the whipped cream into the egg yolk mixture.
  • Melt the white chocolate in a microwave-safe bowl to 110 degrees F in the microwave in 15-second intervals, stirring between each interval. Gently fold the melted chocolate into the cream and yolk mixture until completely combined. Fill a piping bag without a tip with the mousse. Refrigerate until ready to use.
  • For the hazelnut cookie: Cream the butter, sugar, hazelnut flour and cinnamon in the bowl of a stand mixer fitted with a paddle attachment. Add the eggs and mix. Mix in the cake flour. Wrap the dough in plastic wrap and chill for 30 minutes.
  • Preheat the oven to 350 degrees F. Line a baking sheet with a silicone liner.
  • Roll the dough to a thickness of 1/8 inch. Cut into at least twelve 3-inch stars and place on the prepared baking sheet. Bake until opaque and an even golden brown, about 15 minutes. Cool on the sheet on a baking rack.
  • For the dacquoise: Preheat the oven to 425 degrees F. Line a baking sheet with a silicone liner.
  • Sift the coconut, confectioners' sugar, almond flour and all-purpose flour together in a bowl. Set aside.
  • Whip the egg whites and granulated sugar to stiff peaks in the bowl of a stand mixer fitted with a whisk attachment. Fold the flour mixture into the meringue.
  • Spread out the batter 1/8 inch thick onto the prepared baking sheet. Bake until just golden at the edges, 12 to 13 minutes.
  • For the sorbet: Dissolve the sugar with the water in a small saucepan over medium-high heat. Let cool and then add to the prickly pear and pear purees. Churn in an ice cream maker according to the manufacturer's instructions. Freeze until ready to serve.
  • For the raspberry sauce: Puree the raspberries with the sugar in a blender or food processor. Strain the mixture and adjust the sweetness with additional sugar if needed.
  • To assemble: Cut the dacquoise into at least 12 circles with a 2-inch round cutter. Fill twelve 4-ounce dome molds three-quarters full with the mousse. Place a frozen blueberry gelee in the center of each and press lightly to push the mousse up the sides. Fill the molds to the top with more mousse and place a dacquoise round on top. Freeze until solid, at least 2 hours.
  • Place a cooling rack over a baking sheet. Unmold the domes onto the cooling rack and top with the glaze. Place each dome onto a hazelnut cookie and top with a gold petal. Drag a small spoon of raspberry sauce next to each dome. Serve a scoop of the sorbet on the side.

1 teaspoon unflavored gelatin
7 ounces white chocolate, finely chopped
1 tablespoon unsalted butter
1 1/2 cups heavy cream, chilled
2 large eggs
1/3 cup sugar
1 teaspoon pure vanilla extract
2 cups fresh blueberries, picked over for stems
1 (9 inch) graham cracker crumb crust (or vanilla wafer crust)

Steps:

  • Place cold water in a small stainless steel bowl; sprinkle the gelatin on top; let gelatin stand to dissolve.
  • Add two inches of water in a med-size saucepan and bring water to a bare simmer.
  • Combine the chocolate, butter, and 1/2 cup heavy cream in a stainless steel bowl big enough to rest on top of the saucepan.
  • Place the bowl over the simmering water, making sure the bottom of the bowl does not touch the water.
  • Heat, whisking occasionally, until the chocolate is completely melted and the mixture is smooth.
  • Set the mixture aside to cool slightly.
  • In another stainless steel bowl, whisk the eggs and sugar together.
  • Place that bowl over the simmering water, again, making sure the bottom of the bowl does not touch the water.
  • Heat, whisking constantly, until the egg mixture has thickened and registers 160°F on an instant-read thermometer.
  • Remove the bowl from the heat and whisk in the vanilla.
  • Whisk the chocolate mixture and the gelatin mixture into the egg mixture; continue to stir until mixture is smooth.
  • Set the bowl containing the filling over a larger bowl of ice cubes; let the mixture stand, whisking occasionally, until it begins to thicken (about 10 minutes).
  • In a medium mixing bowl, whip the remaining heavy cream until it holds soft peaks (use an electric mixer).
  • Gently fold the whipped cream into the chocolate-egg mixture.
  • Fold in the blueberries.
  • Scrape the filling into the prepared crumb crust.
  • Cover the pie with plastic wrap and refrigerate until the filling is completely set--6 hours up to 1 day.

1-1/2 pkg. (4 oz. each) BAKER'S White Chocolate (6 oz.), divided
2 Tbsp. milk
4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, softened
1/3 cup powdered sugar
1 tsp. orange zest
2 cups thawed COOL WHIP Whipped Topping
2 cups fresh raspberries

Steps:

  • Prepare and bake crust in 9-inch pie plate as directed on package for 1-crust baked shell. Cool.
  • Microwave 5 oz. chocolate and milk in medium microwaveable bowl on HIGH 2 min. or until chocolate is almost melted, stirring after 1 min. Stir until completely melted. Cool to room temperature.
  • Beat cream cheese, sugar and zest with mixer until well blended. Add to chocolate mixture; beat with whisk until well blended. Stir in COOL WHIP; spoon into crust. Top with berries.
  • Melt remaining chocolate as directed on package; drizzle over berries. Refrigerate 1 hour.
