Steps:
- Cream shortening and sugar.
- Add eggs and beat well.
- Sift together dry ingredients.
- Combine milk and vanilla in measuring cup.
- Add dry ingredients in alternation with milk mixture, mixing well after each addition Drop tablespoons of batter onto parchment paper on a cookie sheet.
- Bake at 375 until puffed and firm to the touch, about 10-12 minutes.
- Do not overbake.
- Cream together butter, vanilla, salt, and confectioner's sugar for filling.
- Add just enough milk to make a spreadable consistency.
- Sandwich a generous amount of filling between two cake halves.

MMMMMMMmmmmmmmmmm! If you've never had a whoopie pie, you're in for a TREAT! These are the REAL deal! Bet ya can't keep 'em around! I always double the recipe, and freeze the rest. These freeze REALLY well, and they're a nice treat for in lunches, too. The filling can be made anytime, and then kept in the refrigerator up to 4 weeks.

Steps:
- Cream shortening, sugar and eggs.
- Add vanilla.
- Add milk alternately with dry ingredients and mix well. Add additional flour if needed to achieve proper consistency. (Note that the batter will also thicken as it stands, so you may wish to let it stand 15-30 minutes before baking. I usually turn my oven on at this point & let batter "rest" until the ovens are hot.).
- Drop onto greased (or sprayed) cookie sheets.
- Bake@ 350 for 8 minutes.
- Cool completely, then place one cookie upside down and coat with filling.
- Top with another cookie.
- Wrap in plastic wrap. Serve anytime! These also freeze really well!
- FILLING: Beat egg whites until stiff (if you're using whites).
- Add vanilla, flour and milk & beat well.
- Add shortening and sugar.
- Whip on high speed for 3-5 minutes.

- Cookie: Sift flour, sugar, baking soda, baking powder, salt and cocoa into bowl. Add all other ingredients and mix well. Drop by teaspoonful onto ungreased cookie sheet. Bake at 425 for about 7 minutes.
- Filling: Beat together and fill as desired.

Steps:
- Cream butter, sugars, egg, peanut butter and vanilla until smooth.
- Mix the flour, baking soda and salt, then add to mixture and mix well.
- Cover dough & refrigerate at least one hour.
- Remove from refrigerator and roll into small walnut-sized balls.
- Place balls into greased miniature muffin pans.
- Bake at 350° for 8-9 minutes.
- Remove from the oven; press a peanut butter cup into center of each cookie.
- Let cool before removing from pan.
- VARIATION: Place balls of dough onto ungreased cookie sheets.
- Press 1 Hershey's kiss into the center of the unbaked cookie dough.
- Bake at 350° for 10 minutes--candy won't melt.
- Let cookies cool slightly before removing from the cookie sheets.

my family recipes go back to before calories. in 1970 i had 2 friends that had a small bakery in one of our famous seaside village's. top sellar was my mom's whoopie pie recipe.

- cream 2/3 cup crisco and 1 1/4 cup sugar and 2 eggs. beat to light and fluffy.
- sift togeather 2 1/2 cups flour, 1/2 cup hershey cocoa, 1 1/4 tea.baking soda, 1/4 tea.cream tartar.
- mix 1 1/4 tea. vanilla and 1/4 tea almond into 1 cup milk. add dry ingredients to creamed mix alternatly with milk.
- drop by 1 tablespoon on greased cookie sheet. approximately the same size. 375* oven bake 10-12 minute cool and fill.

- 1. filling:. stirring constantly 3 tablespoons flour and. 3/4 cup milk until very thick. cool to cold. then beat in 3/4 cup crisco,solid white and it must be crisco,1 cup sugar, 1 teaspoon vanilla. beat to light and fluffy. sandwich your whoopies with filling and eat.
