These mini cookie cakes were one of my favorite treats while I was growing up in Pennsylvania. We called them gobs because they are gobs of fun to eat! The recipe can make fewer or more, depending on how large or small you make the cookies. 1 package devil's food cake mix (regular size)
1-1/4 cups all-purpose flour
1 cup water
3 large eggs, room temperature
1/3 cup canola oil
2 tablespoons baking cocoa
1/4 teaspoon baking powder
1/4 teaspoon baking soda
FILLING:
1 cup 2% milk
1/3 cup all-purpose flour
1/4 cup butter, softened
1/4 cup shortening
3-3/4 cups confectioners' sugar
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350°. In a large bowl, combine the first 8 ingredients; beat on low speed 30 seconds. Beat on medium 2 minutes., Drop batter by tablespoonfuls 2 in. apart onto parchment-lined baking sheets. Bake until firm, 10-12 minutes. Cool on pans 2 minutes. Remove to wire racks to cool completely., Meanwhile for filling, in a small saucepan, whisk milk and flour until smooth. Bring to a boil, stirring constantly; cook and stir until thickened, 1-2 minutes. Cool completely., In a large bowl, beat butter and shortening until blended. Gradually beat in cooled milk mixture. Beat in confectioners' sugar and vanilla until smooth. Refrigerate until chilled. Spread filling on bottoms of half the cookies. Top with remaining cookies. Refrigerate leftovers.

1 cup water

A New England phenomenon that's becoming popular everywhere, the famous "pies" are really more like soft cakes with a creamy filling. Use Betty Crocker™ cake mix and frosting for a simple-to-make, authentic-tasting version.

1 box Betty Crocker™ Super Moist™ Devil's Food cake mix
3/4 cup water
1/2 cup vegetable oil
3 eggs
1 box (4-serving size) chocolate instant pudding and pie filling mix
2 containers Betty Crocker™ Whipped Fluffy White Frosting

Steps:

  • Heat oven to 350°F.
  • Line cookie sheets with parchment paper, silicone baking liners, or lightly spray with cooking spray.
  • In large bowl, beat all cookie ingredients with electric mixer on low speed until moistened; beat 1 minute longer on high speed.
  • Pour batter into a 1 gallon resealable plastic bag. Seal baggie and cut small hole off of one of the bottom corners.
  • Pipe batter into 36 small circles onto cookie sheets about 1-inch apart to allow for spreading.
  • Bake 10 to 12 minutes until set being careful to not over bake. Cool 2 minutes; remove from cookie sheets and place on cooling rack. Cool completely before filling.
  • Once cookies are cooled spread frosting on flat side of one cookie. Top with the second cookie, flat side down to make a sandwich.

2 cups all-purpose flour
1 teaspoon baking soda
¼ teaspoon salt
⅓ cup unsweetened cocoa powder
1 cup white sugar
1 egg
½ cup vegetable oil
1 teaspoon vanilla extract
¾ cup milk
½ cup milk
2 ½ tablespoons all-purpose flour
½ cup shortening
½ cup white sugar
½ teaspoon salt
1 tablespoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets. Sift together the 2 cups flour, baking soda,1/4 teaspoon salt, cocoa and 1 cup sugar. Set aside.
  • In a medium bowl stir together the egg, oil, 1 teaspoon vanilla and 3/4 cup of milk until well blended. Gradually stir in the sifted dry ingredients. Drop by tablespoonfuls onto the prepared cookie sheets.
  • Bake for 10 to 12 minutes in the preheated oven, until firm. Allow to cool on baking sheet for 5 minutes before removing to wire racks to cool completely.
  • To make the filling: In a medium saucepan, whisk together the 1/2 cup of milk and 2 1/2 tablespoons flour. Cook over medium-high heat, stirring frequently, until thick. Remove from heat set aside to cool. In a medium bowl, Beat together the shortening, 1/2 cup sugar, 1/2 teaspoon salt and 1 tablespoon vanilla. Stir in the cooked milk mixture and beat for an additional 20 minutes, until really fluffy. Sandwich filling between two cookies. ENJOY!!

1/4 tsp salt

6 T butter (*melted and cooled)
1 tsp vanilla

Steps:

  • Beat together filling ingredients. Mix together: flour, baking soda, salt, cocoa and sugar. Gradually add: milk, melted & cooled butter, vanilla & egg. Drop by spoonful on ungreased cookie sheet. Try to keep them close to the same size so that the tops and bottoms match up. Bake at 350 for 12-14 minutes. (check cookies after 7 minutes) Put together Devil Dogs by spreading some filling on one of the cookies then topping with a 2nd cookie. Devil Dogs freeze well.

Steps:

  • WHOOPIE PIES:.
  • Mix the Crisco, sugar, and egg till fluffy.
  • Slowly add the milk and vanilla; mix well.
  • Add the flour, cocoa, soda, and salt.
  • Beat well.
  • Drop by spoonfuls on ungreased baking sheet.
  • Bake at 350°F for 7-10 minutes.
  • FILLING:.
  • Using a jar for a shaker combine the milk, flour, and salt; shake well.
  • Put this into a saucepan and cook slowly over medium heat till very thick and smooth, and then cool.
  • In a electric mixer put the Crisco, sugar, and vanilla and beat about 5 minutes.
  • Add the cooled paste and beat it for about 5 more minutes till very light and fluffy.
  • I turn the mixer to high and beat it quite a while; it is worth it.
  • Fill the pies and put into a baggie.

Steps:

  • Cream together butter and 1 cup sugar, add egg. Sift together 2 cups flour, cocoa, soda, 1/2 teaspoon salt and baking powder. Add vanilla and milk.
  • Drop by tablespoon full onto ungreased cookie sheet and bake 7-8 minutes at 425 degrees F (220 degrees C). Cool completely and make sandwiches using following filling.
  • To Make Filling: Combine 2 1/2 tablespoons flour and 1/2 cup milk and cook until it turns to thick paste. Cool completely.
  • Cream together the 1/2 cup sugar, 1/4 teaspoon salt, 1/2 cup shortening, and 1/2 teaspoon vanilla. Add cooled paste and beat until fluffy. (This will take awhile and if your paste is not completely cooled it will look curdled. ) I usually double this recipe for the filling.

1 pkg. (3.8 oz.) JELL-O Devil's Food Flavor Instant Pudding
3 oz. BAKER'S Semi-Sweet Chocolate, melted
1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
1 cup JET-PUFFED Marshmallow Creme
1 tub (8 oz.) COOL WHIP Whipped Topping, thawed

Steps:

  • Heat oven to 350ºF.
  • Prepare cake batter as directed on package except reduce the water to 3/4 cup. Add dry pudding mix and melted chocolate; mix well. Drop 2 Tbsp. batter, 2 inches apart, into 32 mounds on baking sheets.
  • Bake 14 to 16 min. or until toothpick inserted in centers comes out almost clean. Cool on baking sheets 3 min. Remove to wire racks; cool completely.
  • Beat cream cheese and marshmallow creme in large bowl with mixer until blended. Gently stir in COOL WHIP.
  • Place bottom sides of 2 cookies together for each whoopie pie, spreading about 2 Tbsp. COOL WHIP mixture between cookies.
