Buttery cinnamon scones, perfect for and lunch time snack with a nice cuppa!!

8oz self raising flour
1/2 level tsp salt
2oz butter
1oz caster sugar
125ml 1/4 pint milk
1 level tsp cinnamon
extra milk for brushing

Steps:

  • Pre-heat oven to 230c. Sift flour and salt into large bowl, with cinnamon.
  • Rub butter in, until it resembles fine breadcrumbs.
  • Add sugar, then add milk all at once. Mix to a soft but not sticky dough with knife.
  • Turn out onto floured surface or board, knead quickly until smooth.
  • Roll out to any thickness you want, cut into 8 rounds. Transfer to buttered baking tray.
  • Brush tops with milk and sugar if liked. Bake at 230c for 7-10 min until well risen and gold.
  • Serve with fresh whipped cream and jam. :)

As I was playing around with the mixture for these not-too-sweet scones I learned that if I used as much liquid (in the form of buttermilk or yogurt) as I usually do in my scones, they wouldn't be flaky. That is because the apple provides plenty of liquid. You just need to add enough buttermilk or yogurt to bring the dough together. Otherwise you will have drop biscuits and they will have a consistency more akin to a soft cookie than to a biscuit or scone. Juicy apples like Braeburn, Crispin and Empire work well for these scones.

1 apple, grated (145 grams grated apple)
1 tablespoon lime or lemon juice
2 teaspoons lemon or lime zest
1 1/4 cups / 160 grams whole wheat flour,
3/4 cup / 90 grams unbleached all-purpose flour (or use all whole wheat flour)
1 tablespoon / 12 grams baking powder
1/2 teaspoon / 2 grams baking soda
1/4 teaspoon / 2 grams salt
1/2 cup / 55 grams rolled oats
2 tablespoons /30 grams raw brown sugar
6 tablespoons / 85 grams unsalted butter
Up to 1/4 cup / 60 grams buttermilk or yogurt
1/2 cup / 60 grams chopped pecans

Steps:

  • Preheat oven to 400 degrees. Line a baking sheet with parchment. Toss grated apple with lemon or lime juice and zest in a bowl. Sift together flours, salt, baking powder and baking soda, and stir in oats and sugar. Place in a large bowl or in the bowl of standing mixer fitted with the paddle.
  • Add butter and mix in with your hands, rubbing the flour and butter briskly between your fingers; or beat on low speed until butter is distributed throughout the flour and the mixture has a crumbly consistency.
  • Add apple with liquid to the large bowl. Add pecans and stir or mix at medium speed until incorporated. Add just enough yogurt or buttermilk to allow dough to come together.
  • Scrape out onto a lightly floured surface and gently shape into a rectangle, about 3/4 inch thick. Cut into 6 squares, then cut squares in half on the diagonal to form 12 triangular pieces. Or use a biscuit cutter to cut rounds. Place on baking sheet. Bake 18 to 20 minutes, until lightly browned. Cool on a rack.

These healthy, simple, and amazing whole wheat apple cinnamon muffins are made without refined sugar.

2 cups (250g) whole wheat flour* (spoon & leveled)
1 teaspoon baking soda
1 teaspoon baking powder
2 teaspoons ground cinnamon
1/2 teaspoon ground allspice
1/2 teaspoon salt
2 large eggs, at room temperature
3/4 cup (133g) smooth unsweetened applesauce*
2/3 cup (160ml) pure maple syrup
1/3 cup (80ml) melted coconut oil (or vegetable oil or melted butter)
1 and 1/2 teaspoons pure vanilla extract
2 cups (210g) shredded/grated apple (about 2 peeled apples)*
optional: 1/2 cup (65g) chopped pecans or walnuts

Steps:

  • Preheat oven to 425°F (218°C)6. Spray a 12-count muffin pan with nonstick spray or use cupcake liners.
  • In a large bowl, whisk the flour, baking soda, baking powder, cinnamon, allspice, and salt together until combined. Set aside. In a medium bowl, whisk the eggs, applesauce, maple syrup, oil, and vanilla together until combined. Pour the wet ingredients into the dry ingredients, stir a few times, and then add the grated apple and pecans/walnuts. Fold everything together gently just until combined and no flour pockets remain. The batter is very thick.
  • Spoon the batter into liners, filling them all the way to the top. Bake for 5 minutes at 425 then, keeping the muffins in the oven, reduce the oven temperature to 350°F (177°C). Bake for an additional 17-18 minutes or until a toothpick inserted in the center comes out clean. The total time these muffins take in the oven is about 22-23 minutes, give or take. (For mini muffins, bake 11-14 minutes at 350°F (177°C).) Allow the muffins to cool for 5 minutes in the muffin pan, then transfer to a wire rack to continue cooling.
  • Muffins stay fresh covered at room temperature for a few days, then transfer to the fridge for up to 1 week.

The bakery offered a bunch of different flavors of scones, and I could never decide on a favorite.

361 grams (3 cups) all-purpose flour
132 grams (2/3 cup) granulated sugar
12 grams (1 tablespoon) baking powder
2 grams (1 teaspoon) ground cinnamon

142 grams (5 ounces) (10 tablespoons) cold unsalted butter, cut into 1/2-inch cubes
340 to 425 grams (2 to 2 1/2 cups) chopped apples, peeled if desired

Steps:

  • Preheat the oven to 400 degrees F (204 degrees C), with racks in the upper and lower thirds. Line two baking sheets with parchment paper.
  • In a large bowl, whisk together the flour, granulated sugar, baking powder, cinnamon and salt. Add the butter and toss to coat the cubes with flour. Cut the butter into the flour by rubbing it between your forefingers and thumbs until the butter pieces are between the size of peas and walnut halves. Add the chopped apples and toss gently to combine.
  • Make a well in the center of the dry ingredients and pour in the cream. Toss the mixture with your fingers to combine, then knead gently to ensure everything is evenly moistened.
  • Scoop 1/4-cup mounds of the dough onto the prepared baking sheets (I do this by hand because I like them to look craggy, but you can use a No. 16 (1/4-cup scoop)), leaving at least 1 1/2 inches between them. Brush the tops of the scones with the egg wash and sprinkle generously with turbinado sugar.
  • Bake the scones, switching the sheets from front to back and top to bottom at the halfway mark, for 20 to 22 minutes, until the tops and edges are golden brown. The scones can be served warm or at room temperature.

¼ cup cold unsalted butter, cut into pieces

7 tablespoons brown sugar, divided
½ cup whole milk
1 tablespoon whole milk

Steps:

  • Preheat the oven to 300 degrees F (150 degrees C). Grease a baking sheet.
  • Sift flour, baking powder, baking soda, cinnamon, and salt into a mixing bowl and rub in butter. Add apples and 6 tablespoons brown sugar. Add 1/2 cup milk and work into a dough.

These are quick and easy to make and taste absolutely delicious, great toasted or fresh out of the oven, perfect for breakfast. *I have made these and posted the recipe only afterward, they turned out well though it is true that the dough is fairly sticky. Applesauce and buttermilk are what make this recipe moist, so perhaps in substituting them lies the problem, as for flavour. It could be that my measurements need editing, in which case I will try the recipe again and correct it if necessary.

1 medium apple, peeled and chopped into small pieces
