Time 20m

Yield 4 servings

Number Of Ingredients 12

1 clove garlic, minced
2 tablespoons extra-virgin olive oil
1/2 teaspoon salt, plus more for seasoning
1/2 teaspoon freshly ground black pepper, plus more for seasoning
1 tablespoon olive oil
4 (4-ounce) pieces salmon
1/4 cup chopped fresh basil leaves
3 tablespoons capers
1 lemon, zested
2 tablespoons lemon juice
2 cups fresh baby spinach leaves

Steps:

Provided by Giada De Laurentiis

Categories     main-dish

Time 40m

Yield 4 servings

Number Of Ingredients 12

1 tablespoon olive oil
2 onions, thinly sliced
2 bunches Swiss chard, trimmed and chopped (about 14 cups)
3 garlic cloves, minced
1 (14 1/2-ounce) can diced tomatoes with juices
1/4 cup dry white wine
1/4 teaspoon dried crushed red pepper flakes
Salt and pepper
8 ounces whole-wheat spaghetti
1/4 cup pitted kalamata olives, coarsely chopped
2 tablespoons freshly grated Pecorino cheese
2 tablespoons toasted pine nuts

  • Transfer the pasta to serving bowls. Sprinkle the olives, cheese, and pine nuts and serve.

WHOLE WHEAT SPAGHETTI WITH GREEN GARLIC AND CHICORY

Whole Wheat Spaghetti With Green Garlic and Chicory image

This dish is inspired by a classic oil and garlic pasta. I've added chicory, a bitter green that is much loved in southern Italy but underused here. It's sold with lettuces in the supermarket, often called escarole or curly endive. Chicory contains a type of soluble fiber called inulin, which some studies suggest may have a positive effect on blood sugar levels.

Provided by Martha Rose Shulman

Categories     dinner, easy, quick, weekday, main course

Time 20m

Yield Serves four

Number Of Ingredients 9

1 head chicory (also sold as escarole and curly endive lettuce)
1/4 cup extra virgin olive oil
2 tablespoons minced green garlic
1 dried red pepper, broken in half, or 1/4 teaspoon red pepper flakes
Salt to taste
3 tablespoons chopped flat-leaf parsley
3/4 pound whole-wheat spaghetti
A generous amount of freshly ground pepper
1/4 cup freshly grated Parmesan, as needed

Steps:

  • Bring a large pot of water to a boil. Fill a bowl with ice water. Meanwhile, remove the tough outer leaves of the chicory, and clean the remaining leaves of sand. When the water comes to a boil, salt generously and add the chicory. Blanch one minute, then transfer to the ice water with a skimmer or slotted spoon (do not drain the water from the pot). Drain the chicory, squeeze out water and chop. Set aside.
  • Combine the olive oil, garlic and chili pepper in a large, heavy skillet. Heat over medium heat until the garlic begins to sizzle. Allow the garlic to sizzle for about a minute, but do not let it color. Remove the skillet from the heat and set aside. If using a whole chili pepper, remove it and discard.
  • Bring the water back to a boil, and add the spaghetti. Cook al dente following the timing directions on the package. While the pasta is cooking, return the frying pan to medium heat. When the garlic begins to sizzle again, add the chicory. Toss together, season to taste with salt and pepper, and keep warm.
  • When the spaghetti is cooked al dente, remove 1/2 cup of the pasta water and add it to the pan with the chicory. Stir together well. Drain the pasta, and toss with the chicory and garlic. Serve, topping each serving with a spoonful of Parmesan.

WHOLE WHEAT PASTA

Whole Wheat Pasta image

Fresh, healthy and very delish... I sometimes make this the traditional style, and when in a hurry, I throw all the ingredients into my mixer, with the kneading hook.

Provided by Gia

Categories     100+ Pasta and Noodle Recipes     Noodle Recipes

Time 40m

Yield 4

Number Of Ingredients 5

1 ½ cups all-purpose flour
1 ½ cups whole wheat flour
½ teaspoon sea salt
4 eggs
2 teaspoons olive oil

Steps:

  • Stir together the all-purpose flour, whole wheat flour and salt in a medium bowl, or on a clean board. Make a hollow in the center, and pour in the olive oil. Break eggs into it one at a time, while mixing quickly with a fork until the dough is wet enough to come together. Knead on a lightly floured surface until the dough is stiff and elastic. Cover, and let stand for 30 minutes to relax.
  • Roll out dough by hand with a rolling pin, or use a pasta machine to achieve the desired thickness of noodles. Cut into desired width and shapes. Allow the pasta to air dry for at least 15 minutes to avoid having it clump together.

Make and share this Whole-Wheat Spaghetti Bolognese recipe from Food.com.

Provided by Laka

Categories     Spaghetti

Time 1h30m

Yield 6 serving(s)

Number Of Ingredients 16

100 g carrots
50 g celery root
50 g parsley roots
2 onions, chopped
2 garlic cloves, chopped
1 tablespoon olive oil
550 g ground beef
2 slices smoked bacon or 2 slices pancetta, chopped
500 g tomato puree
4 tablespoons red wine
400 ml beef stock, from 1 cube
2 fresh bay leaves
5 -6 sprigs fresh thyme
1 teaspoon ground black pepper
500 g whole wheat spaghetti
40 g grana padano or 40 g parmesan cheese, grated

Steps:

  • Make soffritto (mirepoix or Holy trinity) from carrot, celery and parsley root: cut the vegetables into smaller pieces and coarsely chop in a blender.
  • Briefly sauté onions and garlic in olive oil, add soffritto and sauté over a medium-high heat for 8-10 minutes, or until softened, stirring occasionally.
  • Stir in the ground beef and pancetta, turn the heat up to high and cook for 5 - 10 minutes, or until browned all over, stirring and breaking it up with a spoon.
  • Add the tomato purée, red wine, beef stock, bay leaves and thyme. Stir well, bring to the boil. Season with pepper, reduce to a low heat, cover and simmer for around 40 minutes, stirring occasionally. Remove the lid and continue cooking for about 15 minutes, or until thickened and reduced. Discard the bay leaves and thyme sprigs. Season with pepper.
  • Cook the spaghetti (al dente) according to packet instructions. Drain, but save about ½ cup of the cooking water.
  • Stir the spaghetti into the sauce, adding a splash of pasta water to loosen, if needed. Divide between bowls and sprinkle with Parmesan cheese, then serve.

WHOLE WHEAT EGG NOODLES OR SPAGHETTI NOODLES

Whole Wheat Egg Noodles or Spaghetti Noodles image

I wanted to make whole wheat egg noodles that still tasted good, so I played around with ingredients this is what I came up with. You can add more whole wheat flour if you desire, just cut back on the all-purpose flour (the consistency will get more tough). I'll post my recipe for chicken noodle soup, too.

Provided by wyojess

Categories     Healthy

Time 55m

Yield 16 serving(s)

Number Of Ingredients 3

6 eggs, warmed 5 min in warm tap water
1/2 cup whole wheat flour
2 cups all-purpose flour

Steps:

  • Mix together the eggs and flour. If you have a mixer with a dough hook, mix the dough until it looks smooth (about 2 min). You don't want the dough to be sticky, so add all-purpose flour a little bit at a time if sticky or add a little water if too dry.
  • If you don't have a mixer with a dough hook, knead dough on the counter dusted with flour to get the same results (it will take a while). You can also use your bread machine, but you'll have to reference the instruction book.
  • Let dough sit 30 min (covered) to allow gluten to develop.
  • With Pasta Machine: Run through a pasta machine per manufacturer's instructions. I have a Marcato Atlas 150 and roll it to a thickness of "4" for soup noodles or "5" for spaghetti noodles.
  • Without a pasta machine, roll out on a floured counter top with a rolling pin to 1/8 inch thick. Cut into 1/4" strips with a knife.
  • Cut to desired length.
  • Add to boiling water or broth and boil until tender (3-5 min). Really good to add to boiling chicken noodle soup!
  • Boil all the noodles and store extra noodles in Ziploc baggies in the freezer for quick future meals.

WHOLE-WHEAT SPAGHETTI WITH VEGETABLES AND PEANUT SAUCE

Whole-Wheat Spaghetti with Vegetables and Peanut Sauce image

For a quick Asian sauce that takes almost no time to prepare, mix together peanut butter, soy sauce, rice vinegar, and sugar.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Pasta and Grains

Time 20m

Number Of Ingredients 9

8 ounces whole-wheat spaghetti
Coarse salt and ground pepper
4 ounces snow peas, tough strings removed
3 medium carrots, halved, and shaved with a vegetable peeler
1 container (14 ounces) firm tofu, drained and cut into 1-inch cubes
3 tablespoons smooth peanut butter
2 tablespoons soy sauce
2 tablespoons rice vinegar
2 tablespoons light-brown sugar

Steps:

  • Cook pasta in a large pot of boiling salted water until al dente, according to package instructions. Reserve 1/2 cup pasta water. Add snow peas, carrots, and tofu to pot; immediately drain pasta mixture, and set aside.
  • In pasta pot, stir together peanut butter, soy sauce, vinegar, and sugar. Add reserved pasta mixture; toss gently, adding reserved pasta water a little at a time to create a thin sauce that coats spaghetti (you may not need all the water). Season as desired with salt and pepper. Serve.
