HEALTHY APPLE MUFFINS



Healthy Apple Muffins image

Amazing, healthy apple muffins made with maple syrup and whole wheat flour! No one will guess that this simple cinnamon apple muffin recipe is good for you, too. Recipe yields 12 muffins.

Number Of Ingredients 14

1 3/4 cups white whole wheat flour or regular whole wheat flour
1 1/2 teaspoons baking powder
1 teaspoon ground cinnamon
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup grated apple
1 cup apple diced into 1/4" cubes
1/3 cup melted coconut oil or extra-virgin olive oil
1/2 cup maple syrup or honey*
2 eggs, preferably at room temperature
1/2 cup plain Greek yogurt (I used full-fat but any variety should do)
1/2 cup applesauce
1 teaspoon vanilla extract
1 tablespoon turbinado sugar (also called raw sugar), for sprinkling on top

Steps:

  • Preheat oven to 425 degrees Fahrenheit. If necessary, grease all 12 cups on your muffin tin with butter or non-stick cooking spray (my pan is non-stick and doesn't require any grease).
  • In a large mixing bowl, combine the flour, baking powder, cinnamon, baking soda and salt. Blend well with a whisk. Add the grated apple (if it is dripping wet, gently squeeze it over the sink to release some extra moisture) and chopped apple. Stir to combine.
  • In a medium mixing bowl, combine the oil and maple syrup and beat together with a whisk. Add the eggs and beat well, then add the yogurt, applesauce and vanilla and mix well. (If the coconut oil solidifies in contact with cold ingredients, gently warm the mixture in the microwave in 30 second bursts.)
  • Pour the wet ingredients into the dry and mix with a big spoon, just until combined (a few lumps are ok). The batter will be thick, but don't worry! Divide the batter evenly between the 12 muffin cups. Sprinkle the tops of the muffins with turbinado sugar. Bake muffins for 13 to 16 minutes, or until the muffins are golden on top and a toothpick inserted into a muffin comes out clean.
  • Place the muffin tin on a cooling rack to cool. If you have leftover muffins, store them, covered, at room temperature for up to 2 days, or in the refrigerator for up to 4 days. Freeze leftover muffins for up to 3 months.

2 teaspoons baking powder

1/2 teaspoon salt

1 egg, beaten
1 cup sour cream
3 tablespoons oil (or melted shortening)
1 medium apple, peeled and diced
1 teaspoon nutmeg
2 tablespoons sugar

Steps:

  • Sift together flour, baking powder, baking soda, salt, and 3 tablespoons sugar.
  • Combine egg, sour cream, and oil in bowl and pour into dry ingredients all at once.
  • Stir partially, then add apples which have been peeled, diced, and sprinkled with nutmeg and 2 tablespoons sugar.
  • Stir until all dry ingredients are moist but still lumpy, about 17-25 strokes.
  • Spoon batter into greased muffin tins, filling tins only 2/3 full.
  • Bake at 425° for 20-28 minutes.

1 cup sour cream, at room temp.
1/3 cup canola oil
2 eggs
3/4 cup packed brown sugar
2 teaspoons vanilla
1 granny smith apple (or your favorite type of baking apple), peeled and diced
1/2 cup raisins
1/2 cup chopped walnuts or pecans (optional)
cinnamon and sugar mixture (optional)

Steps:

  • 1. Preheat oven to 350 degrees and grease a 12 cup muffin tin.
  • 2. In a large bowl, whisk together flour, oat bran, baking powder, baking soda, salt and cinnamon.
  • 3. In a separate bowl, whisk together sour cream, oil, eggs, brown sugar and vanilla.
  • 4. Add wet ingredients to dry ingredients and stir until just combined. Fold in apples, raisins, and nuts (if using).
  • 5. Divide batter between the twelve muffin cups (a regular-sized ice cream scoop works well). Sprinkle tops of muffins with a mixture of cinnamon and sugar if desired.
  • 6. Bake in a preheated 350 degree oven for 20-25 minutes or until a toothpick inserted in the center of a muffin comes out clean.

2 cups all-purpose flour
3 teaspoons baking powder
1-1/4 teaspoons ground cinnamon

1/4 cup butter, melted
1-1/2 cups chopped peeled tart apples
TOPPING:
1/4 cup sugar
3 tablespoons all-purpose flour

Steps:

  • In a large bowl, combine dry ingredients. In another bowl, beat the eggs, sour cream and butter. Stir into dry ingredients just until moistened. Fold in apples. Fill greased or paper-lined muffin cups two-thirds full. , For topping, combine sugar, flour and cinnamon. Cut in butter until mixture resembles coarse crumbs. Sprinkle a rounded teaspoonful over each muffin. , Bake at 400° for 18-20 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pans to wire racks. Serve warm.

2 1/2 cups whole wheat flour, preferably pastry flour
3/4 to 1 cup sugar, depending on sweetness of fruit
2 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1 cup mashed or puréed banana, sweet potato, apple, zucchini, cooked or canned pumpkin, or other fruits or vegetables
1 egg, beaten
1/2 cup buttermilk

Steps:

  • Preheat oven to 375 degrees and grease two 6-cup muffin tins or fill with liners. In a large bowl, mix together the flour, sugar, baking powder, baking soda and salt. In another bowl, whisk together the melted butter, banana, egg and buttermilk. Fold wet mixture into dry mixture and stir until just combined.
  • Fill muffin tins or liners; bake for about 25 to 30 minutes, or until muffins are puffed and turning golden brown on top. Serve warm if possible.

1/4 cup chopped pecans
3/4 cup plus 2 tablespoons packed brown sugar
1/2 teaspoon ground cinnamon
1 cup all-purpose flour
1 cup whole wheat pastry flour
1 teaspoon baking soda
1/2 teaspoon fine salt
1/4 cup canola oil
2 large eggs
1 cup natural applesauce
1 teaspoon vanilla extract
3/4 cup low fat buttermilk
1 Golden Delicious apple, peeled, cored and cut into 1/4-inch pieces

Steps:

  • Preheat the oven to 400 degrees F. Coat a 12-capacity standard muffin pan with cooking spray.
  • In a small bowl, mix together the pecans, 2 tablespoons of the brown sugar and the cinnamon.
  • In a medium bowl, whisk together the all-purpose and whole wheat flour, baking soda and salt.
  • In a large bowl, whisk the remaining 3/4 cup sugar and the oil until combined. Add the eggs, one at a time, whisking well after each addition. Whisk in the applesauce and vanilla.
  • Whisk in the flour mixture in two batches, alternating with the buttermilk. Whisk just until combined. Gently stir in the apple chunks.
  • Pour the batter into the prepared muffin pan and sprinkle with the pecan mixture. Tap the pan on the counter a few times to remove any air bubbles. Bake until a wooden pick inserted in center of one of the muffins comes out clean, 20 to 25 minutes.
  • Let cool on a wire rack for 15 minutes. Run a knife around the muffins to loosen them and unmold. Cool completely on the rack.

6 tablespoons butter, softened
1 cup sugar
2 eggs
1 1/2 teaspoons vanilla extract
1 cup all-purpose flour
1 cup whole wheat flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/3 cup applesauce
2/3 cup fat free sour cream
2 gala apples, peeled, cored and sliced (or Granny Smith)

Steps:

  • Preheat the oven to 350ºF and spray a muffin tin with nonstick spray.
  • Beat the butter and sugar together with an electric mixer on high speed until the mixture is light in color and fluffy.
  • Lower the speed to low and add the eggs one at a time. Add the vanilla.
  • In a separate bowl, combine the flours, baking powder, baking soda and salt.
  • Fold half of the dry ingredients into the butter mixture using a rubber spatula or wooden spoon. Stir in the applesauce and sour cream. Fold in the remaining dry ingredients.
  • Fill the muffin tins halfway with batter. Add a few apple slices to each muffin and spoon the remaining batter over the apples.
  • Bake on the center rack until the muffins are golden brown and springy to the touch, about 35 to 40 minutes.
