Nothing spells comfort like Italian food. Steaming bowls of pasta, buttery, roasted garlic bread, and tureens of the most flavorful sauces: it's all right there. Sometimes, you want to bring that comfort into your very own kitchen and, well, we've got just the recipe for you. This easy chicken alfredo penne will have you saying 'mangia!' before you even know it.

1 ½ lb chicken breast, cubed
2 tablespoons butter
½ teaspoon dried oregano
½ teaspoon dried basil
½ teaspoon salt
½ teaspoon pepper
16 oz penne pasta, cooked
¼ cup fresh parsley
¼ cup shredded parmesan cheese
2 tablespoons butter
4 cloves garlic, minced
3 tablespoons flour
2 cups milk
½ teaspoon dried oregano
½ teaspoon dried basil
½ cup shredded parmesan cheese
½ teaspoon salt
½ teaspoon pepper

Steps:

  • In a pan over medium-high heat, melt butter, then add the chicken breast.
  • Season with salt, pepper, oregano, and basil. Cook 8-10 minutes or until chicken is fully cooked. Remove from heat and set chicken aside.
  • In the same pan over medium heat, melt butter and add the garlic. Cook until the garlic begins to soften.
  • Add half of the flour to the garlic and butter, stirring until incorporated. Then add the rest of the flour and stir.
  • Pour in the milk a little bit at a time, stirring well in between, until fully incorporated and sauce begins to thicken.
  • Season with salt, pepper, oregano, and basil, and stir well to incorporate.
  • Add parmesan cheese and stir until melted.
  • Pour the sauce over cooked penne pasta, add the chicken and mix well.
  • Add parsley and extra parmesan. Mix well.
  • Enjoy!

1 lb whole wheat penne
1 small shallot (chopped)
3 garlic cloves (minced)
2 tablespoons unsalted butter
2 tablespoons all-purpose flour
6 ounces 2% evaporated milk
1 cup skim milk
1/2 cup parmesan cheese
salt & pepper (to taste)
parsley flakes (to taste)

Steps:

  • Boil water. Add salt. Cook pasta according to directions on box.
  • Add butter to saute pan. Saute shallots & garlic for 1 minute until tender. Add flour - whisk for about 1 minute until bubbly. Whisk in skim & evaporated milk. Bring to a boil until sauce thickens. Reduce heat - incorporate parmesan cheese. Season with salt, pepper and parsley to taste.
  • Add sauce to pasta.
  • Enjoy!

1 pound whole-wheat penne rigate
Salt
1/4 cup extra-virgin olive oil
3 cloves garlic, cracked from skin and sliced
1 red onion, finely chopped
1 head cauliflower, stem removed and chopped
1 cup chicken stock
4 sprigs fresh rosemary, leaves stripped and finely chopped
3/4 cup grated Romano, 3 generous handfuls
Salt and black pepper

Steps:

  • Bring a large pot of water to a boil. Add salt and pasta and cook to al dente. Drain and reserve 2 ladles of pasta water.
  • While water is coming up to a boil and pasta cooks, make sauce. Heat a deep skillet over medium heat with extra-virgin olive oil. Add garlic and cook 3 minutes, then remove. Add onions and cook 5 minutes then add cauliflower, chicken stock and the rosemary. Cover the pan and cook 15 minutes. Uncover the sauce, add 1 to 2 ladles of pasta water and mash the cauliflower with the back of a wooden spoon or potato masher. Add the pasta and cheese to the cauliflower and toss to combine. Season the dish with salt and pepper, to taste, and serve.

Made this for dinner tonight--it is sort of a "throw together" with what I had on hand. I'm posting for two reasons: so I'll remember how to make it and to get the calorie information.

4 garlic cloves, minced
1/2 small onion
2 boneless skinless chicken breasts
2 cups broccoli florets
2 red bell peppers, cut into medium strips
1 1/2 cups whole wheat penne
1 cup white wine
1/2 cup vegetable broth
2 tablespoons crushed red pepper flakes
2 tablespoons herbes de provence
2 tablespoons dried basil
2 tablespoons dried marjoram
1 tablespoon butter
1 tablespoon olive oil
2 tablespoons pine nuts, toasted
2 tablespoons parmesan cheese

Steps:

  • Pound chicken to a thickness of 1/2 an inch.
  • Combine 2 cloves garlic, 1 T crushed red pepper, and 2 T Herbes de Provence in a small bowl.
  • Rub garlic mixture into both sides of each chicken breast.
  • Season both sides of each breast with salt and pepper.
  • Cover chicken and leave in the fridge for at least an hour.
  • Steam or boil broccoli for 2 minutes and then remove from heat.
  • Grill chicken over med-high heat, about 4 minutes per side. Place chicken on a plate, cover with aluminum foil, and set aside.
  • Cook pasta according to package directions.
  • While pasta boils, cook remaining garlic and onion over medium heat until softened.
  • Add wine, broth, basil, marjoram, and the remaining crushed pepper. Bring to a boil and simmer until reduced.
  • Add red pepper and cook for a minute or two.
  • Add broccoli and cook until re-heated.
  • Drain pasta and add to veggie mixture.
  • Divide pasta between 2 plates. Top with chicken, pine nuts, and parmesan cheese.

5 teaspoons reduced fat margarine
1/2 teaspoon crushed garlic
1 1/2 tablespoons chopped green onions
2/3 cup fat-free evaporated milk
1 tablespoon fat free cream cheese, softened
3/4 teaspoon parsley
1/8 teaspoon cayenne pepper
1 teaspoon cold water
1 teaspoon cornstarch
2 tablespoons grated parmesan cheese (Heaping tbsps, or to taste)
1 3/4 cups whole wheat penne (or other whole wheat noodle)
salt and pepper

Steps:

  • In a large pot bring water to a boil then cook whole wheat penne while making sauce.
  • In large saucepan, sauté garlic and green onion in margarine, then stir in the evaporated milk, fat-free cream cheese, cayenne, and parsley. Allow cream cheese to melt.
  • Combine cornstarch and water separately until there are no lumps, and pour into milk mixture. Mix and poke at any cornstarch lumps until the sauce is smooth again.
  • Cook for 2 minutes or until thickened, stirring constantly. Add parmesan cheese and stir just until incorperated.
  • Remove from the heat and continue stirring parmesan cheese until melted, adding salt and pepper to taste.
  • Pour over cooked and drained pasta and serve. Redfridgerate any leftovers.

  • Preheat oven to 400 degrees. Add penne noodles to a large pot, cover noodles with water. Bring to a boil over medium-high heat and boil until easily pierced with a fork. Drain and set aside.
  • Pound chicken to 1/2 inch thickness and season with salt and pepper to taste. Cook in a greased skillet over medium heat 5-6 minutes on each side until cooked through. Chop into 1 inch pieces and set aside.
  • In the skillet where you cooked the chicken (you can just wipe it out with a paper towel to get rid of any leftover tidbits from he chicken) melt the butter over medium heat. Once melted, sprinkle flour over the butter and stir til it clumps together. Gradually whisk in the milk until smooth. Stir in garlic powder and salt and pepper to taste (I used about 1 teaspoon salt and 1/4 teaspoon black pepper) Add 1/3 cup parmesan cheese and stir until melted and completely incorporated.
  • In a large bowl combine cooked penne, chicken, and the sauce and stir to combine. Transfer mixture to a greased 9x13 inch baking dish. Sprinkle with remaining parmesan cheese. Bake for 10-15 minutes until cheese is melty and begins to brown around the edges. Sprinkle with chopped parsley if desired and serve.
