1/2 lb uncooked penne pasta
1 tablespoon olive oil
1/2 cup finely chopped onion
1 teaspoon salt, divided
1/4 teaspoon crushed red pepper flakes
1 garlic clove, minced
1/2 cup vodka
1/4 cup reduced-sodium fat-free chicken broth
1 (14 1/2 ounce) can no-salt-added diced tomatoes, undrained
1/4 cup whipping cream
3 tablespoons thinly sliced fresh basil

Steps:

  • Cook the pasta according to the package directions, omitting salt and fat. Drain and keep warm.
  • Heat oil in a large nonstick skillet over medium-high heat. Add onion to pan; sauté 4 minutes or until tender. Add 1/4 teaspoon salt, pepper, and garlic; sauté 1 minute. Add vodka; bring to a boil. Reduce heat, and simmer 3 minutes or until liquid is reduced by about half. Stir in 1/2 teaspoon salt, broth, and tomatoes; bring to a boil. Reduce heat, and simmer 8 minutes.
  • Place tomato mixture in a blender. Remove center piece of blender lid (to allow steam to escape); secure blender lid on blender. Place a clean towel over opening in blender lid (to avoid splatters). Process until smooth.
  • Return tomato mixture to pan; stir in cream. Cook 2 minutes over medium heat, stirring constantly. Remove from heat. Stir in cooked pasta, remaining 1/4 teaspoon salt, and basil. Serve immediately.

1/2 cup olive oil
1 cup finely chopped onion
3 garlic cloves, finely chopped
1/2 cup finely chopped celery
1/2 cup finely chopped carrot
5 fresh basil leaves, finely chopped
2 (32 ounce) cans crushed tomatoes
2 bay leaves
3 tablespoons butter
1 cup vodka
1/2 cup heavy whipping cream, at room temperature
1/2 cup grated parmesan cheese
1 lb whole wheat penne
salt and pepper

Steps:

  • Heat oil over medium heat in large saucepan. Add onion, garlic, celery, and carrots. Saute until soft, about 6-8 minutes. Add basil, tomatoes, and bay leaves. Season with salt and pepper. Reduce to low heat, cover, and simmer for 1 hour. Add butter, and remove bay leaves.
  • Process sauce in blender or food processor, in batches, until smooth.
  • Add vodka to tomato sauce and simmer or low for an additional 30 minutes. Sauce will reduce and thicken. Stir in cream and Parmesan and simmer until cheese is melted and sauce blended.
  • Cook pasta to al dente in boiling, salted water. Drain and transfer to large bowl. Pour sauce over cooked pasta and toss. Serve immediately.

This is the perfect dinner for one! Not to mention ultra easy and healthy, LUMP-FREE, as well as easily doubled for more! Paired with some garlic toast or a salad, you will have a very wonderful dinner! This sauce is flexible in the additives your add, and also works great with stuffed pasta, though my personal favorite is making this with sharp cheddar, and just pouring this over macaroni! My favorite cheese otherwise in this is freshly grated parmesan. Yumm!

1/2-2/3 cup whole wheat pasta
3 tablespoons skim milk
1 tablespoon nonfat sour cream
1 teaspoon whole wheat flour
2 tablespoons grated low-fat cheese
salt
pepper
chicken
1 dash nutmeg
garlic

Steps:

  • Boil water then add noddles in, cooking until desired softness.
  • In the meantime, pour all the sauce ingredients into a sauce pan, heating at medium heat.
  • Mix until all ingredients are incorporated before allowing to simmer and thicken, stirring often until at desired thickness and cheese is melted and incorporated. Add more milk to simmer if you wish a thinner sauce. Add more cheese to taste if you prefer.
  • Drain pasta and pour sauce over pasta. Enjoy!

1 cup bow tie pasta, uncooked
1/3 cup onion, diced
1/2 cup tomato sauce
1/4 cup vodka
2 tablespoons butter, divided
1 teaspoon olive oil
1 teaspoon garlic, minced
1/8 teaspoon dried basil

Steps:

  • Cook the pasta in at least 2 quarts of salted water according to package instructions. Drain.
  • Melt one tablespoon of butter with the olive oil in a sauce pan, and then saute the onion until transparent.
  • Mix the tomato sauce and vodka, together and add to the pan that has been removed from the heat. Return the pan to the heat, stir and then add the garlic and basil.
  • When the sauce starts to bubble, turn the heat to low, add the second tablespoon of butter and continue to cook over low heat until the sauce thickens.
  • Add the pasta to the pan and toss to coat.
  • If desired, grated Parmesan cheese can be added after the pasta has been plated.

1/4 lb bacon, chopped (about 5 strips)
1/3 cup vodka
1 1/2 cups tomato sauce
1/2 cup heavy cream

Steps:

  • Melt butter over moderate heat.
  • Add bacon and cook until lightly browned.
  • Remove pan from heat and add vodka.
  • Return to stove and cook until reduced by half.
  • Add tomato sauce and cream.
  • Simmer uncovered, stirring occasionally, about 10 minutes.

2 garlic cloves
1 large shallot
1/2 cup onion
2 tablespoons olive oil
1 (14 1/2 ounce) whole tomatoes, drained
3 fresh tomatoes, chopped
1 teaspoon crushed red pepper flakes
salt
1/2 cup heavy cream
1/4 cup vodka
1 tablespoon all-purpose flour (if necessary for thickening)
chopped fresh basil (optional)
parmesan cheese (optional)

Steps:

  • In a saucepan saute garlic, shallots and onion in olive oil, about 5 minutes. Add canned tomatoes, fresh tomatoes, crushed red pepper and salt. Stir, breaking up tomatoes and cook on medium to high heat for about 10 minutes. Add heavy cream and vodka; stir. Cook for an additional 5-10 minutes. If the mixture needs thickening, quickly stir in 1 tablespoon flour; cook until thick. Keep heated until serving.
  • Serve over cooked penne, rigatoni or pasta of your choice. Also, great spooned over chicken or pork cutlets. Dust with parmesan cheese.
