Steps:
- 1. Preheat the oven to 325°F. Mix the flour, baking powder, and salt together in a large bowl. Add the butter and use your fingers to pinch the butter and the flour mixture together; when it's all combined, it will resemble large bread crumbs.
- 2. Use a wooden spoon to mix in the brown sugar and raisins, and then add the buttermilk. If the dough is quite sticky, add more flour, 1 tablespoon at a time, until the dough has the texture of modeling clay. If it's too dry, add more buttermilk, 1 tablespoon at a time, until it's wet enough.
- 3. Turn the dough out onto a floured work surface and roll it out into a rectangle 1/4 inch thick. Cut the dough into 12 (3-inch) squares. Leftover scraps can be rerolled to make more scones.
- 4. Oil a baking sheet. Fold each square of dough in half diagonally to form a triangle, and lay it on the sheet. Bake the scones until the tops are golden brown, about 30 minutes. Serve warm, with jam and a pot of hot tea if you like.
WHOLE WHEAT CRANBERRY SCONES
With a biscuit-like texture, these sweet scones are wonderful spread with butter or jam. Serve them alongside a medley of berries at your next holiday brunch...or enjoy them as an afternoon snack with a hot cup of tea.

- In a large bowl, combine the flours, sugar, baking powder, baking soda, salt and nutmeg; cut in butter until crumbly. In a small bowl, combine the egg, yogurt and vanilla; stir into dry ingredients just until moistened. Stir in cranberries. Turn onto a floured surface, knead 6-8 times. , Divide dough in half. Transfer each portion to a greased baking sheet. Pat into an 8-in. circle. Cut each circle into 8 wedges, but do not separate. Brush with milk; sprinkle with cinnamon-sugar. Bake at 400° for 15-20 minutes or until golden brown. Serve warm.

- Preheat the oven to 400 degrees F (200 degrees C). Grease a baking sheet.
- Mix both flours, brown sugar, baking powder, and baking soda together in a large bowl. Cut in butter with a pastry blender until dough is loose and crumbly. Add bananas and cut in with the pastry blender. Stir in milk and eggs until just combined; dough will be sticky but should come together into a ball.
- Divide dough in half. Form each portion into a mound on one half of the prepared baking sheet, then pat to flatten into a 3/4- to 1-inch high circle. Use a sharp knife to score each circle into 8 wedges, cutting about 1/3-inch deep.
- Bake in the preheated oven until golden brown, 15 to 17 minutes. Remove from the oven and break scones apart at the score lines.

SAVORY WHOLE WHEAT, SPINACH, AND CHEDDAR SCONES

- Position a rack in the middle of the oven. Preheat the oven to 425°F. Line a baking sheet with parchment paper.
- Combine the flour, baking powder, and salt in a large mixing bowl and set aside.
- Whisk the honey and cream in a separate bowl until smooth.
- Stir together the spinach and Cheddar cheese in a small bowl and set aside.
- Whisk the cream mixture into the flour mixture. Stir in the spinach mixture until smooth. Don't overmix the dough. It's okay if a few lumps of dry ingredients are visible.
- Turn out the dough onto a lightly floured work surface. Knead the dough very briefly, about 30 seconds, just until it sticks together. There should be as little handling as possible. Gently form the dough into a ball and lightly dust it with a little flour. Sprinkle a little more flour on the work surface and using a floured rolling pin, roll out the dough into a 1-inch-thick round that is 8 to 9 inches in diameter.
- Cut the dough into desired shapes. Gather up the scraps, reroll them, and cut out more scones until the dough is used up. Pat the scones lightly to smooth the tops.
- Place the scones about 2 inches apart on the prepared baking sheet. Bake the scones for 12 to 14 minutes, or until the tops spring back when pressed lightly and they are golden brown on the top and bottom.
- Remove the scones from the oven and cool for 5 minutes on the baking sheet. Transfer the scones to a wire rack to cool for at least 5 minutes before serving.
ROYAL CHERRY SCONES
Royal cherry scones were on the breakfast table each and every morning while in New Zealand. I asked if I may have the recipe, and the chef said to just follow any scones recipe and add fresh cherries at the end of the recipe. This is my own recipe. I hope you enjoy my delicious homemade scones.

- Preheat the oven to 450 degrees F (230 degrees C). Place a baking sheet in the oven to warm.
- Rub 1/4 cup butter into flour in a bowl until mixture resembles fine bread crumbs. Stir in sugar. Stir cherries into flour mixture until evenly distributed; mix in wheat germ.
- Mix milk into dough and knead lightly until just smooth. Roll out on a lightly floured surface to approximately 3/4-inch thickness. Stamp out crescent shapes using a 2 1/2-inch fluted cutter, kneading, re-rolling, and cutting dough until it is all used up.
- Place scones on the preheated baking sheet; brush tops with 2 tablespoons milk.

- Preheat oven to 375.
- Stir together flours, sugar, baking powder and baking soda. Cut in butter.
- Stir in oats and orange zest. Place frozen cherries in a food processor and coarsely chop; set aside.
- Make well in center of dry ingredients. Add buttermilk (or yogurt) and vanilla.
- Stir several times; add chopped cherries, stirring until all ingredients are combined.
- Knead 10 to 12 times. Chill 30 minutes or longer.
- Pat dough into 10-inch circle approximately 1/2-inch thick. Brush dough with beaten egg white.
- Cut into 10 pie wedges. Place scone wedges approximately 1-inch apart on greased cookie sheets.
- Bake in 15 to 20 minutes, or until light golden brown.

- Combine flour, sugar, baking soda, baking powder and salt in a large mixing bowl.
- Cut frozen grated butter into the flour mixture until well combined.
- Combine egg, buttermilk and vanilla, and mix into the dry ingredients until dough forms.
- Fold in the chopped cherries.
- Turn out the dough onto a lightly floured surface.
- Knead lightly and shape into a 10-inch circle.
- Cut into wedges place on a greased cookie sheet.
- Bake at 375 degrees for 16 to 19 minutes or until golden brown.
- Dust with powdered sugar.
- Serve warm.
