BUCKWHEAT OAT WHOLE WHEAT BREAD

Buckwheat Oat Whole Wheat Bread image

My family has a real love affair going with this one. So far, the loaf has not survived to see room temperature--we scarf the whole thing while it's still warm. It would be great for toast or sandwiches....but so far it hasn't made it long enough to see those iterations. It's a dense loaf, but not heavy, and has a certain natural sweetness and toothiness to it that is really seductive. Prep time includes time for rising.

Time 2h35m

Yield 12 slices, 12 serving(s)

Number Of Ingredients 13

1 tablespoon instant yeast
1 1/4 cups water
2 tablespoons applesauce
3 tablespoons barley malt syrup
2 2/3 cups whole wheat flour
2/3 cup rolled oats (processed to an oat flour)
2/3 cup rolled oats
2/3 cup buckwheat flour
4 tablespoons vital wheat gluten
3 tablespoons oat bran
1/2 teaspoon lecithin granules
2 teaspoons salt
4 tablespoons powdered milk

Steps:

  • 1. Warm the water in the microwave--it shouldn't be so hot you can't stick your finger in it. Add the other wet ingredients and set aside while you assemble the dry ingredients.
  • 2. Combine dry ingredients.
  • 3. Add wet ingredients to dry ingredients, knead by mixer approximately 4 minutes.
  • 4. Form dough into a ball and cover with a towel. Let rise 40 minutes in a warm spot.
  • 5. Shape dough into a loaf and place in a loaf pan that's been sprayed with oil or nonstick spray. Cover with a towel.
  • 6. Preheat oven to 400 degrees while the loaf rises for 25 minutes.
  • 7. Bake loaf at 25 minutes at 400 degrees. Then turn oven off and let loaf continue to sit in the oven another 10 minutes.
  • 8. Remove from oven, remove loaf from pan, and put on a cooling rack.
  • 9. Good luck trying to wait until it cools. This is really good warm.

WALNUT WHOLE WHEAT BREAD

Walnut Whole Wheat Bread image

This 100% whole wheat bread, moist and tender, has the nutty taste of both the wheat itself, and walnuts. It's great for sandwiches, or try it toasted and spread with jam at breakfast -- delicious!. From King Arthur Flour, Prep time includes rising time.

Categories     Yeast Breads

Time 3h5m

Yield 1 loaf

Number Of Ingredients 7

2 teaspoons instant yeast (or 1 packet active dry yeast)
1 1/4-1 1/3 cups water (start with the smaller amount)
1 tablespoon vegetable oil
2 tablespoons brown sugar or 2 tablespoons honey, firmly packed
3 cups whole wheat flour (or White Whole Wheat)
1 1/4 teaspoons salt
3/4 cup toasted walnuts (finely chopped or crushed)

Steps:

  • The recipe directions are written for instant yeast; to use active dry yeast, dissolve it in the water first. Also, be aware that your rising times will be longer.
  • Mixing In a large bowl, combine all of the ingredients and stir till the dough starts to leave the sides of the bowl. Transfer the dough to a lightly floured or lightly greased surface, and knead it for 6 to 8 minutes, or until it begins to become smooth and supple. (You may also knead this dough in an electric mixer or food processor, or in a bread machine set to the dough or manual cycle). Transfer the dough to a lightly greased bowl, cover the bowl, and allow the dough to rise till puffy though not necessarily doubled in bulk, about 1 to 2 hours, depending on the warmth of your kitchen.
  • Shaping Transfer the dough to a lightly oiled work surface, and shape it into an 8-inch log. Place the log in a lightly greased 8 1/2 x 4 1/2-inch loaf pan, cover the pan loosely with lightly greased plastic wrap, and allow the bread to rise for about 90 minutes, until it's domed about 1 inch above the edge of the pan. A finger pressed into the dough should leave a mark that rebounds slowly.
  • Bake the bread in a preheated 350°F oven for about 35 to 40 minutes, until it's light golden brown. Test it for doneness by removing it from the pan and thumping it on the bottom (it should sound hollow), or measuring its interior temperature with an instant-read thermometer (it should register 190°F at the center of the loaf.) Remove the bread from the oven, and cool it on a wire rack before slicing. Store bread in a plastic bag at room temperature.

WHOLE WHEAT BANANA WALNUT BREAD WITH COCONUT OIL

Whole Wheat Banana Walnut Bread With Coconut Oil image

I altered the Starbucks banana bread recipe to include my favorite substitutions and made it extra "banana-y". The whole wheat flour makes it healthier, the agave lowers the glycemic index, and the coconut oil and extra banana helps this "healthy" version taste better.

SEEDED WHOLE WHEAT BREAD

Seeded Whole Wheat Bread image

I was looking for a bread recipe that combined the things I liked and couldn't find anything. So I finally decided to come up with one myself. For a first try it came out pretty darn good.

Categories     Breads

Time 1h25m

Yield 2 loaves, 24 serving(s)

Number Of Ingredients 15

1/4 cup multi-grain cereal
1/2 cup boiling water
1/4 cup non-fat powdered milk
1/2 tablespoon sea salt
1 tablespoon butter
2 tablespoons olive oil
1 tablespoon yeast
1 1/2 cups warm water
2 tablespoons sugar
1/4 cup wheat bran
2 tablespoons flax seeds
3 tablespoons pumpkin seeds
3 tablespoons sunflower seeds
1 1/2 cups whole wheat flour
2 1/2-2 3/4 cups white bread flour

Steps:

  • Combine first 6 ingredients, mix well. Let set until lukewarm.
  • Mix yeast with warm water and sugar. Let set until bubbly.
  • In mixing bowl combine cereal mixture, yeast mixture and all of the remaining ingredients except the bread flour.
  • Using paddle attachement mix for 3-4 minutes. Change to dough hook and add bread flour. Mix for 3-4 minutes. The dough will be a little sticky. Turn out onto floured counter and knead for 3-4 minutes, adding bench flour only to prevent sticking.
  • Place in greased bowl. Cover and let raise until double. Punch down, divide in half, form loaves and place in bread pans. Cover and let raise 30-40 minutes. Bake 375 degrees 25-30 minutes, until bottom of pan "hisses" when touched quickly with damp finger tip. Remove from pans, let cool on cooling rack.

BUCKWHEAT FRUIT BREAD
