This is a great way to use bananas that are too ripe to eat on their own. Serve with candied pecans or walnuts and real maple syrup.

1 cup all-purpose flour
¾ cup whole wheat flour
1 tablespoon baking powder
¼ teaspoon kosher salt
1 ½ cups milk
1 cup mashed overripe bananas
½ cup canola oil
2 eggs
½ teaspoon vanilla extract

Steps:

  • Preheat a waffle iron according to manufacturer's instructions. Grease the inside of the waffle iron.
  • Mix all-purpose flour, whole wheat flour, baking powder, and salt together in a bowl. Whisk milk, bananas, canola oil, eggs, and vanilla extract together in a separate bowl; stir into flour mixture until batter is moistened with a few lumps.
  • Spoon about 1/4 cup batter into preheated waffle iron and cook according to manufacturer's instructions.

Delicious! I estimated the measurements by checking out various recipes for other non-vegan waffles and subbed the eggs for mashed banana and the flavor was wonderful. Best with fresh berries and real maple syrup.

1 1/2 cups white flour
1 1/2 cups whole wheat flour
1/4 cup flax seed
2 tablespoons sugar
1 tablespoon baking powder
1 teaspoon salt
3 cups soymilk
1 large banana, mashed (about 1 cup)
1/4 cup canola oil
2 teaspoons vanilla extract

Steps:

  • In a large bowl, mix together the dry ingredients. In a large measuring cup, mix the wet ingredients. Pour the wet into the dry and blend using a hand mixer on a low setting until you get a smooth batter.
  • Heat a waffle iron and spray with oil. Pour in the batter and cook until it stops steaming and the waffles are browned.

Steps:

  • Preheat waffle iron. In a large mixing bowl, sift together flour, baking powder, salt and nutmeg. Stir in milk and eggs until mixture is smooth.
  • Spray preheated waffle iron with non-stick cooking spray. Pour two tablespoons of the waffle batter onto the hot waffle iron. Place two slices of banana on top of the batter and then spoon another two tablespoons of batter on top of the banana. Cook until golden brown. Serve hot.

1 cup all-purpose flour
3/4 cup whole wheat flour
1 tablespoon baking powder
1/4 teaspoon salt
2 egg yolks
1 1/2 cups milk
2/3 cup mashed ripe banana
1/2 cup cooking oil
2 egg whites
1/8 teaspoon nutmeg

Steps:

  • Combine flour, baking powder, nutmeg, and salt in one bowl.
  • In another bow, beat egg yolks slightly. Beat in milk, bananas, and oil.
  • Add egg mixture to flour mixture all at once. Stir just till combined but still slightly lumpy.
  • In small bowl, beat egg whites until stiff peaks form.
  • Gently fold beaten egg whites into flour mixture, leaving a few puffs of egg white. Do not overmix!
  • Pour batter onto pre-heated, lightly greased waffle maker.
  • Bake waffles according to manufacturer's directions.
  • Serve hot and fresh. I topped mine with butter and syrup, and they were delicious!
