HEALTHY APPLESAUCE COOKIES
This Healthy Applesauce Cookie recipe is delicious & easy! Your kids can help you make & devour the cookies! They're great for a busy morning breakfast too.

Steps:
- Preheat the oven to 325 degrees. In a large bowl, add the applesauce, coconut oil, egg, and honey, and mix to combine well.
- Add the oats, whole wheat flour, baking soda, salt, and cinnamon. Stir to combine well. Add the chocolate chips and stir to combine.
- Refrigerate the dough for 10 minutes (this give the oats a little time to absorb some of the liquid).
- Use a cookie scoop or two spoons to place a rounded tablespoon of dough on a parchment or baking mat lined cookie sheet.
- Bake for 11-13 minutes, until the edges of the cookies are lightly browned and the center is set.
- Remove from the oven and let the cookies cool on the sheet for 5 minutes.

Steps:
- Preheat the oven to 375 degrees F and line a baking sheet with parchment paper.
- Stir the ingredients together in a medium bowl. The batter will be fairly thick and sticky.
- Use a 1 tablespoon spoon to portion out batter onto the prepared baking sheet, placing batter about 1 inch apart. Press down slightly so the cookies are about 1/2 inch thick.
- Bake for 12-14 minutes or until firm to the touch and lightly golden brown around the edges.
- Remove from oven and let cool on the pan. Serve warm or at room temperature.

- Combine the flour, cinnamon, baking powder, baking soda, and salt in one bowl.

- Drop rounded teaspoons of the dough onto a baking sheet.

- Cream sugar and shortening until well blended.
- Stir in egg, and beat until smooth.
- Combine applesauce and baking soda, and add to mixture. Set aside.

- Stir in egg mixture and blend well.

- Whisk oats, flour, baking powder, cinnamon, and kosher salt together in a large bowl.
- Combine honey, applesauce, butter, egg, and vanilla extract in a medium bowl. Whisk until blended. Pour into the bowl with the flour mixture; stir until just combined. Fold chocolate chips and walnuts into the batter.
- Place batter in the refrigerator and let chill at least 30 minutes or up to 3 days.
- When ready to bake, preheat the oven to 350 degrees F (175 degrees C) and place a rack in the center. Line a large, rimmed baking sheet with parchment paper or a silicone baking sheet.
- Remove chilled dough from the refrigerator. Let sit for 5 to 10 minutes if very stiff.
- Drop dough onto the prepared baking sheet in 1 1/2-inch balls using a cookie scoop or spoon, leaving 1 inch of space around each. Gently flatten each cookie with your fingers to 3/4-inch thick.
- Bake in the preheated oven until golden, firm around the edges, and set on top, 9 to 10 minutes.
- Place the baking sheet on a wire rack. Let cool on the baking sheet for 2 minutes before transferring cookies to the wire rack to cool completely.
