½ cup olive oil
2 ½ tablespoons fresh lemon juice, or more to taste
5 cloves cloves garlic, minced or pressed through a garlic press
1 tablespoon brown sugar
1 teaspoon dried oregano
1 teaspoon dried thyme
salt and freshly ground black pepper to taste
aluminum foil
1 teaspoon olive oil
1 (3 pound) salmon fillet
¼ cup chopped fresh parsley
1 lemon, sliced

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Combine 1/2 cup olive oil, lemon juice, garlic, brown sugar, oregano, thyme, salt, and pepper in a bowl.
  • Place a large piece of aluminum foil on a baking sheet and brush with olive oil. Place salmon in the middle of the foil, skin-side down. Drizzle with olive oil mixture. Fold up the edges of the foil over the salmon to create a packet, making sure to seal the edges.
  • Bake in the preheated oven until fish flakes easily with a fork, 20 to 25 minutes. If your salmon fillet is very thick, it can take longer. Garnish with fresh parsley and lemon slices.

Salmon is such a fantastic fish, it really doesn't need much help at all to be delicious, but I'm a sucker for lovely fresh herbs and I couldn't resist - plus they make the fish look pretty good, too!

1 x 2.5 kg whole salmon, scaled, gutted, from sustainable sources
1.5 kg re-skinned potatoes
1 bulb of fennel
olive oil
½ a bunch of fresh dill
½ a bunch of fresh flat-leaf parsley
½ a bunch of fresh tarragon
1 lemons
extra virgin olive oil

Steps:

  • Preheat the oven to full whack.
  • Get yourself a large roasting tray that your whole salmon will fit inside - you'll probably need to lay the fish diagonally across the tray, like I've done in the picture -it won't matter if the head and tail drape over the sides a little.
  • Scrub the potatoes clean, then slice into ½ cm rounds. Lay them over the base of the tray and season well with sea salt and black pepper. Cut the fennel into six wedges, scatter over the potatoes and give it all a generous drizzle of olive oil.
  • Pick half the herb leaves onto a chopping board, .finely grate over the lemon zest, then roughly chop everything together. Scrape this mixture into a bowl.
  • Using a sharp knife, make 6 slashes on each side of the fish, about 2cm deep and at an angle.
  • Sprinkle salt and pepper into each incision, stuff each with a pinch of the lemon-herb mix, then smooth flat. Drizzle the fish lightly with olive oil, then lay on top of the potatoes and fennel.
  • Slice up one of the lemons, then stuff into the cavity with the remaining herbs.
  • Bake the fish in the screaming hot oven for 15 minutes, then turn the temperature down to 180ºC/350ºF/gas 4 and cook for a further 30 minutes.
  • To check if the fish is cooked, take a clean skewer and push it into the deepest part of the fish, just behind the head. Count to 10, then carefully take the skewer out and hold it against your top lip -if it's nice and warm, the fish is cooked.
  • Squeeze the juice from the remaining lemon over the top, drizzle with a little extra virgin olive oil.. Delicious served with a bowl of steamed seasonal greens.

I recently got hooked on the whole foil cooking method for fish and have been scouring the internet to add more of these to my arsenal of delicious, moist and super tasty fish recipes. Here's a true winner! Super healthy, super moist, super delicious. We love it. Even my 2 and 4 year old. I HIGHLY recommend you use fresh tomatoes in this recipe rather than the optional canned. MUCH better flavor. NOTE: I USE THIN FILLETS AND WOULD ONLY COOK ABOUT 15 MINUTES IF USING THIN FILLETS.

3/4 cup white wine or chicken broth
3/4 cup chopped celery leaves
1 small onion, finely chopped
2 lemon slices
8 fresh basil leaves
2 teaspoons dried tarragon
1 teaspoon dried rosemary, crushed

1 whole salmon (about 10 pounds)
1-1/2 teaspoons salt
WINE SAUCE:
2 green onions, chopped
1/2 cup butter
6 tablespoons all-purpose flour
2-1/3 cups water
2-1/3 cups white wine or chicken broth
2 egg yolks, lightly beaten
1/2 cup heavy whipping cream
Salt and pepper to taste

Steps:

  • In a saucepan over medium heat, combine the first eight ingredients. Bring to a boil. Reduce heat; simmer, uncovered, for 30 minutes., Remove head and tail from salmon if desired. Place a double thickness of heavy-duty foil on a baking sheet (longer than the length of the fish). Grease foil. Place salmon on foil; sprinkle the cavity with salt. Pour herb sauce over fish. Fold foil over fish and seal tightly. , Bake at 375° for 60-75 minutes or until fish flakes easily with a fork., Place salmon on a serving platter and keep warm. Strain cooking juices, reserving 1/3 cup. In a large saucepan, saute green onions in butter until tender. Stir in flour until blended. Gradually stir in the water, wine and reserved cooking juices. Bring to a boil; cook and stir for 2 minutes or until thickened., Reduce heat. Stir a small amount of hot liquid into egg yolks; return all to the pan, stirring constantly. Add the cream, salt and pepper. Cook and stir until mixture reaches 160°. Serve with the salmon.

1 cup thinly sliced carrot
1 cup thinly sliced onion
1/4 cup thinly sliced shallots

1 clove garlic, unpeeled and crushed
1 bay leaf
2 cups dry white wine

Steps:

  • Preheat oven to 400 degrees.
  • Select a baking sheet large enough to accommodate the fish.
  • Lay out a long double length of heavy-duty aluminum foil on top of the baking sheet. Place the cleaned salmon in the center of the foil and add the carrot, onion, shallots, celery, thyme, salt to taste, peppercorns, garlic, bay leaf and wine. Bring up the edges of the foil and seal as compactly and tightly as possible.

3 pound whole Atlantic or Pacific salmon
1 handful fresh thyme
1 handful fresh oregano
6 cloves, fresh garlic, smashed open
1 teaspoon sea salt
1/2 teaspoon crab boil seasoning (recommended: Old Bay)
1/4 cup olive oil
Heavy duty aluminum foil
Cooling rack

Steps:

  • Preheat the oven to 400 degrees F.
  • With aluminum foil, line large sheet pan (11.5 by 15-inches) so it completely covers the tray. Leave about 12 to 14 inches of excess foil extended over the tray so you can later wrap the fish. Place the cooling rack on the foiled tray allowing for the fish to be elevated.
  • Make sure the salmon is fully rinsed and patted dry. With your hands, rub olive oil around the outside and inside cavity of the salmon. In a small mixing bowl, add the thyme, oregano, garlic, sea salt, and crab boil seasoning. Mix together until incorporated. Rub the inside and outside of the salmon with the herb mixture. Place salmon on the cooling rack and then cover fish completely with the excess aluminum foil. Place into the oven for 15 minutes.
  • Check to see if fish is tender by opening the foil and looking inside the cavity. If there is a light pink color, the fish is ready to serve. If not, keep in the oven for an additional 5-7 minutes maximum. Once salmon is a light pink color, remove from the oven, cut open aluminum foil.
  • To serve, slide a serving spatula between the meat and the bone of the fish. Scoop out and serve.

FOIL-POACHED SALMON WITH DILL & AVOCADO MAYO

3 ½kg whole salmon (ask your fishmonger to clean and gut it)
olive oil , for greasing
1 small onion , very thinly sliced
4 bay leaves
20g pack dill
6 tbsp dry white wine
3 ripe avocados , preferably Hass
200ml mayonnaise
zest and juice 1 large lemon
½ cucumber , peeled, deseeded and diced
bunch watercress , lemon wedges, thick cucumber slices, fresh dill (optional)

Steps:

  • Heat oven to 150C/fan 130C/gas 2. Put the salmon on a large sheet of oiled extra-wide foil (this will stop it from sticking later). Put the onion, bay leaves and half the dill in the body cavity, spoon over the wine, season with salt and black pepper, then loosely bring the foil round the salmon and seal well to make a parcel. Lift onto a baking tray, then bake for 2 hrs. Take from the oven, then leave to cool for about 10 mins, still in its parcel.
  • Meanwhile, whizz the flesh from the avocados (with a hand blender or in a food processor) with the mayo, lemon juice, zest and seasoning. Tip into a bowl. Chop the remaining dill, stir in with the cucumber, then transfer to a serving bowl. Chill for up to 3 hrs.
  • Unwrap the salmon, then strip away the skin and fins. Personally, I don't take the skin from the bottom of the fish if I am serving the salmon warm, as you risk breaking the fish up as you turn it over. It is more robust when it is cold, so in this case remove the skin from both sides. You can leave the head on or take off at this stage. Carefully lift onto a platter, then garnish with watercress, cucumber, lemon wedges and dill, if using.
  • To serve, remove the fish in chunky fillets. When all the fish has gone from the top fillet, remove the onion and herb flavouring, pull away the bones, then remove portions of the bottom fillet, leaving the skin behind. Eat with the avocado mayo, warm buttery new potatoes, and salads or green beans.

Steps:

  • Position a rack in the middle of the oven. Preheat oven to 375°F | 190°C. Line a baking tray / sheet with a large piece of foil, big enough to fold over and seal to create a packet (or 2 long pieces of foil over lapping each other lengthways to create your salmon packet, depending on the width of you fillet).
  • In a small saucepan, melt the butter over low-medium heat. Add the honey, garlic and lemon, and whisk until the honey has melted through the butter and the mixture is well combined.
  • Place the salmon onto lined baking tray | sheet. Pour the butter/honey mixture over the salmon, and using a pastry brush or spoon, spread evenly over the salmon. Sprinkle with a good amount of salt (about 2 teaspoons) and cracked pepper. Fold the sides of the foil over the salmon to cover and completely seal the packet closed so the butter does not leak.
  • Bake until cooked through (about 15-18 minutes, depending on the thickness of your fish and your preference of doneness). Open the foil, being careful of any escaping steam, and grill / broil under the grill / broiler for 2-3 minutes on medium heat to caramelise the top. Garnish with parsley and serve immediately with lemon slices.

Foil-baked Whole Fresh Salmon with Green Herb Mayonnaise image

The way I cook a salmon is extremely slowly, wrapped in foil in the oven. I cannot recommend this method highly enough. With skin and bones, head and tail intact there is not only a captured concentration of flavours, but also a guaranteed succulent moistness that no other cooking method can produce. It's also probably the easiest thing to cook for a large number of people with absolutely no hassle. The best accompaniment is a sweet, very green mayonnaise flavoured with summer herbs, which I think is best made the day before, if possible, to allow the flavours to develop. This recipe is for a 4 lb (1.8 kg) salmon. For other weights of salmon, the cooking times are: for 2 lb (900 g) 1½ hours; for 3 lb (1.3 kg) 2 hours; for 5 lb (2.25 kg) 3 hours. Unfortunately, the gas equivalent of 250°F (130°C), which used to be gas mark ½, no longer exists. So, if you use a modern gas cooker that begins at gas mark 1, give the fish 25 minutes less cooking time.

4 lb (1.8 kg) fresh whole salmon
2 oz (50 g) butter, plus extra for buttering the kitchen foil
1 small onion, peeled and thinly sliced
3 bay leaves
4 sprigs tarragon
salt and freshly milled black pepper
2 eggs
1 tablespoon snipped fresh chives
1 tablespoon lemon juice (or more to taste)
salt and freshly milled black pepper
2 level teaspoons mustard powder
1 fat clove garlic, peeled
½ pint (275 ml) groundnut oil
2 dessertspoons white wine vinegar
3 oz (75 g) fresh spinach leaves
1½ oz (40 g) watercress leaves
1½ oz (40 g) flat-leaf parsley leaves
2 tablespoons fresh tarragon, chopped

Steps:

  • First make the mayonnaise. Break the whole eggs straight into the goblet of a blender or food processor, sprinkle in the mustard powder and add the garlic clove and 1 level teaspoon salt. Then measure the oil into a jug, then switch the machine on. To blend everything thoroughly, pour the oil in a thin, very steady trickle with the motor running. You must be very careful here - too much oil in too soon means the sauce will curdle. When all the oil is in, add the white wine vinegar and blend. Then switch off and season to taste with salt and freshly milled black pepper. You can also watch how to make mayonnaise in our Cookery School Video on this page. Now rinse the spinach, watercress and parsley under cold water and put these into a medium saucepan. With the heat turned to medium, stir the leaves around until everything has just wilted, then tip them into a colander and rinse under cold water to keep the colour. Now squeeze out the excess moisture very carefully, thoroughly pressing and squeezing with a wooden spoon. Then transfer the cooked leaves to the mayonnaise in the blender with the chopped tarragon and chives and whiz until smooth and green. There will be some fine specks but that's okay. Now do a bit of tasting and season with lemon juice, salt and pepper. When you are ready to cook the salmon, preheat the oven to 250°F (130°C) - see introduction for important information about the gas mark. Start by wiping the fish with some damp kitchen paper, then place it in the centre of a large double sheet of foil, generously buttered. Put half the butter, the onion slices, bay leaves and tarragon sprigs into the centre cavity of the fish, along with a seasoning of pepper and salt. The rest of the butter should be smeared on top. Now wrap the foil over the salmon to make a loose but tightly sealed parcel. Then place the foil parcel on a large baking sheet, diagonally so that it fits in the oven. If it seems a bit long bend the tail end upwards and then bake in the centre of the oven for 2½ hours. After the 2½ hours, remove the salmon from the oven and allow it to cool completely before serving. (It's best not to open the foil.) To serve, the skin will come off very easily if you first make a horizontal slit all along the middle of the salmon. Then just ease the fillets away from the bone. Serve with the sauce, some crisp dressed salad leaves, such as Cos lettuce, and cucumber, and hot buttered new potatoes or potato salad. Note: this recipe contains raw eggs

1 tablespoon oil or 1 tablespoon softened butter
1 onion, sliced (optional)

Steps:

  • Lay a piece of silver foil, large enough to wrap the salmon in a very loose parcel, on a baking tray.
  • If the salmon is to be served hot, grease the foil with the butter, or use the oil if serving the salmon cold.
  • Thinly slice the lemon and put about half on the foil.
  • Put the salmon on top, with a few slices of lemon inside with onions, if using, and lay the rest of the lemon along the top of the salmon.
  • Season generously and wrap loosely, making sure the edges are securely folded together so that no steam can escape.
  • Put into a medium oven, 450F (180C), for 10 minutes per pound.
  • If serving hot, take it out of the oven and let it stand for a further 10 minutes.
  • If serving cold, leave the salmon in the foil for two to three hours.
  • To serve: Unwrap the fish and gently pull off the skin.

1 4-pound whole salmon with head and tail, scaled
6 green onions, chopped
5 tablespoons fresh lemon juice
2 tablespoons olive oil
1/3 cup dry white wine
10 whole black peppercorns
Paper-thin cucumber slices
Lemon wedges
Fresh dill sprigs

Steps:

  • Preheat oven to 325°F. Stack 2 heavy-duty foil sheets on large baking sheet. Place fish on foil. Sprinkle half of green onions and 2 1/2 tablespoons lemon juice inside fish. Drizzle remaining 2 1/2 tablespoons lemon juice over fish. Drizzle oil over. Pour wine over; sprinkle with peppercorns. Sprinkle remaining green onions around fish. Bring up foil around fish, sealing tightly but leaving airspace between fish and foil. Bake fish 1 hour. Remove from oven. Open foil and let fish cool 1 hour. Reseal foil and refrigerate until cold, about 4 hours. (Can be prepared 1 day ahead. Keep refrigerated.)
  • Open foil. Carefully remove skin from fish. Scrape off any grayish flesh. Transfer fish to platter. Garnish top of fish with cucumber slices. Surround with lemon wedges and dill sprigs.

1 1/2 pounds sockeye salmon
3 tablespoons olive oil
1 tablespoon lemon juice
2 garlic cloves, minced
1 teaspoon dried parsley flakes
1/2 teaspoon sea salt
1/2 teaspoon ground black pepper
1/4 teaspoon crushed red pepper flakes
1/2 lemon, thinly sliced
optional - 1 tablespoon fresh dill for serving

Steps:

  • Preheat oven to 425 degrees F.
  • Place the salmon in a large sheet of aluminum foil on a rimmed baking sheet. Pat the salmon dry with a sheet of paper towel.
  • Combine the olive oil, lemon juice, minced garlic, parsley flakes, sea salt, black pepper, and red pepper flakes in a small bowl. Drizzle this over the salmon, trying to cover all parts of the salmon equally. Place the lemon slices on top of the salmon.
  • Cinch together the sides of the foil to close the salmon into the foil packet.
  • Bake for 10 minutes and then open the foil packet. Broil on high for 2 to 3 minutes, making sure it doesn't burn.
  • Remove the salmon from the oven and serve immediately. Top with optional fresh dill.

1/2 cup sweet chili sauce
2 tablespoons reduced sodium soy sauce
2 cloves garlic, minced
1 tablespoon fish sauce
1 tablespoon freshly grated ginger
Juice of 1 lime
1 teaspoon Sriracha, optional
2 pounds salmon
1/4 cup peanuts, chopped
2 tablespoons chopped fresh cilantro leaves

Steps:

  • Preheat oven to 375 degrees F. Line a baking sheet with foil. To make the sauce, whisk together chili sauce, soy sauce, garlic, fish sauce, ginger, lime juice and Sriracha in a small bowl; set aside. Place salmon onto prepared baking sheet and fold up all 4 sides of the foil. Spoon the chili sauce mixture over the salmon. Fold the sides of the foil over the salmon, covering completely and sealing the packet closed. Place into oven and bake until cooked through, about 15-20 minutes. Serve immediately, garnished with peanuts and cilantro, if desired.

2 pounds salmon filets (about 1 pound each, pin bones removed, with skin on or off)
⅓ cup brown sugar (lightly packed)
5 tablespoons salted butter (melted)
2 tablespoons lemon juice (about ½ large lemon)
1 ½ tablespoons dijon mustard
1 ¼ teaspoons garlic powder
¾ teaspoons onion powder
½ teaspoon salt
½ teaspoon dried thyme
2 lemons (sliced)
fresh parsley (chopped)

Steps:

  • Preheat the oven to 400°F. Place each salmon filet on a large sheet (large enough to enclose each salmon) of heavy-duty aluminum foil to bring to room temperature before baking.
  • In a small bowl, combine the brown sugar, melted butter, lemon juice, dijon mustard, garlic powder, onion powder, salt, and dried thyme. Whisk together until completely combined.
  • Pour the liquid mixture evenly over both salmon filets and top with lemon slices. Fold the edges of the aluminum foil to enclose each piece of salmon. If you need to, use another foil to wrap the salmon.
  • Place the salmon on a sheet pan before baking in the oven for 15 to 20 minutes or until the salmon is 145°F at its thickest part. (Salmon that is thicker or larger will take longer to cook.) 145°F is for well done salmon. For medium to medium-rare salmon, you would want between 125˚F and 135˚F.
  • Remove from heat and let rest for five minutes.
  • Garnish with fresh minced parsley, optional, and then plate and serve.
