SILKY WHITE FUDGE
Creamy, heavenly, rich white fudge that melts in your mouth. Nuts are optional, or use the kind that you prefer (hazelnuts are good, too!). And, try a tiny tint of red food coloring for a beautiful pink Valentine's Day candy gift! Prep time includes chilling time; yield is approximate according to the size candy is cut - remember, a little of this fudge does go a long way in satisfying your sweet tooth!

Steps:
- Butter bottom and sides of a 9x9x2 inch square pan, or line with aluminum foil.
- Heat baking chips, marshmallows and condensed milk in a saucepan over low to medium heat, stirring constantly until chips and marshmallows are melted and smooth.
- Stir in vanilla and pecans.
- Pour into prepared pan immediately, then cover and refrigerate until firm, about 4 hours.
- Cut into 1-inch squares.
- To toast pecans, toss in ungreased skillet over medium-low heat for 5 to 7 minutes, stirring frequently, until browning begins; continue until golden brown.
WHITE FUDGE (OPERA FUDGE)
A dreamy confection from Fannie Farmer posted in response to a recipe request. For best flavor, let it mellow overnight. The cooking time is approximate. From David S. in Louisville: Candies are usually stirred constantly until they come to a boil. The sugar needs to be completely dissolved before it comes to a boil. After the candy comes to a boil you need to let it boil without stirring. It's also important that the candy cool down undisturbed to the proper temperature before beating it.

Steps:
- Oil a jelly roll pan OR an 8 x 8 pan.
- Combine the sugar, cream and salt in a 3 quart heavy pot, stirring to blend well
- Place over medium heat and, stirring constantly, bring to a boil.
- Cover and let boil for 2 or 3 minutes.
- Uncover and wash down the sides of the pot with a pastry brush dipped in cold water
- Continue to boil over medium heat, WITHOUT STIRRING, until the syrup reaches the soft ball stage (234F)
- Remove the pot to a cooling rack and let cool to lukewarm (110F) WITHOUT STIRRING.
- Add the vanilla, whip until creamy, then spread in the oiled pan.
- To keep it creamy, cover the top of the candy with a damp cloth or paper towel for at least 30 minutes.
- Uncover, let set until firm and cut into squares.
- Store in airtight container.

- Line an 8-inch square baking dish with foil, leaving a 2-inch overhang on two sides; lightly butter the foil. Combine the white chocolate chips, condensed milk, butter and salt in a large microwave-safe bowl. Microwave 1 minute, then stir well. Continue to microwave in 15-second intervals until the chips are fully melted, 15 to 30 more seconds.
- Add the nuts, dried fruit and orange blossom water to the white chocolate and stir well. Pour the mixture into the prepared baking dish and spread evenly with a rubber spatula. Cover with plastic wrap and refrigerate until firm, at least 2 hours or overnight.
- Lift the fudge out of the baking dish and peel off the foil. Cut into 1-inch squares with a sharp knife.

- Like fruitcake batter, there's just enough fudge to hold the fruit and nuts together.
- Spray an 8-inch square pan with cooking spray. Fit an 8-by-16-inch sheet of foil in the pan so that you can use the foil overhang as a handle to pull fudge from the pan.
- Place cranberries, apricots, pistachios and ginger in a medium bowl. Then bring sugar, milk and salt to a full rolling boil in a medium heavy-bottomed saucepan over medium heat. Simmer, stirring constantly, until mixture thickens and starts to turn a pale caramel, about 5 minutes. Remove from heat, quickly stir in marshmallows, then chocolate, and stir vigorously until the marshmallows start to melt.
- Pour mixture into bowl with fruit and nuts; continue to mix vigorously (hands work well once mixture has cooled to warm) until fruit and nuts are evenly distributed. Press fudge into prepared pan. Refrigerate until cool and hard, about 1 1/2 hours.

This recipe is similar to one of my favorite dark fudge recipes. I'll frequently make my white fudge to give as gifts for Christmas and Valentine's Day. It's an interesting contrast to all of the darker candies-and the cream cheese gives it such a nice rich and creamy texture! My husband and I live on the farm where he was born and raised. We have five children, ranging in age from 17 to 7. I enjoy playing the organ, singing, reading, walking and may crafts.

- Line a 22cm square non-stick tin with baking parchment. Put the caster sugar, double cream and liquid glucose in a pan. Slowly heat together, stirring continually, until the sugar melts and stops feeling grainy on the bottom of the pan. Turn up the heat and fast boil until a small amount of the mixture dropped into a glass of cold water sets into a soft ball that you can pick up on a teaspoon. By this time the bubbles in the mixture will look small and even.
- Turn off the heat and keep stirring for 5 mins or until the mix starts to thicken a little. Sprinkle in the white chocolate and swirl it through the mixture once using a spatula or the handle of a wooden spoon. Pour into a tin and leave the fudge overnight to set, then turn out and cut into squares. Will keep for up to 2 months in an airtight container - don't store in the fridge or the fudge will go soft.
