Steps:

  • In a bowl, beat cream until it begins to thicken. Gradually add sugar, beating until stiff peaks form; set aside. , In another bowl, beat cream cheese until fluffy. Add chocolate and beat until smooth. , Fold in whipped cream. Alternate layers of mousse and berries in parfait glasses, ending with mousse. Garnish with additional berries if desired. Serve immediately or refrigerate for up to 3 hours.

This decadent seasonal dessert with a light, white chocolate mousse uses fresh, sweet poached rhubarb and crunchy oats to add texture as a topping

150g white chocolate
4 large egg whites
1 tbsp golden caster sugar
200ml double cream
185ml white wine (or a mini bottle)
1 tbsp golden caster sugar
1 vanilla pod , split lengthways and seeds removed
4 tall rhubarb stalks (about 375g), cut into 5cm pieces
75g jumbo oats
30g plain flour
2 tbsp golden caster sugar
50g melted butter

Steps:

  • Melt the white chocolate in a heatproof bowl over a pan of simmering water, then remove from the heat. Whisk the egg whites to stiff peaks, add the sugar and briefly whisk again. Whisk the cream to soft peaks, then fold the melted chocolate into the cream. Once incorporated, mix a spoonful of the egg whites into the cream and chocolate mix, stir well, then fold the remaining egg white mix in. Work quickly, taking care not to knock out too much air. Cover with cling film and chill in the fridge for at least 1 hr.
  • While the mousse is setting, poach the rhubarb. Pour the wine, sugar, vanilla pod and seeds, and 150ml water into a saucepan and bring to the boil. Drop in the rhubarb, turn down the heat and poach for 2-3 mins. Turn off the heat and leave the rhubarb to cool in the liquid.
  • Heat oven to 180C/160C fan/gas 3. Mix the oats, flour and sugar in a bowl and pour over the melted butter. Stir well, then tip onto a non-stick baking sheet and bake for 20 mins, tossing halfway through, until golden and crisp. Remove from the oven and leave to cool. To serve, lift the rhubarb out of the poaching liquid and spoon into serving bowls, alternating with a large scoop of the mousse and a sprinkle of the oat crumb.

1/3 cup butter or margarine, melted
2 cups sugar, divided
4 pkg. (8 oz. each) PHILADELPHIA Cream Cheese, softened
1 tsp. vanilla
4 eggs
1/4 cup plus 2 Tbsp. water, divided
1 pkg. (4 oz.) BAKER'S White Chocolate, broken into small pieces
1 cup heavy whipping cream
2 cups fresh cranberries

Steps:

  • Heat oven to 325°F.
  • Combine graham crumbs, butter and 3 Tbsp. of the sugar; press onto bottom of 9-inch springform pan.
  • Beat cream cheese, vanilla and 1 cup of the remaining sugar in large bowl with mixer until blended. Add eggs, one at a time, mixing on low speed after each just until blended. Pour over crust.
  • Bake 55 min. or until center is almost set. Run knife around rim of pan to loosen cake; cool before removing rim. Refrigerate cheesecake 4 hrs.
  • Meanwhile, bring 2 Tbsp. water and 1 Tbsp. of the remaining sugar to boil in saucepan, stirring constantly; cook and stir 1 min. or until sugar is completely dissolved. Pour over chocolate in medium bowl. Let stand 30 sec.; stir until chocolate is completely melted and mixture is well blended. Cool. Beat whipping cream in medium bowl with mixer on medium speed until soft peaks form. Fold whipped cream, in small batches, into chocolate mixture just until blended. Refrigerate 3 hrs.
  • While chocolate mousse is chilling, cook remaining 1/4 cup water and 1/4 cup of the remaining sugar in medium saucepan over medium heat 2 to 3 min. or until sugar is dissolved, stirring constantly. Remove from heat. Stir in cranberries. Use slotted spoon to transfer cranberries to wire rack; let stand 1 hr. Roll cranberries, in small batches, in remaining 1/2 cup sugar until evenly coated with sugar; place in single layer on rimmed baking sheet. Let stand at room temperature until ready to use.
  • Top cheesecake with chocolate mousse and sugared cranberries just before serving.

3 egg yolks
3 ounces imported milk chocolate (such as Lindt or Droste), finely chopped
Filling
3 tablespoons crème de cassis liqueur
1 teaspoon unflavored gelatin
1 1/4 cups chilled whipping cream
7 ounces imported white chocolate (such as Lindt or Droste), chopped
1 1/2-pint basket fresh raspberries
2 1-pint baskets strawberries, halved
2 ounces imported white chocolate for curls (optional)

Steps:

  • For Crust:
  • Combine flour, sugar and salt in large bowl. Add butter and cut in using fingertips or pastry blender until mixture resembles coarse meal. Beat egg yolks to blend in small bowl. Pour yolks over flour mixture and stir with fork to combine. Gather dough into ball; flatten into disk. Wrap dough in plastic and refrigerate 30 minutes. (Dough can be prepared 3 days ahead. Keep refrigerated. Let dough soften slightly at room temperature before continuing.)
  • Preheat oven to 375°F. Roll out dough between sheets of waxed paper to 14-inch round (scant 1/4 inch thick). Peel off top sheet of waxed paper. Using second sheet of paper as aid, invert dough into 11-inch-diameter tart pan with removable bottom. Carefully press into pan. Trim and finish edges, patching any holes with scraps. Freeze until firm about 15 minutes.
  • Line crust with aluminum foil and fill with dried beans or pie weights. Bake until sides are set, about 23 minutes. Remove beans and foil and continue baking until crust is golden brown, piercing bottom with toothpick if crust bubbles, about 12 minutes. Remove from oven. Immediately sprinkle chocolate over crust. Let stand until chocolate melts, about 4 minutes. Using back of spoon, carefully spread chocolate over bottom and up sides of crust. Cool.
  • For Filling:
  • Measure 1 tablespoon crème de cassis liqueur into heavy small saucepan; sprinkle unflavored gelatin over and let stand 5 minutes to soften. Add 3/4 cup whipping cream and stir over low heat until gelatin dissolves. Add 7 ounces white chocolate and stir until melted and smooth. Transfer to medium bowl. Refrigerate until cool but not set, stirring occasionally, about 30 minutes.
  • Whip remaining 1/2 cup whipping cream in medium bowl until soft peaks form. Add remaining 2 tablespoons crème de cassis and whip until stiff peaks form. Fold whipped cream into white chocolate mixture. Fold in raspberries. Spoon filling into crust. Refrigerate until beginning to set, about 30 minutes. Arrange strawberries atop filling, cut sides down and points toward edge. To form optional white chocolate curls, slide vegetable peeler across white chocolate. Garnish tart with chocolate curls. (Tart can be prepared 6 hours ahead. Refrigerate.)

3 egg yolks
1 cup mixed berry
6 tablespoons powdered sugar

lukewarm strong coffee

Steps:

  • Mix berries with powdered sugar and Creme de Cassis. Let stand while you prepare the rest of the dessert.
  • Bring 1 cup of heavy whipping cream to a boil.
  • Turn off heat, and add white chocolate to cream. Carefully stir until chocolate is completely melted.
  • When chocolate-cream mixture cools to room temperature, add egg yolks and beat briskly.
  • Whip the remaining 2 cups of cream, and fold into chocolate mixture.
  • Dip the Lady Fingers in the lukewarm coffee.
  • Prepare the dessert cups: place a layer of soaked lady fingers.
  • Spoon on top a layer of mixed berries. Use only the berries, without the accumulated liquid. Save the liquid for later.
  • Top with a layer of white chocolate mousse.
  • Refrigerate for at least 4-5 hours.
  • Just before serving, drizzle on top a little of the berry mixture liquid.

Easy white chocolate mousse made with cream cheese for an amazingly delicious treat that's perfect for Valentine's Day or any day!

1/2 cup whipping cream
1/2 cup chopped white chocolate or white chocolate chips
4 ounces cream cheese
1-3 tablespoons powdered sugar, divided
1/2 teaspoon vanilla extract
pinch of salt

Steps:

  • In a medium mixing bowl, beat the whipping cream at high speed until stiff peaks form. Set the bowl aside.
  • Gently melt the white chocolate in a small pot over low heat or in 30-second increments, stirring frequently, in the microwave at half-power.
  • Using the same beaters you used to beat the whipping cream, beat the cream cheese and 1 tablespoon of powdered sugar until light and fluffy.
  • Beat in the white chocolate, vanilla extract and salt on medium speed until well combined.
  • Fold in the whipped cream. If it's not combining easily, you can use the mixer to beat it in on the very lowest setting, just until combined. Do not over beat!
  • Taste the mousse and if it's not sweet enough, fold in a tablespoon or two of powdered sugar until the mousse is sweet enough for your liking.
  • Serve immediately or refrigerate for 1-2 hours for a firmer version.
  • Refrigerate any leftovers for up to 2 days.

400 g dark chocolate (50% cocoa)
100 g butter
4 egg yolks
10 egg whites
100 g heavy cream
100 g caster sugar
whipped cream (to serve)
some berries, for example strawberries
chocolate shavings

Steps:

  • Whip the cream until stiff. Set aside.
  • In another bowl, add half of the sugar to the egg yolks and whisk until pale and creamy.
  • Melt the chocolate with the butter in a double boiler (au bain-marie).
  • In another bowl, whisk the egg whites with the rest of the sugar until very stiff. (Make sure you clean and dry your whisk before you start with the egg whites).
  • Fold the chocolate into the egg yolk mixture, then fold the cream into it. Then carefully fold the egg white mixture into it, in three times. You should never stir or the mousse will lose all of it's airiness!
  • Turn the mousse into little glasses and let it cool in the refrigerator for three hours.
  • When ready to serve, top it up with some whipped cream, berries and chocolate shavings.

1 cup plus 6 tablespoons chilled whipping cream
4 tablespoons light corn syrup
3 ounces bittersweet (not unsweetened) or semisweet chocolate, chopped
Fresh mint sprigs (optional)

Steps:

  • Stir white chocolate, 1/4 cup cream and 2 tablespoons syrup in heavy small saucepan over low heat until chocolate is melted and smooth. Pour into medium bowl; cool to barely lukewarm. Using electric mixer, beat 3/4 cup cream in medium bowl to medium-firm peaks. Fold cream into white chocolate mixture in 2 batches. Divide mousse among 4 custard cups. Cover and refrigerate until firm, about 4 hours. (Can be prepared 2 days ahead.)
  • Bring remaining 6 tablespoons cream and remaining 2 tablespoons corn syrup to simmer in heavy small saucepan over high heat. Reduce heat to low; add bittersweet chocolate and stir until melted and smooth. Cool to room temperature. Spoon enough sauce over each mousse to cover completely. Garnish with mint, if desired.

pomegranate seeds , to serve
100ml double cream
200g white chocolate , chopped
2 large lemons , zested
300g mixed frozen berries , defrosted
150g frozen raspberries
2 tbsp lemon juice
600ml double cream
160g golden caster sugar
100g unsalted butter , softened
50g golden caster sugar
135g plain flour
50g pistachios , finely chopped, plus extra to serve

Steps:

  • For the white chocolate layer, heat the cream in a saucepan until steaming and bubbles appear around the edge. Add the chocolate and lemon zest and stir until melted. Set six short tumblers tilted on their sides in a muffin tin (this is how you get a slanted layer). Pour the mixture into the glasses, then chill for 4 hrs, or until set.
  • For the berry layer, put all the frozen berries in a food processor and whizz until puréed. Push through a sieve using a wooden spoon directly into a jug, then stir through the lemon juice. Put the cream and sugar in a saucepan and warm gently until the sugar melts. Increase the heat and boil for 3 mins, stirring continuously. Remove from the heat and stir through the purée. Cool for 15 mins before sitting the glasses upright and pouring over the white chocolate layer. Chill for 4 hrs or until set.
  • Heat the oven to 170C/150C fan/gas 3. Line a baking sheet with non-stick parchment. To make the shortbread, put the butter and sugar in a bowl and beat with an electric whisk until pale and fluffy. Mix in ¼ tsp fine sea salt, the flour and pistachios to get a stiff dough, then bring together with your hands into a smooth ball. Put between two sheets of baking parchment and roll out to around ½cm. Chill for 20 mins. Cut into 20 rounds about 4cm and place on the baking sheet. Bake for 20-25 mins, then slide off the sheet onto a wire rack and leave to cool. Can be made two days ahead and kept in an airtight container.
  • When ready to serve, top the possets with the chopped pistachios and pomegranate seeds, and serve with the pistachio biscuits.

1/2 cup whole milk
4 large egg yolks
3 tablespoons sugar
8 ounces good-quality white chocolate (such as Lindt or Baker's), chopped
2 tablespoons Cointreau, Grand Marnier or other orange liqueur
1 cup chilled whipping cream
2 cups fresh blackberries
4 small fresh mint sprigs
Rolled wafer cookies (optional)

Steps:

  • Whisk milk, yolks and 2 tablespoons sugar in small metal bowl to blend. Set bowl over saucepan of simmering water. Whisk constantly until mixture thickens and thermometer registers 160°F, about 4 minutes. Remove from over water. Add white chocolate; whisk until melted and smooth. Refrigerate mixture until cool but not set, stirring occasionally, about 1 hour. Mix in 1 tablespoon liqueur.
