4 tablespoons butter, softened
1 1/2 cups sifted icing sugar
1 teaspoon vanilla
3 ounces unsweetened chocolate, melted
1/4 teaspoon salt
2 egg whites

Steps:

  • In a bowl, cream butter; add 3/4 cup sugar, blend well. Add in vanilla, chocolate and salt.
  • Beat egg whites in a clean bowl until stiff but not dry. Add remaining 3/4 cup icing sugar (a small amount at a time), beating after each addition, until well blended. Beat until mixture forms stiff peaks.
  • Gently fold egg white mixture into chocolate mixture.
  • Makes enough icing for one 13' x 9" cake.

1-1/2 teaspoons plus 3/4 cup butter, softened, divided
3 cups sugar
1 can (5 ounces) evaporated milk (about 2/3 cup)
1 package (12 ounces) white baking chips
1 jar (7 ounces) marshmallow creme
1 teaspoon vanilla extract

Steps:

  • Line a 13x9-in. pan with foil; grease foil with 1-1/2 teaspoons butter., In a heavy saucepan, combine sugar, milk and remaining 3/4 cup butter; bring to a rapid boil over medium heat, stirring constantly. Boil 4 minutes, stirring constantly. Remove from heat; stir in baking chips and marshmallow creme until melted. Stir in vanilla. Immediately spread into prepared pan. Refrigerate until firm, 1-2 hours. , Using foil, lift fudge out of pan. Remove foil; cut fudge into 1-in. squares. Store between layers of waxed paper in an airtight container.

1 (12 ounce) bag white chocolate chips
1 (7 ounce) jar marshmallow creme
1/3 cup craisins or 1/3 cup other dried fruit
1/3 cup walnuts or 1/3 cup pecans, chopped coarsely
1/8 teaspoon almond extract or 1/8 teaspoon vanilla extract

Steps:

  • In a medium microwave-safe bowl, melt chips on high in 30 second intervals, stirring until melted. Cool 5 minutes. Stir in all ingredients (mixture may look oily).
  • Divide mixture in half. On separate wax paper sheets, for into two 16-inch long logs with 1/4 inch diameter.
  • Refrigerate until firm about 2 hours. Cut into 1 inch pieces.
  • Wrap in colored plastic wrap, cellophane, or waxed paper.

1 (3 1/2 ounce) box chocolate flavor instant pudding and pie filling mix
milk, as required
1 cup marshmallows
1 cup chocolate-covered graham cracker cookies, crushed
1/4 cup chocolate chips
4 ounces Cool Whip

Steps:

  • Make pudding according to instructions on box.
  • Fold in Cool Whip, mixing well.
  • Gently fold in graham crackers and marshmallows.
  • Spoon into serving dishes and sprinkle with chocolate chips.

1 ready-to-use graham cracker crumb crust (6 oz.)
2 oz. BAKER'S White Chocolate

Steps:

  • Beat cream cheese and 1/4 cup milk in large bowl with whisk until blended.
  • Add remaining milk and dry pudding mix; beat with whisk 2 min. Stir in COOL WHIP. Spoon into crust.
  • Refrigerate 4 hours or until firm. Meanwhile, make chocolate curls from white chocolate. (See tip.)
  • Garnish pie with chocolate curls before serving.
