1/2 cup butter, softened
2/3 cup sugar
1 large egg
1 teaspoon vanilla extract
1 cup plus 2 tablespoons all-purpose flour
1/2 teaspoon baking soda
1 cup macadamia nuts, chopped
1 cup white baking chips

Steps:

  • Preheat oven to 350°. In a large bowl, cream butter and sugar until light and fluffy. Beat in egg and vanilla. In another bowl, whisk flour and baking soda; gradually beat into creamed mixture. Stir in nuts and baking chips., Drop by heaping teaspoonfuls 2 in. apart onto ungreased baking sheets. Bake 10-12 minutes or until golden brown. Cool on pans 1 minute. Remove to wire racks to cool completely. Freeze option: Freeze cookies, layered between waxed paper, in freezer containers. To use, thaw before serving or, if desired, reheat on a baking sheet in a preheated 350° oven 3-4 minutes.

1 cup butter, softened
¾ cup packed light brown sugar
½ cup white sugar
2 eggs
½ teaspoon vanilla extract
½ teaspoon almond extract
2 ½ cups all-purpose flour
1 teaspoon baking soda

1 cup coarsely chopped macadamia nuts
1 cup coarsely chopped white chocolate

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, cream together the butter, brown sugar, and white sugar until smooth. Beat in the eggs, one at a time, then stir in the vanilla and almond extracts. Steps:

  • Preheat oven to 375°.

1 teaspoon baking soda
1/4 teaspoon salt
1 cup light brown sugar, firmly packed

Steps:

  • Preheat oven to 350°F.
  • In medium bowl combine flour, soda and salt. Mix well, set aside.
  • In a large bowl with a mixer blend sugars at medium speed. Add butter and mix to until it forms a grainy paste, scraping down the sides of the bowl. Add eggs and vanilla, and beat at medium speed until fully combined.

Steps:

  • Preheat the oven to 350 degrees F. Cream the butter and both sugars until light and fluffy in the bowl of an electric mixer fitted with the paddle attachment. Add the vanilla, then the eggs, 1 at a time, and mix well. Add the cocoa and mix again. Sift together the flour, baking powder, baking soda and salt and add to the chocolate with the mixer on low speed until just combined. Fold in the chopped white chocolate.   • For the cookies: Melt 1 1/2 sticks (12 tablespoons) of the butter in a small skillet over medium heat. Cook, swirling the skillet, until the butter is golden brown. Set aside to cool.
  • Preheat the oven to 325 degrees F. Line 2 baking sheets with parchment paper.
  • In the bowl of an electric mixer, cream together the brown sugar, granulated sugar and remaining 1/2 stick (4 tablespoons) butter. Drizzle in the cooled brown butter. Mix in the eggs one at a time. Add the vanilla extract.

250g Plain flour
2g Baking powder
170g Butter (melted)
220g Light muscavado sugar
100g Caster sugar
15ml Vanilla extract
1 Egg
1 Egg yolk
200g White cooking chocolate
100g macadamia nuts
A pinch of salt if using unsalted butter

Steps:

  • Preheat the oven to 160 degrees C (325 degrees F) Line your baking trays with parchment paper.
  • Sift the flour and baking powder into a bowl (Add salt if required)
  • In a separate bowl, mix together the butter and sugars until combined.
  • Add the egg, extra egg yolk and vanilla to the butter/sugar mixture. Mix until a nice and creamy consistency.
  • Gradually mix in the flour/baking powder until combined
  • Chop up the white chocolate/macadamia nuts into 1cm (approx) pieces and add into the cookie dough mix.
  • Roll into golf ball sizes balls and flatten slightly onto you lined baking trays. Place them approx 3 inches apart. Place them into your preheated oven and cook for 15 minutes. Once 15 minutes has passed take them out of the oven and leave them on the baking trays for 5 minutes to firm up. After 5 minutes they can be placed onto a cooling rack. They will look under cooked but they will harden up once cooled on a cooling rack.

1 cup cold butter, cubed (250 ml)
1 teaspoon pure vanilla extract (5 ml)
2 large eggs
1 cup chopped white chocolate (250 ml)
1 cup macadamia nuts, roasted and chopped (250 ml)

Steps:

  • Preheat the oven to 350 degrees F. Line baking sheets with parchment paper.
  • In a food processor, mix the flour, brown sugar, sugar, baking soda and salt. Add the butter and pulse until coarse crumbs form. Add the vanilla and eggs and continue processing until creamy. Add the white chocolate and macadamia nuts.
  • Using a spoon or small ice cream scoop (about 1 1/2 tablespoons), place balls of dough on the prepared baking sheets, about 3 inches apart to allow for spreading.

Pour into dry ingredients and mix everything together with a rubber spatula until completely combined. Fold in the white chocolate chips and macadamia nuts. 1 1/4 cups old-fashioned oats
2 scant cups cake flour
1 3/4 cups all-purpose flour
1 1/2 teaspoons baking soda
1 1/4 teaspoons baking powder
1 1/2 teaspoons kosher salt
2 1/2 sticks (10 ounces) unsalted butter, softened
1 1/2 cups packed light brown sugar
1 cup granulated sugar
2 large eggs
2 teaspoons pure vanilla extract
1 1/2 cups dried cherries (8 ounces), chopped
1 cup unsalted macadamia nuts, chopped
1 cup white chocolate chips

Steps:

  • Pulse the oats in a food processor until some of it is fine and some of it is still very coarse. Dump the oats into a medium bowl and whisk in the flours, baking soda, baking powder and salt. In a large bowl, beat the butter and the sugars with a mixer at medium speed until very light, about 5 minutes. Beat in the eggs, one at a time, until well blended. Beat in the vanilla.
  • At low speed, add the flour mixture and mix until just combined. Using a rubber spatula or a wooden spoon, fold in the cherries, nuts and white chocolate chips. Cover the bowl with plastic wrap and chill for at least 24 hours and up to 48 hours.
  • Position the racks in the upper and lower thirds of the oven and preheat the oven to 350 degrees F. Line baking sheets with parchment paper or silicone mats.
  • Roll about 2 teaspoons of dough into balls and place them on the lined baking sheets, leaving about 1 inch of space between them.
  • Bake until the cookies are golden brown around the edges and the centers are pale golden and still soft, about 9 minutes. Let cool on wire racks for about 10 minutes, then transfer the cookies with a spatula to the racks to cool completely (or for as long as you can wait!).

3/4 cup roughly chopped, unsalted, toasted macadamia nuts

Steps:

  • Preheat the oven to 375 degrees F. Line a cookie sheet with parchment paper.
  • Combine the flour, baking soda, baking powder, and salt in a mixing bowl.
  • Using a mixer, beat the butter in a large mixing bowl until fluffy, about 2 minutes. Add the brown sugar and mix together until smooth.
  • Add the egg and vanilla. Stop to scrape down the sides of the bowl with a rubber spatula. Blend in the flour mixture in 3 stages and stir in the white chocolate and the nuts.
  • Scoop out walnut-sized mounds of the cookie dough and place on the cookie sheet, leaving 2-inches between the mounds. Bake for 8 to 10 minutes, until the cookies are golden. Remove the cookie sheet from the oven and transfer the cookies from the parchment to cooling racks. Store in an airtight container at room temperature for up to a week. Freeze for longer storage.
