225g butter , softened
225g golden caster sugar
4 eggs , beaten
2 tsp vanilla extract
225g self-raising flour , sifted, plus extra for dusting
375g fresh cherries , pitted
175g white chocolate , chopped into small chunks
100g white chocolate , broken into small pieces
140g half-fat mascarpone
white chocolate curls or fresh cherries, to decorate

Steps:

  • Heat oven to 180C/fan 160C/gas 4. Line a 1kg loaf tin with baking parchment, making sure the paper comes up higher than the sides. Beat the butter and sugar together until fluffy, then add the eggs, a little at a time, along with the vanilla. Fold in the flour until you have a smooth mixture.
  • Dust the cherries in a little flour, then carefully stir half of the fruit and chocolate into the mixture. Spoon into the prepared tin, then scatter the remaining cherries and chocolate on top, pressing them in lightly. Bake for 1 hr 10 mins - 1 hr 15 mins until a skewer inserted into the middle comes out clean. Make sure you don't mistake melted chocolate for raw cake mix. Leave to cool in the tin for a few mins, then turn out on to a wire rack and leave to cool completely. This can now be wrapped tightly in cling film and stored in the fridge for up to 3 days.
  • Remove the marscapone from the fridge to come to room temperature. Melt the white chocolate in a bowl over a pan of hot water. Quickly stir in 1 tbsp of the marscapone, then beat in the rest (be careful not to overbeat the mixture or it will go grainy). Spread over the top of the loaf and finish with white chocolate curls or fresh cherries.

My friend gave me this recipe 15 years ago and it has been a favorite ever since. We prefer sweet, as opposed to tart, dried cherries. You can also use dried cranberries.

1 cup lukewarm milk
1 (.25 ounce) package active dry yeast
1 large egg
2 tablespoons butter, softened
2 tablespoons white sugar
2 tablespoons brown sugar
2 teaspoons vanilla extract

¾ cup chocolate chips
¾ cup dried cherries

Steps:

  • Mix milk and yeast in a small bowl with a fork until frothy, about 5 minutes. Add egg, butter, white sugar, brown sugar, vanilla extract, and salt. Beat for 1 to 2 minutes. Add 1 cup flour. Beat for about 5 minutes. Add remaining 2 cups flour; mix until dough comes together.
  • Turn dough out onto a lightly floured work surface. Knead until dough is smooth and feels rubbery, about 10 minutes. Add additional flour if needed. Add chocolate chips and cherries; knead just until incorporated.
  • Cover dough and let rise in a warm, humid area until doubled, about 1 hour.
  • Punch down dough gently. Let rest for 10 minutes. Divide dough in half; shape into loaves. Transfer loaves to a greased baking sheet and let rise again, about 1 hour more.
  • Preheat the oven to 350 degrees F (175 degrees C).
  • Bake in the preheated oven until browned, 20 to 30 minutes.

1/2 cup maraschino cherry, drained (reserve juice)
3/4 cup plus 2 tablespoons water
1 teaspoon almond extract
2 tablespoons butter or 2 tablespoons margarine
2 tablespoons sugar
1 teaspoon salt
3 1/4 cups bread flour
2 1/4 teaspoons fast rising yeast (or bread machine yeast)
1/2 cup chopped white chocolate chips
1/3 cup chopped slivered almonds
2 tablespoons sugar
2 tablespoons butter or 2 tablespoons margarine, softened
1/4 cup maraschino cherry, cut in half and well drained
1/2 cup powdered sugar
2 -4 teaspoons reserved cherry juice
1 egg, slightly beaten

Steps:

  • Add the bread ingredients in the order given (or the recommended order for your bread machine) to the machine pan. Select Dough/Manual cycle. Do not use delay cycles.
  • After bread machine turns off, remove dough from machine and place on lightly floured surface; cover. Let rest for 10 minutes. Mix white chocolate baking chips, almonds and sugar in a small bowl. Grease a large baking sheet (or 2 baking sheets). Divide dough in half. Roll each half into a 12 x 9- inch rectangle. Spread 1 tablespoon butter over each rectangle. Sprinkle with half the white chocolate mixture and cut cherries. Press into dough. Roll up dough from long side. Pinch loaf to seal bottom and ends. Place on baking sheet(s). Cover and let rise in warm place about 45 minutes or until double.
  • Brush with egg. Bake on center rack of preheated 350°F oven for 25 to 30 minutes or until golden brown. Note: if using 2 baking sheets, switch the position of the sheets half way through baking.
  • Transfer loaf to wire rack placed on top of waxed paper. Cool. Mix glaze ingredients until smooth and of desired consistency. Drizzle each loaf with glaze.
  • Note: A 10-ounce jar of maraschino cherries contains just enough cherries and juice for this recipe.

Pretty, pretty. These cookies are ideal for Christmas or Valenitnes Day. Edible glitter is just too much fun to play with, try it if you can get it! Be sure to use shortening that is "not" butter flavored as it will turn the color from snow white to yellowed. I cannot get the Zaar computer to print "white sugar nonpareils", you only want white ones here.

1/2 cup maraschino cherry, drained and finely chopped
2 1/2 cups all-purpose flour
1/2 cup sugar
1 cup cold butter
12 ounces white chocolate baking squares, with cocoa butter, finely chopped
1/2 teaspoon almond extract
2 drops red food coloring (optional)
2 teaspoons shortening
white multicolored sugar nonpareils (and or red edible glitter)

Steps:

  • Preheat oven to 325 degrees F. Spread cherries on paper towels to drain well.
  • In a large bowl, combine flour and sugar. Using a pastry blender, cut in the butter until mixture resembles fine crumbs. Stir in drained cherries and 4 ounces (2/3 cup) of the chopped chocolate. Stir in almond extract and, if desired, food coloring. Knead mixture until it forms a smooth ball.
  • Shape dough into 3/4-inch balls. Place balls 2 inches apart on an ungreased cookie sheet. Using the bottom of a drinking glass dipped in sugar, flatten balls to 1-1/2-inch rounds.
  • Bake in preheated oven for 10 to 12 minutes or until centers are set. Cool for 1 minute on cookie sheet. Transfer cookies to a wire rack and let cool.
  • In a small saucepan, combine remaining 8 ounces white chocolate and the shortening. Cook and stir over low heat until melted. Dip half of each cookie into chocolate, allowing excess to drip off. If desired, roll dipped edge in nonpareils and/or edible glitter. Place cookies on waxed paper until chocolate is set. Makes about 60.
  • To Store: Layer cookies between waxed paper in an airtight container; cover. Store at room temperature for up to 3 days or freeze for up to 3 months.

1/2 teaspoon almond extract
21 ounces canned cherry pie filling, drained
10 ounces challah or 10 ounces other firm bread, cut into 1-inch cubes, 6 cups
5 ounces dried cherries or 5 ounces dried sweetened cranberries, 1 cup
1/2 cup white chocolate chips
1 tablespoon sugar
1 tablespoon sliced almonds
confectioners' sugar (optional)

Steps:

  • Coat 6-cup baking dish with cooking spray.
  • In large bowl, whisk eggs with half and half, 1/2 cup sugar and almond extract until blended.
  • Stir in pie filling, bread, dried cherries (or cranberries) and chocolate chips.

This quick bread tops my list of ways to enjoy chocolate for breakfast! I love the harmony between the smooth chocolate flavor and the tart sweetness of cherries joined together in this moist and slightly dense loaf.

Nonstick cooking spray
3/4 cup dried cherries, chopped
1/2 cup (45 grams) Dutch-process cocoa powder, plus 1 more teaspoon for coating the cherries
3/4 cup cherry juice (or water)
1 1/4 cups (155 grams) all-purpose flour
1 cup (200 grams) sugar
1 3/4 teaspoons baking powder
Heaping 1/2 teaspoon fine salt
1/2 cup vegetable oil
1 large egg, at room temperature, beaten
1 large egg white, at room temperature, beaten
2 teaspoons pure vanilla extract
1/4 cup mini chocolate chips

Steps:

  • Position a rack in the center of the oven and preheat to 350 degrees F. Spray an 8-by-4-inch loaf pan with nonstick spray and line it with parchment paper.
  • Combine the dried cherries with the 1 teaspoon cocoa powder in a small bowl. Toss to evenly coat and set aside.
  • Microwave the cherry juice in a microwave-safe measuring cup until steaming, about 1 minute. Transfer to a medium bowl, add the 1/2 cup cocoa and whisk until smooth. Set aside while you prepare the dry ingredients.
  • Put the flour, sugar, baking powder and salt in another medium bowl and whisk well to combine.
  • Add the oil, egg, egg white and vanilla to the warm cocoa mixture then whisk to combine. Pour into the dry ingredients and stir until incorporated. Pour about 1/3 of the batter into the prepared pan. Stir the cocoa-coated cherries into the remaining batter, then pour that batter into the pan. Sprinkle the chocolate chips on top.
  • Place the loaf pan on a baking sheet and bake on the center rack until a toothpick comes out with a few moist crumbs, 60 to 64 minutes. Let cool in the pan for 15 minutes then remove the quick bread to a wire rack to cool completely before slicing with a serrated knife (this will cut through the cherries easily and yield a clean slice).
  • Serve or wrap the cooled loaf in plastic wrap or foil and store on the counter for up to 3 days.

2 cups all-purpose flour
1 teaspoon kosher salt

¼ teaspoon vanilla extract
2 cups pitted cherries
½ cup dark chocolate chunks
½ cup chopped walnuts

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x4-inch loaf pan with 1 teaspoon butter and reserve.
  • Whisk flour, salt, baking powder, and baking soda together in a bowl.
  • Cream 1/2 cup butter and sugar together in another bowl with a spatula or an electric mixer until smooth and creamy. Beat in eggs one at a time with a whisk or an electric mixer, fully blending in the first egg before adding the next. Stir in yogurt and vanilla extract.
  • Chop pitted cherries coarsely with a knife, or by pulsing on and off a few times in a food processor. Add to the wet ingredients along with the chocolate chunks and chopped walnuts. Stir briefly to combine. Batter may look curdled, but don't worry.
  • Pour in the flour mixture and mix with a spatula until all the flour has disappeared. Transfer batter into the prepared loaf pan, making sure to smooth the top evenly and fill in the corners. Tap pan on the counter to release any air pockets.
  • Bake in the preheated oven until nicely browned and a toothpick inserted into the center comes out clean, about 1 hour. Let bread rest in the pan for 15 minutes before removing to a wire rack.
  • While bread is resting, combine powdered sugar and milk in a bowl for icing, adding more milk as needed to reach a thin, runny consistency.
  • Brush icing over loaf, allowing to drip down the sides. Let cool completely before slicing and serving, about 20 minutes more.

1/4 cup warm water (105 to 115 degrees F)
2 1/2 teaspoons instant dry yeast, 1 pkg
3 teaspoons granulated sugar
3 1/2 cups all-purpose flour
1/3 cup unsweetened Dutch-processed cocoa powder
1/3 cup brown sugar, packed
1 3/4 teaspoons salt
1 cup coffee, freshly brewed and cooled until warm (105 to 115 degrees F)
4 tablespoons butter or 4 tablespoons margarine, softened
1 large egg, separated
3/4 cup dried tart cherries or 3/4 cup dried sweet cherries
3 ounces bittersweet chocolate, coarsely chopped or 1/2 cup chocolate chips
1/3 cup pecan pieces, toasted
1 teaspoon water

Steps:

  • In cup, combine warm water, yeast, and 1 teaspoon granulated sugar; stir to dissolve. Let stand until foamy, about 5 minutes.
  • Meanwhile, in large bowl, combine 3 cups flour, cocoa, brown sugar, and salt.
  • With wooden spoon, stir warm coffee, butter, egg yolk (cover egg white and set aside in refrigerator), and yeast mixture into flour mixture.
  • In bowl, with floured hands, knead several times to combine well.
  • Turn dough onto lightly floured surface and knead until smooth and elastic, about 10 minutes, working in enough of remaining 1/2 cup flour just to keep dough from sticking. Knead in cherries and chocolate pieces.
  • Shape dough into ball; place in greased large bowl, turning dough to grease top. Cover bowl with plastic wrap and let rise in warm place (80 to 85 degrees F) until doubled in volume, about 1 hour 30 minutes.
  • Punch down dough.Turn dough onto lightly floured surface and CUT IN HALF; cover dough and let rest 15 minutes for easier shaping.
  • Shape each dough HALF into 5-inch ball : Using the sides of your hands, tuck sides of dough under to meet in center. Rotate and repeat to form taut ball. Place balls, 3-inches apart, in opposite corners of ungreased large cookie sheet. Cover and let rise in warm place until doubled, about 1 hour.
  • Preheat oven to 400 degrees F.
  • In cup, beat reserved egg white with water; use to brush tops of loaves. Sprinkle loaves with remaining 2 teaspoons granulated sugar. With serrated knife or single-edge razor blade, cut shallow X in top of each loaf.
  • Bake until loaves are crusty, about 25 to 30 minutes, or until an instant read thermometer reads 185°F Tent loosely with foil after 20 minutes, if the loaves are browning too much (it might be difficult to tell!). Transfer to wire racks to cool.

  • Preheat oven to 325°F.
  • In large mixing bowl, toss together baguette slices, white chocolate, and dried cherries. Set aside.
  • In second large mixing bowl, stir together sugar, cinnamon, and nutmeg. Measure out 1/4 cup of mixture into small bowl and set aside.
  • In third large mixing bowl, whisk together eggs, cream, milk, and vanilla. Whisk egg mixture into larger bowl of sugar mixture, then pour over bread-chocolate mixture and stir to combine.

8 day-old Ball Park® Hamburger Buns, cut into bite-size pieces
1 ½ cups dried sour cherries (or other dried fruit)
2 cups cherry or apple juice

1 (11 ounce) package white chocolate chips
2 cups half-and-half
1 cup milk
¼ cup sugar
1 teaspoon cinnamon

Steps:

  • Combine dried cherries, juice and 2 tablespoons sugar in a saucepan and bring to a boil. Reduce heat and stir a minute or two until sugar dissolves.

  • Drain cherries and reserve the liquid.
  • Butter a 9x9-inch baking pan or 8 ramekins.
  • Place half the cubed buns in the pan or ramekins, top with half of the cherries. Follow with the rest of the cubed buns and the remaining cherries.
  • Ladle the white chocolate liquid over the bread and cherries. Press down slightly to make sure the liquid soaks into the bread thoroughly.
  • Bake for 30 to 40 minutes or until a knife inserted into the center comes away clean. Remove from oven and allow to rest for 10 minutes.
  • Make topping by combining creme fraiche, confectioner's sugar and 1 to 2 tablespoons of the reserved cherry liquid, stirring well.
  • Top the bread pudding with the creme and serve warm.
