8 day-old Ball Park® Hamburger Buns, cut into bite-size pieces
1 ½ cups dried sour cherries (or other dried fruit)
2 cups cherry or apple juice
2 tablespoons sugar
1 (11 ounce) package white chocolate chips
2 cups half-and-half
1 cup milk
¼ cup sugar
1 teaspoon cinnamon
1 teaspoon ground nutmeg
5 eggs, beaten
1 cup creme fraiche
2 tablespoons confectioners' sugar
1 teaspoon vanilla extract

Steps:

  • Combine dried cherries, juice and 2 tablespoons sugar in a saucepan and bring to a boil. Reduce heat and stir a minute or two until sugar dissolves.
  • Remove from heat and set aside. (Note: If you use Grand Marnier instead, combine cherries and liqueur in a bowl, cover and allow to sit overnight to soak.)
  • Heat oven to 350 degrees F.
  • In a saucepan, combine white chocolate, half & half, milk and sugar, heating over medium heat about 5 to 7 minutes, stirring until chocolate melts and is thoroughly combined.
  • Add cinnamon and nutmeg and reduce heat to simmer.
  • Stir a little of the hot mixture into the beaten eggs and stir well to temper the eggs. Slowly add the tempered eggs into the white-chocolate mixture and stir to combine.
  • Drain cherries and reserve the liquid.
  • Butter a 9x9-inch baking pan or 8 ramekins.
  • Place half the cubed buns in the pan or ramekins, top with half of the cherries. Follow with the rest of the cubed buns and the remaining cherries.
  • Ladle the white chocolate liquid over the bread and cherries. Press down slightly to make sure the liquid soaks into the bread thoroughly.
  • Bake for 30 to 40 minutes or until a knife inserted into the center comes away clean. Remove from oven and allow to rest for 10 minutes.
  • Make topping by combining creme fraiche, confectioner's sugar and 1 to 2 tablespoons of the reserved cherry liquid, stirring well.
  • Top the bread pudding with the creme and serve warm.

5 large eggs
5 tablespoons packed dark brown sugar
1 cup heavy cream
1 cup whole milk

Finely grated zest of 1/4 orange
Seeds of 1/2 vanilla bean
1/4 teaspoon fine sea salt
5 tablespoons granulated sugar
6 slices soft white bread, cut into 1/2-inch cubes
1/2 cup (about 3 ounces) milk chocolate chips
1/2 cup dried cherries
Nonstick cooking spray
1 tablespoon Turbinado sugar

Steps:

  • Put the dark chocolate chips in a large heatproof bowl. In another large bowl, whisk together the eggs and brown sugar until well combined.
  • In a medium saucepan, bring the cream, milk, brandy, orange zest, vanilla seeds, salt, and granulated sugar to a boil; stir until the sugar is dissolved. Pour the hot liquid over the dark chocolate chips and whisk until melted and smooth. While whisking constantly, pour the dark chocolate mixture into the eggs, mixing until combined. Add the bread and toss gently to coat. Transfer the bread mixture to the refrigerator and cool to room temperature. Stir in the chocolate chips and dried cherries. Cover and refrigerate overnight.
  • Position a rack in the center of the oven and preheat to 350 degrees F. Put eight 4-ounce ramekins on a baking sheet and lightly coat them with cooking spray.
  • Stir the bread pudding mixture to evenly distribute the chocolate chips and cherries. Divide the mixture among the prepared ramekins. Sprinkle a little Turbinado sugar over the top of each pudding and bake until puffed and set, about 30 minutes. Serve warm or at room temperature.

I am a big fan of never wasting things, so of course when I have old bread around I don't wanna waste it. So I'm always playing around with different bread pudding recipes. You can't go wrong with chocolate and cherries.

1 cup heavy cream
1 cup milk
48 jarred wild cherries, such as Amarena Fabbri, plus 1/2 cup liquid from the jar
1/2 cup maple syrup
Pinch fine salt
5 large eggs
1 cup dark chocolate (63 percent)
1 baguette, medium diced
1 cup cold heavy cream
2 tablespoons brandy
2 tablespoons granulated sugar

Steps:

  • For the pudding: Preheat the oven to 350 degrees F.
  • In a medium pot add the cream, milk, liquid from the cherries, maple syrup and salt and bring to a boil.
  • In a separate bowl crack and whisk the eggs. In a larger bowl add the dark chocolate.
  • Pour the warm liquid into the dark chocolate and whisk until the chocolate has melted. Slowly whisk in the eggs. Mix in the diced baguette and let it sit for 30 minutes.
  • Place a cherry into each of eight 4-ounce ramekins, then fill the ramekins with the bread pudding mixture.
  • Place ramekins on a baking sheet and bake for 30 minutes.
  • For the brandy whipped cream: Whip the cream, brandy and granulated sugar until it holds stiff peaks. Serve the puddings topped with the cream.

8 large eggs
1 loaf Brioche, Challah, or other sweet bread
4 ounces butter, melted
16 ounces white chocolate, chunked
2 cups milk
2 cups heavy cream
2/3 cups sugar

Steps:

  • Preheat oven to 325 degrees.
  • Cut the brioche loaf into 1 inch dice. Place in a 2 quart baking dish. Drizzle with melted butter. Toss chunked white chocolate with bread cubes.
  • Combine milk, cream, sugar, and vanilla bean and bring to a boil over medium heat until sugar is disolved. Whisk eggs until smooth. Add hot milk mixture to eggs slowly, stirring contsantly. Do not wisk or custard will have a great deal of foam on the surface. Skim foam from custard. Strain custard over bread and chocolate. Let stand for 10 minutes to allow custard to soak into bread.
  • Place baking dish in another larger pan. Pour hot water into larger dish to reach 1 inch up side of dish. Bake the bread pudding for about 45 minutes to 1 hour, until custard is set and brioche is golden.

3 loaves French bread, 10 inch each
4 whole eggs
6 egg yolks
4 cups heavy whipping cream
1 cup milk
1 cup sugar

Steps:

  • Preheat oven to 300.
  • Slice french bread into half inch round croutons and set aside.
  • In a large mixing bowl, combine eggs and egg yolks.
  • Whipe until well blended.
  • In a large saucepan, combine whipping cream, milk, and sugar.
  • Bring mixture to a low simmer, then add white chocolate.
  • Whisk until chocolate is completely melted.
  • Remove from heat and stir in whipped eggs.
  • Blend thoroughly to keep eggs from scrambling.
  • In a buttered 9 x 13 baking dish, place bread slices in 2-3 layers.
  • Pour half the the cream mixture over the bread and allow it to soak up most of the mixture before adding the rest.
  • Press the bread gently, allowing the cream mix to be evenly absorbed.
  • Cover the dish and let it soak at last 5 hours prior to baking.
  • Bake covered for 1 hour and then remove cover and bake another 45 minutes until top has browned.
  • Note: This is best if chilled overnight, then cut into squares and reheated in individual portions in the microwave.
  • Serve with caramel sauce.

I came up with this when I needed a dessert for a dinner party and didn't feel like running to the store for ingredients. I happened to have some wonderfully flaky cherry turnovers from a local bakery and some croissants, and thought, "Bread Pudding. Why not?" Everyone at the dinner party moaned in pleasure when I served this warm with vanilla bean ice cream :) **NOTE: the ingredients should read "3 cherry turnovers," but the computer doesn't recognize it. So the nutritional value will be off, but let's face it, if you're making this recipe, you're not concerned with calories today :)

3 cherries, turnovers
3 butter croissants
1 quart milk (could use part milk, part whipping cream if you're feelin' dangerous)
1/2 cup butter, melted
1/4 cup white sugar
1 cup brown sugar, divided
1/2 teaspoon nutmeg
1/4 teaspoon allspice
4 eggs
1 tablespoon vanilla
1 tablespoon vanilla vodka (orange liqueur would be fantastic as well)
6 ounces white chocolate, chopped
1/2 cup dried tart cherry (could use craisins)

Steps:

  • Break the turnovers and croissants into chunks in a large bowl.
  • Add the white sugar, 1/2 cup of brown sugar, nutmeg, allspice and melted butter and stir. *NOTE: depending on the sweetness of your turnovers, you may need less sugar. Mine were not terribly sweet.*.
  • Add the eggs one at a time, alternating with the milk and stirring well so that each egg is incorporated before adding the next one. Do this until all the eggs and milk are used.
  • Stir in the vanilla and vodka. Fold in the white chocolate chunks and cherries.
  • Pour into a buttered 2 quart cassarole dish. Sprinkle the brown sugar evenly across the top of bread mixture. I grated an additional 1/8 teaspoon of nutmeg over the top as well.
  • Bake in a preheated 350* oven for 1 hour.
  • Let cool 20 to 30 minutes as pudding will set firmer as it cools. Can be served warm or chilled. I love it warm with vanilla bean ice cream or a dollop of sweetned whipped cream.

  • Make pudding:
  • Butter an 8-inch square glass baking dish. Cut enough bread into 3/4-inch cubes to measure 6 cups. Chop chocolate.
  • In a small heavy saucepan bring 1 cup cream just to a boil and add chocolate. Remove pan from heat and let mixture stand, covered, undisturbed.   • Poach cherries while pudding is baking:
  • In a saucepan bring wine, water, and sugar to a boil, stirring until sugar is dissolved. Add cherries and remove pan from heat. Let mixture stand, covered, 1 hour. Drain cherries in a sieve and discard liquid.

Once, I made this bread pudding (more of a bread)and it was sooo good but alas, gone so quickly. It's very moist and I like it with a little whipped cream and a maraschino cherry on top! The Southern Living booklet said that this dessert got their highest rating due to the juicy cherries and triple chocolate flavor. MmmMMMMMmmmm.......

3 large eggs, lightly beaten
3 cups chocolate milk (can make your own with preferred amount of chocolate)

  • Drain the jar of cherries but reserve 1 TB of the cherry juice. Chop the cherries coarsely. The first time I made this I used a food processor and got them too fine. More chunky is definately better.
  • In a large bowl, combine 1 TB of cherry juice, eggs and next 4 ingredients and stir will.
  • Preheat oven to 350 degrees.
  • Add the bread cubes and let stand for 15 minutes on the counter, stirring occasionally. After 15 minutes, stir in the chocolate chips and cherries.
  • Spoon this mixture into a greased 9 inch square pan (I used a bread pan with good results) and bake, uncovered for 50-60 minutes or until set.
  • Garnish, if you want to, with whipped cream and maraschino cherries.
  • Cook time includes 15 minutes soaking time for french bread cubes.

1 cup sugar
3 1/2 cups white chocolate chips

  • Bread pudding:.
  • Preheat oven to 325 degrees F. Butter a 9"X12"X2" baking pan including the sides. Line bottom of pan with parchment paper.
  • Combine cream, sugar, milk in saucepan over medium heat. Stir until hot. Add chocolate morsels and stir until chocolate is melted. Set aside so it can cool slightly.
  • Whisk eggs, egg yolks, and vanilla. Gradually pour the cream mixture into the egg mixture and whisk until smooth. Be careful that the cream mixture isn't too hot or the eggs will curdle. Tempering the eggs is very useful in this step.
  • Lay about half of the bread slices in the baking pan and pour about half of the cream mixture, allowing it to soak up the liquid. Next, layer the remaining bread slices on top and pour more mixture over it. You might need to press down the bread on top to let it soak up some of that liquid. Be careful that you don't layer too much, since it does rise quite a bit in the oven. I usually stop layering once it hits right at the top of the pan.
  • Cover the pan with foil and bake for 1 hour. While it's baking, this is a good time to get started on those sauces!
  • After that 1st hour, remove the foil and bake uncovered until it's no longer liquid in the center and the top should be golden brown.
  • Raspberry Sauce:.
  • Combine water, sugar, and orange zest in a sauce pan over medium heat. Stir until syrupy.
  • Add raspberries and cook on low heat stirring occasionally until the fruit falls apart. Strain out the seeds.
  • White Chocolate Sauce:.
  • Heat heavy cream in saucepan over medium heat until hot.
  • Stir in white chocolate morsels until melted. Set aside to cool slightly.
  • Prepping the Bread Pudding:.
  • By individual slices, place a slice(s) on a cookie sheet and brush each piece with the melted sweet cream butter, including the sides (don't worry about the bottom of the slice).
  • Bake in oven for about 12-15 minutes. This will create a crisp "seared" outside which is very delicious.
  • Once the bread pudding is ready, by individual slices, place on a serving plate and drizzle with the white chocolate sauce and droplets of raspberry sauce. Enjoy!

8 ounces French bread, cut into 1-inch pieces
3 1/2 cups whipping cream
1 cup milk (do not use low-fat or nonfat)
1/2 cup sugar
18 ounces good-quality white chocolate (such as Lindt or Baker's),coarsely chopped
7 large egg yolks
2 large eggs

Steps:

  • Preheat oven to 275°F. Arrange bread cubes on baking sheet. Bake until light golden and dry, about 10 minutes. Transfer baking sheet to rack; cool completely. Increase oven temperature to 350°F.
  • Combine 3 cups whipping cream, 1 cup milk and 1/2 cup sugar in heavy large saucepan. Bring to simmer over medium heat, stirring until sugar dissolves. Remove from heat. Add 10 ounces white chocolate (about 1 3/4 cups) and stir until melted and smooth. Whisk yolks and eggs in large bowl to blend. Gradually whisk in warm chocolate mixture.
  • Place bread cubes in 2-quart glass baking dish. Add half of chocolate mixture. Press bread cubes into chocolate mixture. Let stand 15 minutes. Gently mix in remaining chocolate mixture. Cover dish with foil.
  • Bake pudding 45 minutes. Uncover and bake until top is golden brown, about 15 minutes. Transfer pudding to rack and cool slightly. (Can be prepared 1 day ahead. Cover with foil and refrigerate. Rewarm covered pudding in 350°F oven for 30 minutes before serving.)
  • Bring remaining 1/2 cup cream to simmer in heavy medium saucepan. Remove saucepan from heat. Add remaining 8 ounces white chocolate and stir until melted and smooth.
  • Serve pudding warm with warm white chocolate sauce.

1 loaf Hawaiian bread (can use any dense egg bread)
7 ounces fine-quality white chocolate
2 cups heavy cream
1 cup whole milk
3 large eggs
3 large egg yolks
1/4 cup sugar
2 teaspoons vanilla
1/2 cup dry white wine (can use sweet wine but that will of course change the taste)
1/2 cup water
1/2 cup sugar
1 cup dried tart cherry

Steps:

  • Butter an 8-inch square glass baking dish; cut or tear enough of the bread to equal six cups; chop chocolate into coarse pieces.
  • In a small heavy saucepan bring 1 cup cream just to a boil and add chocolate.
  • Remove pan from heat and let mixture stand covered & undisturbed.
  • In another small heavy saucepan bring milk and remaining cup cream to a gentle simmer; in a bowl with an electric mixer beat together whole eggs, yolks, sugar, and a pinch salt on medium speed 5 minutes.
  • With mixer running add milk mixture in a slow stream, beating until combined well.
  • Whisk chocolate mixture until smooth & add with vanilla to egg mixture; beat mixture until combined well.
  • Pour cream mixture over bread cubes and with a spoon push bread down into mixture to coat evenly.
  • Chill pudding, covered, 1 1/2 hours.
  • Preheat oven to 350°F; pour bread mixture into baking dish.
  • Put baking dish in a large baking pan and add enough hot water to pan to reach 1/2 the way up sides of dish.
  • Bake pudding in middle of oven 45 to 50 minutes or until set and springy to the touch.
  • Transfer pudding to a rack and cool for thirty minutes (pudding is also good chilled).
  • Poach cherries while pudding is baking;.
  • in a saucepan bring wine, water and sugar to a boil stirring until sugar is dissolved; add cherries and remove pan from heat; let mixture stand for one hour;drain cherries in a sieve and discard liquid.
  • Serve pudding with cherries and whipped cream.
