Cinnamon-Nut Buns image

An easy recipe for warm, buttery rolls is reinvented into super cinnamon buns. You can easily adjust the filling to suit your taste. Skip the chocolate chips and use more nuts, or substitute another sweet spice for the cinnamon.

Dinner Rolls, prepared through step 2
1/2 cup (1 stick) unsalted butter, room temperature, plus more for pans
1 cup packed dark-brown sugar
2/3 cup walnuts or pecans
1/2 cup semisweet chocolate chips
1/2 teaspoon ground cinnamon
Salt
All-purpose flour, for work surface
1 cup packed dark-brown sugar
6 tablespoons unsalted butter
2 tablespoons water

Steps:

  • Butter two 13-by-9-inch baking pans. In a food processor, combine brown sugar, nuts, chocolate, cinnamon, and a pinch of salt. Pulse until coarsely ground; set nut mixture aside.
  • Divide dough in half. Working with one half at a time (keep the other half covered with plastic wrap), roll dough out to a 16-by-10-inch rectangle on a lightly floured work surface. Spread 4 tablespoons butter over dough, leaving a 1/2-inch border all around. Sprinkle half the nut mixture over butter. Leave a border around the filling so it doesn't seep out. Starting at a long end, roll up dough like a jellyroll; with a sharp knife, cut crosswise into 12 equal pieces.
  • Place buns, cut side down, in prepared pans. Cover pans loosely with plastic; let stand in a warm spot until doubled in size, about 1 1/4 hours.
  • Preheat oven to 375 degrees, with racks in upper and lower thirds. Bake buns until golden brown, 25 to 30 minutes, rotating pans back to front and top to bottom halfway through. Let cool 15 minutes.
  • Prepare glaze: In a small saucepan, heat brown sugar, butter, and water over medium, stirring, until simmering; cook 1 minute. Drizzle glaze over buns; let stand 10 minutes before serving.

2 tablespoon(s) softened butter or margarine
1/2 cup(s) chopped almonds
1/2 cup(s) mini chocolate chips
2 tablespoon(s) granulated sugar
3 ounce(s) pkg. white chocolate pudding mix
1/4 cup(s) unsifted powdered sugar
2 tablespoon(s) milk
1/8 teaspoon(s) almond extract

Steps:

  • Thaw frozen dough as directer in(Robin Hood Flour Freezer Yeast Dough). Roll dough into a 12x10-inch rectangle on lightly floured board. Spread with butter. Combine almonds, pudding mix (dry), chocolate chips and sugar.Mix well. Sprinkle evenly on dough. Roll up tightly beginning with 12-inch side. Cut into twelve 1-inch pieces. Place cut-side down in greased or sprayed 9-inch layer pan or 12 individual cup muffin tin, Brush dough lightly with melted butter or olive oil. Cover with plastic wrap loosely. Let rise in warm place for 30-40 minutes until doubled. Bake at 375^ for 20-25 minutes until dome. Remove from pan immediately. --- Combine powdered sugar milk, an d almond extract. Beat well Drizzle over warm rolls.

2 packages (1/4 ounce each) active dry yeast
1-1/2 cups warm water (110° to 115°), divided
1/2 cup butter, softened
1/2 cup sugar
1 teaspoon salt
4-1/2 to 4-3/4 cups all-purpose flour
2/3 cup baking cocoa
FILLING:
2 tablespoons butter, melted
1/3 cup sugar
1/2 teaspoon ground cinnamon
1 cup miniature semisweet chocolate chips
2/3 cup finely chopped nuts, optional
ICING:
2 cups confectioners' sugar
1/2 teaspoon vanilla extract
2 to 3 tablespoons 2% milk
Additional miniature semisweet chocolate chips, optional

Steps:

  • In a large bowl, dissolve yeast in 1/2 cup warm water. Add the butter, sugar, salt and remaining water. Stir in 2-1/2 cups flour and cocoa. Beat on medium speed for 3 minutes or until smooth. Stir in enough remaining flour to form a soft dough. , Turn onto a lightly floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour., Turn onto a lightly floured surface; divide in half. Roll each portion into a 12x10-in. rectangle; brush with melted butter. Combine the sugar, cinnamon, chocolate chips and, if desired, nuts; sprinkle over dough to within 1/2 in. of edges. , Roll up each jelly-roll style, starting with a long side; pinch seams to seal. Cut each into 10 slices. Place cut side down in a greased 15x10x1-in. baking pan. Cover and let rise until doubled, about 45 minutes., Bake at 375° for 25-30 minutes or until lightly browned. Meanwhile, in a small bowl, combine the confectioners' sugar, vanilla and enough milk to reach desired consistency. Spread over rolls while slightly warm; sprinkle with additional chocolate chips if desired.

1 cup butter, softened
1/2 cup packed brown sugar
2 teaspoons ground cinnamon
1 package (10 to 12 ounces) white baking chips
1 cup dried cranberries
1/2 cup chopped pecans
GLAZE:
2 cups confectioners' sugar

5 to 6 tablespoons heavy whipping cream

Steps:

  • In a large bowl, dissolve yeast in warm water. Add the butter, sugar, salt and 4 cups flour; beat until smooth. Stir in enough remaining flour to form a soft dough., Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover and refrigerate overnight., Punch dough down. On a lightly floured surface, roll into a 24x12-in. rectangle. Cinnamon rolls made even more delicious with almond paste and slivered almonds! As always, you can use dry yeast instead of fresh if you prefer - adjust the temperature of the milk and butter mixture accordingly. The recipe doubles well.

60 g butter
250 ml milk
25 g fresh yeast
1/2 teaspoon ground cardamom
1/2 teaspoon cinnamon
1/4 teaspoon salt
100 ml sugar
700 -800 ml all-purpose flour
50 g butter, softened
100 g almond paste, chopped
50 g sugar (about 4 tablespoons)
1 tablespoon cinnamon
1 egg, beaten
slivered almonds
pearl sugar

Steps:

  • Crumble yeast into a bowl.
  • Melt butter, add milk and gently heat the mixture to 37°C
  • Pour over yeast and mix until yeast has dissolved.
  • Add cardamom, cinnamon, salt and sugar and stir; add about 200 ml of the flour and stir.
  • Add most of the remaining flour and knead dough by hand, adding flour if needed, until the dough is smooth and elastic and no longer sticks to the bowl nor to your hand.
  • Sprinkle some flour on top and cover: let rise for about 1 hour.
  • Preheat oven to 220°C.
  • Lightly flour the baking board and turn the dough on it.
  • Roll dough out to a ~30 x 40 cm rectangle.
  • Spread the softened butter on the dough, sprinkle chopped almond paste, sugar and cinnamon over the butter.
  • Roll the dough up tightly and cut into 4 cm slices. Place rolls on a parchmented baking sheet, cover and let rise for 30 minutes.
  • Brush rolls with beaten egg and sprinkle with slivered almonds and pearl sugar.
  • Bake for 10-15 minutes. Cover the rolls while cooling.

1 egg white
1 teaspoon cold water
4 cups whole almonds
½ cup white sugar
¼ teaspoon salt
½ teaspoon ground cinnamon

Steps:

  • Preheat oven to 250 degrees F (120 degrees C). Lightly grease a 10x15 inch jellyroll pan.
  • Lightly beat the egg white; add water, and beat until frothy but not stiff. Add the nuts, and stir until well coated. Mix the sugar, salt, and cinnamon, and sprinkle over the nuts. Toss to coat, and spread evenly on the prepared pan.
  • Bake for 1 hour in the preheated oven, stirring occasionally, until golden. Allow to cool, then store nuts in airtight containers.
