Simmer Ellie Krieger's healthy, satisfying White Chili recipe from Food Network, brimming with ground chicken, white beans and fresh poblano peppers.

Number Of Ingredients 17

1 tablespoon olive oil
1 medium onion, diced (about 1 1/2 cups)
2 stalks celery, diced (about 1/2 cup)
3 medium poblano peppers (about 4 ounces each), seeded and white ribs removed, finely diced (about 1 1/2 cups)
1 clove garlic, minced
1 teaspoon ground cumin
1/2 teaspoon ground coriander
1/4 teaspoon cayenne pepper, more to taste
1 pound ground white meat turkey
2 (15.5-ounce) cans white beans such as cannelini, preferably low-sodium, drained and rinsed
4 cups low-sodium chicken broth
3/4 teaspoon dried oregano
1 (15.5-ounce) can hominy, drained and rinsed
Salt
1/4 cup nonfat plain Greek-style yogurt
2 tablespoons chopped fresh cilantro leaves
Lime wedges

Steps:

  • Heat the oil in large pot or Dutch oven over moderate heat. Add the onion, celery, poblanos, and cook, stirring occasionally, until the vegetables are soft, about 8 minutes. Add the garlic, cumin, coriander and cayenne and cook, stirring, until fragrant, about 30 seconds.
  • Add the ground turkey and cook, breaking up the meat with a spoon, until the meat is no longer pink about 2 minutes. Add the white beans, broth and oregano. Cook, partially covered, stirring occasionally, for 25 minutes.
  • Add the hominy and salt and more cayenne pepper, to taste, and continue cooking, partially covered, 10 minutes longer. Ladle into individual bowls and top each serving with 1 tablespoon of yogurt and 1 1/2 teaspoons of cilantro. Garnish with a lime wedge.

This is a great winter chili that everyone will love. My neighbors kids love it so much they eat it for breakfast! Super easy and so delicious.

2 1/2 cups water
1 teaspoon lemon pepper
1 teaspoon cumin seed
4 chicken breast halves, skinned and boned
1 teaspoon olive oil
1 minced garlic clove
1 cup chopped onion
2 (9 ounce) packages frozen white corn, thawed
2 (4 -8 ounce) cans chopped green chilies (I use 2)
1 teaspoon ground cumin
2 -3 teaspoons lime juice
2 (15 ounce) cans great northern beans, undrained
crushed tortilla chips
shredded monterey jack cheese (or whatever cheese you prefer)

Steps:

  • Mix water, lemon pepper and cumin seed in large saucepan and heat to a boil.
  • Add chicken breast halves, reduce heat to low, cover and simmer until chicken is fork tender and juices run clear, about 20-25 minutes.
  • Remove chicken from pot and cut into 1 inch pieces.
  • Add chicken back to liquid in saucepan.
  • Heat olive oil in skillet and cook onions and garlic for a minute or two and then add to saucepan with the chicken.
  • Stir in corn, green chilies, ground cumin and lime juice and heat to a boil.
  • Add beans and cook until thoroughly heated.
  • To serve- place crushed tortilla chips and some shredded cheese into each bowl and ladle hot soup over them.

This was originally printed in the Louisville Courier-Journal in 1989. I was introduced to it by a college roommate, and through a lot of internet searching, finally found the recipe. This recipe works very nicely in a crockpot.

1 lb large white beans (sorted, rinsed)
6 cups chicken broth
2 garlic cloves, minced
2 medium onions, chopped
1 tablespoon oil
2 (4 ounce) cans mild green chilies, chopped
2 teaspoons ground cumin
1 1/2 teaspoons oregano
1/4 teaspoon ground cloves
1/4 teaspoon cayenne pepper
4 cups diced cooked chicken breasts

Steps:

  • Combine beans, broth, garlic, and half the onions in a large soup pot.
  • Bring to a boil. Reduce heat, simmer until beans are soft (2 hours or more), adding more broth if necessary.
  • In a skillet, saute remaining onions in oil until tender. Add chiles and seasonings; mix thoroughly. Add to bean mixture. Add chicken and simmer 1 hour.
  • Serve topped with grated Monterey Jack cheese, salsa, and sour cream. I also like to serve tortilla chips on the side.

  • In Dutch oven saute onion and garlic in olive oil.
  • Add in all other ingredients.
  • Bring to a boil, then reduce heat to low.

2 pounds dried great northern beans
1-1/2 cups diced onion
1 tablespoon canola oil
1 tablespoon ground oregano
2 teaspoons ground cumin
1-1/2 teaspoons seasoned salt

4-1/2 quarts chicken broth
2 garlic cloves, minced
2 pounds boneless skinless chicken breast halves, cubed
2 cans (4 ounces each) chopped green chilies

Steps:

  • Sort beans and rinse with cold water. Place beans in a Dutch oven; add water to cover by 2 in. Bring to a boil; boil 2 minutes. Remove from heat; cover and let stand 1 to 4 hours or until beans are softened. Drain and rinse beans, discarding liquid., In a stockpot, saute onion in oil until tender. Combine seasonings; add half to onion mixture. Saute 1 minute. Add beans, broth and garlic; bring to a boil. Reduce heat; cover and simmer 2 hours. , Preheat oven to 350°. Coat chicken with remaining seasoning mixture; place in 15x10x1-in. baking pan. Bake 15 minutes or until chicken is no longer pink; add to beans. Stir in chilies. Cover and simmer 1-1/2 to 2 hours or until flavors are blended.

1 pound boneless skinless chicken breasts, cut into 1/2-inch cubes
1 medium onion, chopped
1-1/2 teaspoons garlic powder
1 tablespoon canola oil
2 cans (15-1/2 ounces each) great northern beans, rinsed and drained
1 can (14-1/2 ounces) chicken broth
2 cans (4 ounces each) chopped green chiles
1 teaspoon salt
1 teaspoon ground cumin
1 teaspoon dried oregano
1/2 teaspoon pepper
1/4 teaspoon cayenne pepper
1 cup sour cream
1/2 cup heavy whipping cream
Tortilla chips, optional
Shredded cheddar cheese, optional

Steps:

  • In a large saucepan, saute the chicken, onion and garlic powder in oil until chicken is no longer pink. Add the beans, broth, chiles and seasonings. Bring to a boil. 1 cup uncooked white rice
1/4 cup uncooked barley
1 1/2 lbs boneless pork or 1 1/2 lbs chicken, cubed
1 1/2 cups chopped onions
1 teaspoon vegetable oil
1 teaspoon butter
2 teaspoons ground cumin
1 teaspoon salt, to taste
1 tablespoon minced fresh garlic
1 (15 ounce) can white beans, drained
1 (1 lb) can garbanzo beans, drained
1 1/2 cups canned green chilies, drained
1 1/2 cups canned white hominy, drained
1/4 teaspoon Tabasco sauce, to taste
1 tablespoon crumbled cooked bacon
4 cups chicken broth
1 (28 ounce) can tomatillos
1 tablespoon lime juice
2 tablespoons fresh minced basil or 1 teaspoon dried basil
1 -2 cup shredded cheddar cheese, for garnish

Steps:

  • Over medium heat in a heavy pot, sauté the pork (or chicken) and onion in oil and butter for 8 to 10 minutes or until the meat browns and onion softens.
  • Add the rice and barley stir to coat, then stir in the cumin, salt, garlic, white beans, garbanzo beans, chilies, hominy, Tabasco, crumbled bacon, chicken broth, tomatillos, lime juice, and basil.
  • Bring to boil, then reduce heat, cover, and simmer for 40-45 minutes.
  • Serve each portion topped with about 2 Tbsp cheese and together with good, crusty bread and a salad.
  • If the chili is too thick for your preference, you can add chicken broth to the desired consistency.

I have searched all over for a GREAT white chili recipe, I finally found one. This is SUPER easy and pretty quick. As with all chili, increase or decrease the spices to suit you. I add extra cumin and cilantro because I love them both so much.
