MOM'S NEW YEARS PIG'S FEET
This is a recipe for trotters passed down over time in my family. This was made every New Year's Eve to bring in the new year. A relatively inexpensive African-American dish. Very delicious! Serve with homemade potato salad, Southern style greens and candied yams and cornbread. It is even better the next day, and it freezes well. Serve sprinkled with a little more vinegar or hot sauce to taste.

Steps:
- Thoroughly wash pig feet in cold water and place into a large pot or Dutch oven. Add celery, onion, vinegar, red pepper flakes, seasoned salt, garlic, black pepper, and bay leaves to the feet; pour in water to cover.
- Bring to a boil, reduce heat to low, and simmer until meat is tender and falling off the bones, about 2 hours.

WHITE BEANS, WITH PIG'S FEET
Steps:
- Rinse the beans with cold water and pick them over carefully. Put them in a heavy casserole with water to cover. Add the pig's feet and the tomatoes. Season with pepper, cover, and simmer for about 1 1/2 hours or until cooked, adding more water if necessary. Set aside until 30 minutes before serving.
- Preheat the oven to 425 degrees. Stir the parsley, garlic, 1 1/2 tablespoons butter, and salt into the beans. Sprinkle with bread crumbs, dot with remaining butter and heat through uncovered until sizzling.

PIGS FEET STEW
My mom has made this stew for Sunday dinners since I was a child & I finally got the recipe...Served over a bed of white rice, you can also add Pig Tails....Enjoy!!

Steps:
- 1. Rinse pigs feet.use knife to remove hairs from pig feet (as if scaling a fish).
- 2. Place in pot, cover with water, boil for 30-45 minutes to remove froth.
- 3. Meanwhile -- finely chop (or use food processor) the celery, onion, green onion, bell pepper, garlic -- may also add relish, carrots, or any other vegetables -- Set Aside.
- 4. Pour out water, rinse pigs feet, and use knife to remove any remaining hairs.
- 5. Rinse out pot, put pigs feet back in pot, cover with water and boil for 30 minutes. (This can be skipped if desired, but wont be as tender).
- 6. Pour out water, rinse pigs feet and rinse pot.
- 7. Place back in pot with chopped vegetables, beans, bouillons -- Cover with water and season to taste with salt, pepper, and seasonings.
- *** NOW IS THE TIME TO ADD PIGS TAILS IF DESIRED ***.
- 9. Bring to a boil on medium heat, cover and occassionaly stir for 2 hours -- Bring to low heat for last 1 hour.
- ** YOU WILL NEED TO ADD WATER TO STEW AS IT EVAPORATES **.
- 11. Serve over a bed of white rice.

- Place pork feet and ginger slices in a large pot and add water to cover pork feet. Bring the water to a boil and continue boiling for about 3 minutes. Discard water and wash pork feet carefully.
- Add pork feet into pressure cooker and add water until the pork is covered completely. Cook over high heat until rated pressure has been reached. Turn to lowest heat and cook at rated pressure for 15 minutes. (*see footnote 3)
- After releasing pressure naturally, transfer pork feet to a wok (or dutch oven). Transfer pork broth from pressure cooker to wok until it almost covers the pork. Add the rest of the ingredients into wok and turn to high heat. After bringing the broth to a boil, reduce to low heat and simmer covered for 30 minutes. Stir pork feet every 10 minutes to avoid burning on the bottom. Stir more often toward the end of braising, after the sauce has thickened. Add water during the braising process if the broth becomes thick while the pork is still tough. If the pork turns very soft but the sauce is still thin, turn to medium heat and boil uncovered. Reduce sauce until desired thickness.
- To cook without a pressure cooker, skip step 2 and add boiled pork, water and all ingredients into a wok or a dutch oven. Add water until it covers pork and boil for around 2 hours. If the water level becomes too low while pork is still though, add warm water, 1 to 2 cups at a time, and continue braising.
