This recipe came from Eden quick recipes pamphlet. The product calls for Eden organic products but you can use whichever brand you have at hand. This recipe is quick, simple, uses all fresh ingredients, however it has a nice kick. I skipped the tomatoes as I feel this is optional and its not needed. I used lime juice from concentrate, and this is fine if you don't have a fresh lime, but don't skimp on the lime as it is the flavor booster. All the recipes are vegetarian, healthy, so if you try out this recipe and like it, let me know and I'll post some more recipes as I work my way on trying them.

1 (15 ounce) can eden organic navy beans, drained
1/4 cup red onion, chopped
1/4 fresh parsley, minced
1 garlic clove, minced
1/2 teaspoon sea salt
1/4 lime juice, freshly squeezed
1 avocado, peeled pitted, and chopped
1 (14 1/2 ounce) can diced tomatoes with green chilies, drained (optional)
2 sprigs cilantro or 2 sprigs parsley, for garnish

Steps:

  • Take the first 7 ingredients and place in a food processor, using only 3 tablespoons of the lime juice and reserving the rest for later.
  • Pulse 8 to 10 for chunky, or pulse more if you prefer a smooth texture.
  • When its evenly distributed, place in a bowl and stir in the rest of the lime juice. Stir in the tomatoes if using.
  • Serve with crackers , chips, veggies or natchos.

4 ripe Hass avocados, peeled, pitted, and chopped
1/2 red onion, chopped
1 jalapeno pepper, minced
2 limes, juiced
Salt and pepper
Chopped fresh cilantro leaves, to taste
Cumin Dusted Tortillas, recipe follows
Peanut oil, for deep frying
12 flour and/or blue corn tortillas, cut into quarters
1 tablespoons ground cumin
1 tablespoon kosher salt
Heat 2 inches of peanut oil in a high-sided saute pan to 360 degrees F.

Steps:

  • Combine all ingredients in a molcajete and mix to a chunky consistency. Season, to taste, with salt, pepper, and cilantro. Serve immediately with cumin tortilla chips.;
  • Fry the tortillas, in batches, until light golden brown. Drain on paper towels and season immediately with cumin and salt.

6 white corn tortillas
1/4 cup vegetable oil
Salt and freshly ground black pepper
2 tablespoons ground cumin
3 avocados, peeled, seeded and coarsely chopped
2 ears corn, grilled and kernels removed
1 jalapeno, finely chopped
1/2 red onion, finely chopped
1/4 cup fresh cilantro leaves, coarsely chopped
1/4 cup fresh lime juice
2 tablespoons creme fraiche
Salt and freshly ground black pepper

Steps:

  • For the tortilla chips: Preheat the oven to 350 degrees F. Brush the tortillas with the oil on both sides and season one side with salt, pepper and cumin. Place on a baking sheet and bake until lightly golden brown, about 10 minutes. When cool enough to handle, cut into eighths or break into chip-size pieces.
  • For the guacamole: Combine the avocados, corn, jalapeno, onions, cilantro, lime juice and creme fraiche in a bowl and mix well. Season with salt and pepper. Serve with the cumin scented tortilla chips.

Although avocados are full of "good" monounsaturated fats, they do pack on about 30 grams of fat per medium-sized fruit. That's an awful lot of overall calories for a small amount of food. I've used only one avocado in this guacamole recipe and swapped out the rest for small white beans. You really can't taste the difference! You can still enjoy the taste and health benefits of avocados without overdoing the caloric intake. I'm serving mine here with homemade cumin-dusted whole wheat chips.

3 large whole wheat tortillas
olive oil
salt, pepper, cumin
1 cup small white beans (I use Goya)
1/4 cup red onion, finely diced
1 avocado, very ripe
1/2 lime, juiced
1/2 jalapeno, finely minced
1 tablespoon cilantro, chopped
1/2 teaspoon salt

Steps:

  • Preheat oven to 375 degrees.
  • Cut the tortillas into 8 triangles each. Brush each side with olive oil and sprinkle with salt, pepper and cumin to taste.
  • Arrange in a single layer on two baking sheets and bake until golden brown and crispy, about 10 minutes.
  • While the chips are baking, combine the remaining ingredients in a mixing bowl and mash with a potato masher until you reach a desired consistency.

Few tablespoons canola oil, optional
3 ripe Hass avocado, peeled, pitted and diced
Juice of 2 limes
1 or 2 jalapenos, finely diced
Salt and freshly ground black pepper

Steps:

  • Mash the cilantro, onions, canola oil, if using, avocados, lime juice and jalapenos together in a bowl, using a fork; guacamole should be chunky. Season with salt and pepper.

Peanut oil, for deep-frying
12 6-inch flour and/or blue corn tortillas, cut into quarters
1 tablespoon ground cumin
Kosher salt
4 ripe Hass avocados, peeled, pitted and chopped
1/2 small red onion, finely diced
1 jalapeno pepper, finely diced
Juice of 2 limes (about 1/4 cup)
1/4 cup chopped fresh cilantro
Kosher salt and freshly ground pepper

Steps:

  • Make the chips: Heat 2 inches peanut oil to 360 degrees F in a high-sided skillet. Fry the tortillas in batches until golden brown and crisp, 3 to 4 minutes. Drain on paper towels and season immediately with cumin and salt.
  • Make the guacamole: Combine the avocados, red onion, jalapeno, lime juice and cilantro in a bowl and gently mix to a chunky consistency. Season with salt and pepper. Serve immediately with the cumin tortilla chips.

HONEY-ROASTED NUTS AND FRUIT

Tasty snack from Cooking Light that provides a concentrated source of carbohydrates from the raisins, along with protein and "good" fats from the nuts. Feel free to substitute nuts and fruit according to your preference, or what you have on hand. I don't care for raisins, so I used craisins (dried cranberries) ; I found I was out of slivered almonds, so I substituted some chopped macadamias. I especially loved the addition of cardamom--added an unexpected element.

1/4 cup slivered almonds
1/4 cup chopped hazelnuts

1 dash ground cloves
1 cup raisins

Steps:

  • Line a baking sheet with parchment paper or foil and coat with cooking spray.
  • In a large nonstick skillet, heat butter over medium-high heat. Stir in honey and cook 2 minutes or until mixture bubbles around edges of pan.
  • Add nuts and next 5 ingredients, and cook over medium heat until nuts are golden, about 8 minutes, stirring frequently. Stir in raisins.
  • Immediately spread onto prepared baking sheet; cool completely.
  • Note: Mine were still a bit sticky after they cooled, so I just stored them in the refrigerator.

From Cooking Light. I made this last night and it was excellent. When my Hubby cleans his plate, I know its good. I served it with egg noodles, but next time I will probably serve it with rice. I did not have an oven proof skillet so after browning the chicken, I had to transfer the chicken to a glass baking dish for the oven. Note: the cooking time in the recipe only says 10 minutes however, after 10 minutes my chicken (which I had cut very thin) was still very pink, so I cooked it for 15 minutes total. I think this would taste even better if it was grilled.

1 teaspoon kosher salt, divided
1/2 teaspoon cayenne pepper, divided

2 garlic cloves, finely chopped, divided
1 (15.5-ounce) can black beans, rinsed, drained
3/4 cup vegetable broth
1 ripe avocado

Steps:

  • Preheat oven to 450°F. Cut potatoes in half lengthwise. Toss with 1 Tbsp. oil, 1/2 tsp. salt, 1/4 tsp. cayenne, and 1/4 tsp. cumin on a rimmed baking sheet. Arrange cut side up and roast until fork-tender, about 25 minutes.
  • Meanwhile, heat remaining 1 Tbsp. oil in a medium skillet over medium. Add onion and half of garlic and cook, stirring, until onion starts to release moisture and turns translucent, 2-3 minutes.   • Add spinach and remaining 1 Tbsp. lime juice to bean mixture. Continue to cook until spinach wilts, about 30 seconds.
  • Using the back of a spoon, gently push down in center of potato halves to create a divot. Spoon bean mixture into potato halves, then top evenly with 2 Tbsp. avocado mixture, quesco fresco, and remaining 1 Tbsp. cilantro. Serve with tortilla chips, if using, and remaining avocado dip alongside.

  • Potatoes and beans can be made 3 days ahead; store separately, cover, and chill. Reheat potatoes in oven and beans in skillet before serving.
