HONEY APPLE AND NECTARINE TART WITH WHIPPED MASCARPONE

Honey Apple and Nectarine Tart with Whipped Mascarpone image

Provided by Danny Boome

Categories     dessert

Time 35m

Yield 4 tarts

Number Of Ingredients 9

1 sheet frozen puff pastry (half of 17.3-ounce package), thawed
Flour, for dusting
1 small Golden Delicious apple, peeled, halved, cored, thinly sliced
1 small nectarine, halved and thinly sliced
2 tablespoons unsalted butter, melted
4 teaspoons sugar
4 teaspoons honey
1 cup mascarpone cheese
1 teaspoon orange liqueur

Steps:

  • Line 1 large baking sheet with parchment paper. Place the sheet of puff pastry on a floured surface and cut into 4 even squares. Separate the squares and leave some room between them on the baking sheet. Create a border around the inside of each square by scoring about 1/2-inch around the inside the square. Prick the dough inside the small square. Cover and refrigerate at least 30 minutes and up to 1 day.
  • Position 1 rack in top third and 1 rack in bottom third of oven and preheat to 400 degrees F.
  • On each pastry square, overlap slices of apple and nectarine, within the border.
  • Brush fruit on each tart, with melted butter and sprinkle with 1 teaspoon sugar.
  • Bake tarts until pastry is golden and apples are tender, about 20 minutes. Drizzle each tart with 1 teaspoon honey. Transfer tarts to racks; cool 5 minutes. Serve warm or at room temperature.
  • While tarts are cooling, whisk mascarpone with orange liqueur. Top each cooled tart with a dollop of flavored mascarpone.

MASHED YELLOW TURNIPS WITH CRISPY SHALLOTS

Mashed Yellow Turnips with Crispy Shallots image

Provided by Ina Garten

Categories     side-dish

Time 1h45m

Yield 6 servings

Number Of Ingredients 8

1 1/2 cups light olive or vegetable oil
3 tablespoons unsalted butter
5 to 6 shallots, peeled and sliced into thin rings
2 large yellow turnips (rutabagas), about 4 pounds total
Kosher salt
1 cup whole milk
6 tablespoons (3/4 stick) salted butter
1/2 teaspoon freshly ground black pepper

Steps:

  • Heat the oil and unsalted butter in a saucepan over medium-low heat until it reaches 220 degrees F. Reduce the heat to low, add the shallots, and cook until they are a rich golden brown, 30 to 40 minutes. The temperature should stay below 260 degrees F. Stir the shallots occasionally to make sure they brown evenly. Remove them from the oil with a slotted spoon, drain well, and spread out to cool on paper towels. Once they have dried and crisped, they can be stored at room temperature, covered, for several days.
  • Peel the turnips to remove the waxy skins and cut them into generous 1-inch chunks. Place them in a saucepan with water to cover and 1 teaspoon of salt. Bring to a boil and simmer, covered, until easily pierced by a paring knife, about 35 minutes. Drain.
  • In a separate saucepan, heat the milk and salted butter over low heat until the butter has melted and the milk just begins to simmer.
  • Puree the turnips in several batches in a food processor fitted with the steel blade. With the motor running, add the melted butter and milk in a steady stream. The turnips should be smooth.
  • Return the puree to the saucepan, season with 1 teaspoon salt and the pepper, and reheat, stirring, over medium heat. Serve piping hot, sprinkled generously with crispy shallots.

TURNIP AND CARROT MASH

CLASSIC TURNIP AND APPLE CASSEROLE

Classic Turnip and Apple Casserole image

I first had this recipe at my husband's aunt's home back in 1979; got the recipe from her and have been making it to serve with turkey dinner ever since. I love the apples and turnip together! If you want to make it ahead of time, you can; just make it up to the layering stage then cover tightly and refrigerate. Put topping on, though, just before it goes into the oven.

Provided by Lennie

Categories     Apple

Time 2h

Yield 8 serving(s)

Number Of Ingredients 9

1 large yellow turnip (known as a rutabaga, sometimes called a Swede)
1 tablespoon butter
2 tablespoons light cream (you can use milk)
2 apples (I use macintosh)
1/4 cup packed brown sugar
1 pinch ground cinnamon
1/3 cup flour
1/3 cup packed brown sugar
2 tablespoons butter

Steps:

  • Preheat oven to 350F; butter a casserole dish (or spray with Pam) and set aside.
  • Peel and dice turnip (this can be a tough job, as turnips are very dense) and place in a large pot.
  • Cover with cold, lightly salted water and bring to a boil.
  • Boil until turnip is tender (this takes longer than potatoes, usually), then drain and return to the pot.
  • Mash turnip with the 1 tbsp butter and cream; stir in 1/4 cup brown sugar and the cinnamon; set aside.
  • Peel apples, core, and slice.
  • In prepared casserole dish, layer 1/3 of the turnip, then half the sliced apples, then 1/3 of the turnip, then the remaining apples, then the remaining turnip; smooth top.
  • At this point, you could cover the dish tightly and refrigerate for several hours; don't put topping on until you're ready to pop this into the oven.
  • When ready to bake, combine topping ingredients in a small bowl until they are crumbly; sprinkle over top of turnip.
  • Bake in preheated oven for one hour; serve.
