The melding of banana, coconut and pecans give this cake a unique flavor. Best if made a day before serving.

1 ½ cups white sugar
½ cup butter, softened
2 eggs
3 ripe bananas, mashed
2 cups all-purpose flour
1 teaspoon baking soda
¼ cup buttermilk
1 teaspoon vanilla extract
1 cup chopped pecans
1 cup shredded coconut
½ cup butter, softened
4 cups confectioners' sugar
1 ripe banana, mashed
1 cup chopped pecans
1 cup shredded coconut
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 9-inch round cake pans or one 9x13-inch pan.
  • In a medium bowl, cream together white sugar and 1/2 cup butter. Mix in eggs and 3 mashed bananas.
  • Sift together flour and baking soda in a separate bowl. Add to the creamed mixture alternately with buttermilk, mixing well after each addition. Blend in 1 teaspoon vanilla extract. Fold in 1 cup of pecans and 1 cup coconut. Pour batter into prepared pans.
  • Bake in the preheated oven until a tester inserted in the center comes out clean, about 45 minutes. Cool completely on wire racks.
  • To Make Frosting: Cream together 1/2 cup butter and confectioners' sugar until light and fluffy. Mix in 1 medium mashed banana, 1 cup pecans, 1 cup coconut and 1 teaspoon vanilla.

1 Box banana cake mix, prepare according to pkg directions in a 9x13 pan
1 1/2 Cups sugar
16 oz container sour cream
12 oz bag of coconut
1 Llg (1 large) container whipped topping/ cool whip

Steps:

  • 1. Preheat oven according to Cake Mix Directions. Bake the Cake according to Cake Mis Directions in a 9X13 Pan.
  • 2. Combine Sugar, sour Cream, whipped Topping, & Coconut. Blend well set aside and Chill in refer.
  • 3. Poke Holes all over top of Cake while still warm. Pour Topping mixture all over Cake. (Let Rest in the Pan for about 10-15 min.) Then Cover well and Chill in refer for 1-3 days before serving. Must Keep this cake Stored in refer. Very Moist Very good cake. TIP: You can also add "Toasted Coconut" to top of the Topping.

This is my most requested cake for birthdays in our family.It came from an old Betty Crocker dessert cookbook published in 1977. (if you use the banana slices before to put a little lemon juice on them so they don't turn brown)

2 cups all-purpose flour
1 2/3 cups sugar
1 1/4 teaspoons baking soda
1 teaspoon salt
3/4 teaspoon baking powder
2/3 cup shortening
2/3 cup buttermilk
3 eggs
2 cups mashed ripe bananas (about 3 medium)
1 banana, sliced (to garnish)
2/3 cup finely chopped pecans or 2/3 cup nuts, of choice
1 cup heavy cream
3 tablespoons granulated sugar or 3 tablespoons confectioners' sugar
1 teaspoon vanilla

Steps:

  • Heat oven to 350*.
  • Grease and flour oblong pan, 9x13x2 inches, or three 8-inch or two 9-inch round layer pans.
  • Measure all ingredients except frosting into large mixing bowl.
  • Blend 1/2 on low speed, scaping bowl constantly.
  • Beat 3 minutes on high speed scraping bowl occasionally.
  • Pour batter into pan (s).
  • Bake until toothpick inserted in center comes out clean, oblong 45 to 50 minutes, layers 35 to 40 minutes.
  • Cool.
  • Before serving frost cake with whip cream frosting, and garnish with banana slices.
  • WHIP CREAM FROSTING: In a chilled bowl beat 1 cup chilled whipping cream and 3 tsps.
  • sugar.
  • Fold in 1 tsp vanilla.
  • Yields 2 cups.

1/2 cup shortening (suggested ( Crisco)

1 banana, sliced
2 egg whites
1/8 teaspoon salt
1/2 teaspoon vanilla
1/3-1/2 cup sugar

Steps:

  • Preheat the oven to 350 degrees. Spray and flour a 9x13 pan.
  • Cream the shortening, eggs, and vanilla together. Mix in the flour, sugar, banana, and buttermilk; beat until creamy.
  • Bake approximately 30 minutes or until a toothpick comes out clean.
  • Icing:.
  • Beat the egg whites, salt, sugar and vanilla until stiff peaks form. Spread on cake and top with banana slices (dip in lemon juice to prevent browning).

1/2 cup sour milk
2 eggs
3/4 cup brown sugar
1/2 cup butter
2 tablespoons cream or 2 tablespoons milk
1 cup coconut

Steps:

  • Whip butter in bowl.
  • Sift in dry ingredients.
  • Add milk, bananas, eggs and mix.
  • Bake at 350F for 25-35 minutes Combine ingredients for icing in a heavy saucepan, and cook until well blended.
  • Spread over cake while still warm.
  • (Tip- to make sour milk, add a splash of vinegar and stir).

The recipes in the book were submitted by directors, choreographers, and dancers in the Houston Ballet that year. This recipe was submitted by Leeanna Vidaurri, Corps de Ballet.

1/2 cup butter
1 cup sugar
3 eggs
1 cup mashed ripe banana
1/2 cup buttermilk
1 teaspoon vanilla extract
2 1/4 cups flour

1 teaspoon baking soda

1/2 cup grated coconut
1/2 cup brown sugar
1 teaspoon cinnamon
1/2 teaspoon ginger

Steps:

  • In a small bowl mix the coconut, brown sugar, cinnamon, and ginger. Set aside.
  • Grease and flour a 9" tube pan.
  • Cream butter and sugar. Beat in eggs, 1 at a time.
  • Add bananas, buttermilk and vanilla.
  • Sift flour, baking powder, baking soda, and salt together. Beat into banana mixture to blend.
  • Pour half of the batter into the tube pan. Sprinkle with half of the coconut mixture. Add remaining batter and sprinkle with remaining topping.

1 1/2 cups whipping cream (unwhipped)
1 tablespoon lemon juice
1 cup butter, softened (no subs please!)
2 1/4 cups sugar
4 large eggs
2 1/2 teaspoons vanilla
1 tablespoon dark rum
1 cup pureed banana
3 1/2 cups all-purpose flour
1/2 teaspoon salt
1/2 teaspoon cinnamon (can use more or less)
1 tablespoon baking powder
1/2 teaspoon baking soda
1 cup chopped walnuts
1 1/2 cups shredded coconut (or to taste)
1 cup semi-sweet chocolate chips, melted

Steps:

  • Set oven to 350°.
  • Set oven rack to second-lowest position.
  • Spray a 10-inch angel food cake pan with non-stick cooking spray.
  • In a small bowl stir the whipping cream with lemon juice, and let stand until cream curdles.
  • In a large mixing bowl cream butter with sugar for about 5 minutes until light and fluffy.
  • Add in eggs one at a time, mixing well after each addition.
  • Add in vanilla, rum and banana puree; mix until well combined.
  • Mix in the cream and the dry ingredients gently using a wooden spoon (do not beat with electric mixer).
  • Mix in chopped nuts.
  • Spoon batter into prepared baking pan.
  • Sprinkle top with coconut (do not mix in).
  • Bake for about 70-80 minutes, or until cake tests done.
  • Cool 10 minutes, then invert onto a serving platter.
  • Drizzle with melted chocolate.
