VEGAN MEATBALLS(ISOLATED SOY FREE)



Vegan Meatballs(Isolated Soy Free) image

These vegan meatballs are isolated soy free. They are full of flavor! They make a great companion to your favorite spaghetti dish or try them in a meatball sub. Three large meatballs only have 8 grams of fat, not bad when you consider they can be eaten with pasta and tomato sauce. From My Vegan Cookbook.

1/2 cup cooked lentils
1 cup cooked brown rice
1/4 cup old fashioned oats
1/4 cup wheat germ plus 2 tablespoons wheat germ
2 tablespoons soy sauce
2 tablespoons olive oil
2 teaspoons lemon juice
1/4 cup whole wheat flour
1/2 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon balsamic vinegar
1/8 teaspoon nutmeg
1/2 teaspoon chili powder
1/2 teaspoon chipolte chili powder
1/2 teaspoon garlic powder
1 teaspoon onion powder
2 teaspoons molasses
2 teaspoons dry mustard

Steps:

  • Mix ingredients together in a bowl.
  • Preheat oven to 300 degrees.
  • Measure out 2 tablespoons of mixture for each meatball and roll into a ball with your hands. Spray cooking sheet and place meatballs on it. Place into oven and cook 15 minutes on one side and roll over and cook 15 minutes on the other side.
  • After they are out of the oven, let stand for about 10 minutes to allow them to firm up.
  • NOTE:.
  • If making Recipe#511822-Vegan Italian Meatball Soup, the meatballs need to be prepared differently. Omit 1 Tablespoon of the olive oil and replace it with 1 tablespoon of water. We want to make the meatballs smaller for this soup so instead of making the meatballs with 2 tablespoons for each meatball measure them out using 1/2 a tablespoon. Also, cook 10 minutes on each side instead of 15 minutes like the recipe originally states.

Awesome meatballs that are actually sort of healthy! Well...they have fiber... All the amounts are approximate to give you an idea of the ratios. Normally I just wing it until the "pre balled" meat lump looks like a lump of bread dough and is no longer excessively sticky yet not dry.

1 lb ground beef
1/2 cup barbecue sauce (I like hickory smoked)
1 tablespoon italian seasoning
1 egg
1 cup wheat germ

Steps:

  • Pre-heat the oven to 350 degrees.
  • Mix together everything except the wheat germ. It should be sticky and not stay together. Use your hands!
  • Add the wheatgerm and mix it up. It should look like bread dough. It should hold together, but not be dry and hard.
  • Roll into balls and place in an oil sprayed Pyrex.
  • At this point you can brush with some more bbq sauce but it is not necessary.
  • Cook for 45 min or until they are finished to your liking.
  • YUM!

1 egg
2 tablespoons water
2 tablespoons wheat germ, optional
1 teaspoon salt
1/2 teaspoon fresh ground black pepper
1 pound ground round beef
1 pound ground pork
1 pound Italian sausage
Mom's Spaghetti Sauce, recipe follows
1 pound ground round beef
1 pound ground pork
1 pound Italian sausage
2 large onions, chopped
4 cloves garlic, pressed
5 large cans tomato paste
10 tomato paste cans water
4 tablespoons Parmesan
1 1/2 tablespoons salt
6 leaves fresh basil or 1 tablespoon dried basil
1 tablespoon dried oregano
1 teaspoon freshly ground black pepper
1/2 teaspoon Italian seasoning

Steps:

  • Mix bread crumbs, egg, water and wheat germ into a medium mixing bowl. Then, add salt, pepper, ground beef, pork, and sausage and mix. Shape into small balls. Place meatballs in spaghetti sauce and allow to cook for 2 to 3 hours.
  • In a large saucepan over medium heat, saute the ground beef, pork and sausage until it is brown. Drain off excess fat. Add the remaining ingredients and stir until smooth. Cook for 3 to 4 hours on medium heat, stirring often to prevent scorching.

1/2 cup unbleached white flour
1/2 cup brown sugar
6 tablespoons melted butter
2 ounces unsweetened chocolate
1/3 cup butter
3/4 cup white sugar
2 eggs
1 teaspoon vanilla
2/3 cup wheat germ
1/2 cup flour
1/4 teaspoon salt
1/4 teaspoon baking powder

Steps:

  • Bottom layer: Mix together wheat germ, flour, brown sugar, melted butter.
  • Spread mixture evenly into bottom of greased and floured 9"x9" baking pan.
  • Set aside.
  • Top layer:Melt butter and chocolate over very low heat.
  • Remove from heat, beat together with sugar, eggs, and vanilla.
  • Add dry ingredients and mix.
  • Spread over bottom layer.
  • Bake at 350 degrees 25-30 minutes.
  • Cool, slice into squares.
