Eaten whole, wheat berries have a strong nutty flavor, making them an earthy alternative to rice, couscous and quinoa. They can be soaked overnight so they'll cook faster and have a lighter, softer texture, but it's not necessary. A great way to prepare them is in tabbouleh, as a substitute for bulgur wheat. Suddenly, what is often only a small part of a Middle-Eastern mezze platter is elevated to a main dish.

1 cup wheat berries, presoaked for eight hours (if possible) and drained
1 small cucumber, peeled and cored to remove seeds, then diced
1 pint (about 2 cups) baby heirloom or grape tomatoes, halved lengthwise
4 scallions, thinly sliced
1 cup tightly packed flat-leaf parsley leaves
½ cup tightly packed mint leaves
3 tablespoons extra virgin olive oil
3 tablespoons lemon juice
2 tablespoons salt, divided
Black pepper

Steps:

  • Add wheat berries, 4 cups of water and a tablespoon of salt to a medium saucepan, and bring to a boil over high heat. Reduce the heat and bring to a simmer, then cook for 45 to 50 minutes. Drain and set aside to cool.
  • Place the cucumber, tomatoes and scallions in a large bowl.
  • Finely chop the parsley and mint together, and add them to the large bowl.
  • Add the cooled wheat berries to the mixture, and mix in the olive oil and lemon juice.
  • Add remaining salt and pepper to taste.
  • Serve at room temperature.

1 cup water
1/2 cup hard red wheat
1 fresh lemon, juice of
2 bunches of fresh flat leaf parsley, washed and dried and chopped
1 large bunch mint, washed and dried
2 scallions
3 medium tomatoes, diced
1 small cucumber, diced
4 tablespoons of extra-virgin olive oil, divided
1/2 teaspoon kosher salt
1/4 teaspoon ground allspice
1/4 teaspoon cinnamon
1/4 teaspoon ground black pepper

Steps:

  • Place water in large bowl.
  • Add wheat and allow to soak until the liquid is absorbed and wheat is tender, approximately 1 hour.
  • Thoroughly drain and pat dry.
  • Spread drained wheat berries thinly on a baking or cookie sheet and place in oven at 200° until very dry, usually about 1 hour until dry enough to crack easily in a Roller Flaker Mill until moderately fine - the consistency of cracked wheat.
  • Sift out the smallest flour-like bits (they will form a paste you don't want in your recipe).
  • Bring 1 cup water to a boil, add 1/2 cup Bulgur Wheat and boil for 5-10 minutes.
  • When bulgur is done, drain off any excess water and place in a large bowl. Add 2 tablespoons of the olive oil, 1 tablespoons lemon juice, and salt. Toss to coat the grain.
  • Add herbs and vegetables, reserving ½ of the diced tomatoes and toss.
  • Add 2 more tablespoons olive oil, 1 more tablespoons lemon juice, allspice, cinnamon and pepper. Toss again, taste and adjust seasonings to taste.
  • Garnish with remaining diced tomatoes and a few whole mint leaves.
  • Serve immediately over gem lettuce for a salad, or serve with crackers, cucumber slices, fresh bread or pita chips for hors d oeuvres.

For this sweet and tart salad, wheat berries are blended with cranberries, apples and pecans and tossed in a raspberry vinaigrette-a winning combination. A perfect side dish to take to a potluck or simply serve it over a bed of peppery arugula for vegan lunch. Recipe from Eating Well March/April 2007. (Cooking time is resting time). If you wish to sweeten your salad up a bit but don't have Agave, feel free to sub 1 T of honey. Also of note, I have made this with a peach and 2 apricots instead of the grapes and apple (thereby making this wheat berry salad with ORANGE fruit) and it is delightful!!!! This salad is even better on day 2, so it's a great make ahead recipe.

1/3 cup freshly squeezed orange juice (the juice of 1 orange)
1/3 cup dried cranberries (dried cherries are even better in my opinion)
10 chopped red grapes (optional)
3 cups cooked wheat berries
1 large fuji apple, unpeeled, diced
1/2 cup pecan halves, toasted and coarsely chopped
3 tablespoons raspberry vinegar (feel free to use Blueberry Pomegranate Infused Red Wine Vinegar)
2 tablespoons extra virgin olive oil
1 teaspoon agave nectar (optional)
1/4 teaspoon salt (I only use a pinch)
1/4 teaspoon fresh ground pepper (I use lemon pepper)

Steps:

  • Combine orange juice and cranberries in a small bowl. Let stand for 15 minutes.
  • Combine wheat berries, apple and pecans (and grapes if using) in a large bowl; stir gently.
  • Drain the cranberries, reserving the juice. Stir the cranberries into the wheat berry mixture.
  • Whisk the reserved orange juice, vinegar and oil in a small bowl until combined. Add Agave/honey if using. Season with salt and pepper. Pour over the salad and stir gently to coat.
  • Refrigerate for at least 30 minutes to allow the flavors to combine.
  • Serve cold or at room temperature.

3/4 cup walnuts or 3/4 cup pecans, chopped
2 stalks celery, finely chopped
1/2 cup dried cranberries, chopped
1 scallion, chopped (white and green parts)
1/2 cup fresh parsley, finely chopped
3 tablespoons olive oil
2 tablespoons lemon juice
salt & freshly ground black pepper

Steps:

  • In a large pot combine the wheat berries and enough water to come 2 inches over the wheat berries. Bring to a boil and cook uncovered for 1 hour, or until tender. Drain and let cool. Toast the nuts in a medium dry skillet over medium-high heat until fragrant, 2 to 3 minutes.
  • In a large bowl, combine the wheat berries, walnuts, celery, dried cherries, scallions, parsley, olive oil and lemon juice. Season, to taste, with salt and pepper.

1 1/2 cups fine bulgur
1 bunch fresh parsley, minced fine
1 bunch scallion, minced fine
4 tomatoes, skinned and peeled, if desired chopped fine
1 bunch of fresh mint or 2 teaspoons dried mint
1/2 teaspoon ground red pepper (optional)
1/3 cup olive oil (pure or substitute)
1/3 cup lemon juice
salt

Steps:

  • Soak bulgur in cold water to cover, for an hour or so.
  • Squeeze out the water with hands and mix with other ingredients except oil, lemon juice and salt.
  • Mix with olive oil, lemon juice and salt, using proportions agreeable to your taste.
  • It is important that vegetables be minced very fine.
  • Serve in a bowl or dish surrounded with Romaine leaves or fresh tender grape leaves.
  • The leaves are used to scoop up the salad.
  • Prepare the mixture early enough so flavors blend.

In Montana this is quite a common fruit salad at potlucks. I used red durham wheat. You can use any raw wheat that has been washed. Go to a bulk foods place where they have barrels of spices and different foods and you can dip a scoop in and sack. We definitely do not call it "wheatberries" here but perhaps that is the name in the store.The best part is that it is easy, makes a lot and is a crowd pleaser. I guarantee the bowl will be wiped clean.

1 cup raw wheat, cleaned and washed
6 -7 cups water
8 ounces cream cheese, softened
2 (3 1/2 ounce) packages instant vanilla pudding
21 ounces crushed pineapple in juice
1 (14 ounce) container Cool Whip

Steps:

  • In large saucepan, add wheat and 6 cups of water. Cook about 3 hours on low heat. Add one more cup of water if necessary Do not let wheat burn. The wheat will puff up and be very soft. Stir once in a while. Watch the water.
  • Drain any remaining water in colandar. Rinse with cool water.
  • In mixing bowl, mix cream cheese, instant vanilla pudding and crushed pineapple and juice. Beat on low speed until mixed.
  • Add cool whip, and mix in low speed.
  • Add cooked rinsed wheat, and fold into cream cheese mixture.
  • Note: You can use Instant Pistashio Pudding or instant lemon pudding.
  • You can also freeze this salad. A long keeper dish for the refrigerator too.
